I am one of his staff. Learning from him is an amazing experience. As shown here he is so down to earth. So humble. Knowing Saito-san and learning from him is one of the best thing that has happened to me. Thank you Simon and Martina, for allowing others to know chef Saito better. Absolutely love this video.
You may always reach to them through their other social medias. Send them a Facebook message or a tweet. I'm sure they'll greatly appreciate those excellent words you write! 😁
Ivonny Hi. Ubdortun being a first timer and also a non Japanese would be extremely hard for you. As Saito-san's restaurant is a members only restaurant. You are able to get a reservation if you somehow meet a Japanese who is coincidently a regular customer of Saito-san. As of now he is booked out for the while year. That is what he told me the last time we met. You can try to call his restaurant every 1st of every month and try your luck in getting a seat. On some rare occasions, he would allow an extra seat on his counter for non-members
When you're watching a simple and skilled documentary about sushi and the amazing human who pours his soul into it, and then you realize that you're actually watching multiple awe-inspiring human beings creating something together. You two never cease to amaze me. I've been a silent viewer until now. I've always thought you've made top tier videos, but this really pushed it over the top for me. It's not just a group of people making skit based content with careful edits (though, your editing and everything else behind the scenes of your videos is fantastic, anyway!). It's people experiencing life, making connections, and pouring their hearts into what they love in a manner that somehow manages to perfectly balance professional and fun. Thank you for all your work, Simon and Martina (and Dan and everyone else involved whoever you might be!). Thank you for sharing with us.
Thank you Simon and Martina for this awesome video, you truly outdone yourselves. And I really believe that the best quality on a human being is the honesty in which you do your job. This video shows how much you love what you do and how appreciative you are of this moment in your life. A special thank you to the chef who shows his integrity and honesty. A true light in darkness for those who believe that you can provide the only the best, true integrity. Love you guys and I will watch this video a 1000 times with all advertising to show my support and appreciation. Can't wait to go to Japón 🇯🇵!! Sorry for grammar errors English is not my first language.
The thing that I've always respected about Japanese culture is the dedication to quality. They look at their jobs as a craft, a craft to master. And for a customer, it is a very satisfying experience knowing the effort and detail that goes into producing the final product. For me, there is no cultural experience quite like dining out in Tokyo.
I've followed you for several years, ever since the loft apartment in Korea, and Martinas short hair, and this is by far one of my favorite videos of yours. Its so well made, detailed and I wish I was able to eat there haha! I almost got a bit too emotional watching the video lol, so beautifully made! What an opportunity!
Simon and Martina Aah yes, but I've also met you once at your first meetup in Stockholm, I swore in the mic because I forgot the names of your different characters. I've also sent a carepackage waaay back with like a Swedish fish egg spread that Simon didnt like too well ;) But yeah... I've been here for a while haha :)
"I want them to tell me things like I had a hard day today but eating your sushi gave me the power to be motivated to keep working until the next reservation."
Perfect rice, perfect fish, perfect preparations, perfect co workers.... godlike sushi chef... ure perfect chef saito. I would die just to have one of his knives.... Thank u guys for sharing this video. Watched this for like 10x already but still it is one of the best sushi video ever....
it should be simple, but the flavours should work together I wouldn't rely on just the flavour of fish & rice...for me needs flavour balance acidity/sourness, sweetness, bitterness, spicy, savoury, smoky, salty & even have a minty or aniseed flavour. those elements usually come from the rice vinegar & soy sauce & the saltiness of the seaweed...I'd use smoked fish and the rice provides a savoury element & coriander can provide a bitter element, for spice add chili.
I am Japanese. Thank you so much for giving me the videos that respect the Japanese culture in this way. Also, I was moved to express my feelings towards sushi in a wonderful way and it was such a tearful truth. Respect each other 's culture. I think that such a world is desirable. I think that it is wrong because I am not good at English, but I am pleased that this happy feeling is conveyed.
I think youre pretending to be japanese and wrote this sappy comment pretending to suck at english when you wrote it just fine to draw some sort of heart felt responses.
This video was shot and edited sooo beautifully. Holy shit, I just love how much your channel has grew since the first time I saw your videos. So proud.
Damn, the editing skills of this video are exceptional. And I like how the guy shaved his head, his restaurant is already spotless, but for some reason, seeing his shaved head just makes it feel even cleaner....
shaving their head, I think is their way to show totality and sincerity (both are really important aspect of life in eastern society especially in japan) into their craft, showing how hard they tried to maintain hygiene for the food. To prepare food on kitchen, in general u suppose to wear hat that cover all of your hair so no hair will fall into the food u prepare. Though shaving their hair really is "extreme" version but it is in a good way I guess :D
Ever since you guys moved to Japan, your video quality gets better and better. That looked like an incredible experience, thank you for sharing it with us.
I think you two honored his artfulness and passion beautifully. I am so impressed at how these chefs are opening up to you guys! Keep up the terrific work!
Oh, and the experience you guys had where you froze up and couldn't think clearly is called "Stendhal Syndrome". It's a psychological phenomenon where in the presence of amazing art where the audience is struck dumb by the experience. :) It really is one of the greatest compliments one can give an artist.
I love how you beautifully filmed this in a way food is truly appreciated and shows the love and passion of the chefs artwork. This only motivates me even more to do well as a future pastry chef. You are one of my favourite YT channels that I enjoy watching especially the food vlogs. Much love from Australia x
This sushi master acknowledges his team before himself. You already know your dealing with someone at a much higher level with that amount of humbleness, sincereity, and loyalty. Mix that with his amazing skills and extensive training and now your dealing with a Legend. Awesome!!
I agree but on a serious note, after have worked in Japan 3+ years in environmental engineering, I've also seen a darker side to this strive for perfection. People literally work themselves to an early death and fear of failure for sure takes it toll on the health and well being of so many. At the company I was working at, they had a quite "forgiving" attitude towards us Europeans but I think I worked at least 10, up to 20 hours overtime (more than 40h/week) every month but I know many of the native colleagues worked much more. So even if "Japanese culture and working ethics" if you will, will create masters, it also comes at a cost people rarely talk about.
I wanted to cry because it looked so beautiful and delicious. You can tell in the way he acts and speaks, that this is truly a passion and love for him. His trust and care for those around him to make the beautiful pieces is amazing. They say do something you love and you'll never work a day in your life. He seems to enjoy every minute. Thank you so much for sharing, and I hope one day I can have this experience. ❤
I love how you guys respect and appreciate "orthodox" sushi the way it's meant to be appreciated. It's truly an art that has been tarnished by way of the spicy tuna caterpillar crunch rolls of the Western world.
It's because Westerners commonly are afraid of raw fish so they eat rolls that they think are not raw! Also, the quality of the fish may not be the best so they disguise it. I, myself, prefer the purity of the fish.
vanderley3 I love and appreciate both kinds of sushi! I don't find it tarnished. I like the various interpretations of food because it opens doors to new flavors.
Fish in the U.S has an very large amount of mercury in it. Past even the govt. limit on it usually, and we have a pretty high limit. Japanese fish has very low amount of mercury in it by comparison because the govt. there has one of the lowest limits since fish is a much bigger thing in Japan as it's consumed much more often. Saying one type of food is being, "tarnished" because of another one on the other side of the planet is pretty ridiculous. Makes zero sense.
Reading the latest comments on this video is disheartening. So many of them are so negative and clearly have no idea what sushi is and how much actually goes into preparing high quality pieces. If y'all only eat microwave mac n cheese for breakfast, lunch and dinner, then wth are you doing on a video like this. It's so sad to see how so many people don't realize how enjoyable food can actually be. How much work goes into selecting the most delicious ingredients, how much time and patience it takes to prepare and perfect a meal like this. This is such an awesome video though, and I watch it every now and then when I feel like having sushi. Perfectly edited, love the commentary. Nothing cringeworthy about it. I just see two people who love food and are capable of appreciating it for the art form that it truly can be.
@noided this seemed like a very relaxed experience and the owner didn't seem to mind. If I made bomb ass sushi I'd probably also want people to pump their fist to show their appreciation.
in Japan, people take their jobs very seriously and to earn the title of "Master" then it's a huge fucking deal cuz you don't just graduate and earn it, you have to really work your bones for it
This would be my very first comment done ever. I just wanted to take to the time and let you guys know that I loved your video. everything from your comments to the music. your expressions and yummy faces just makes me want go and eat sushi. Hats off to the chef, the true meaning of Excellence.
Strange how many people seem pissed off by this sushi video (so why are they watching?) Looks delicious to me and Chef Saito seems committed to the craft.
I watched like a million video about sushi or how to make a great sushi, even how to make seafood. This video is by far the best one I've ever watched, they started out like a tour, from the very beginning, and like a story-teller, the adventure starts from there. They had there point of view, the best part is that the sushi master Saito also get to say what's in his mind, like an interview, let him tell his own story. In the very end also did like a reflection of the experience, it's like never before. After watching the video, I feel so respected for the Sushi master Saito and Simon and Martina, the video is perfectly made.
Well said! It’s quite poetic and full of so much personal expressions. I just love this video! It’s actually my 3rd time watching it! I can’t sleep and I just love their channel.
I first learnt about your channel watching the video 'the Best Sushi in Japan'. Watching that I was like damn, that's some really good sushi. But now this... this literally made me cry. The music, the editing and the storytelling..... are beautiful. I could feel your happiness through the screen. Thank you, Simon and Martina, for making these great videos!
I also want you guys to know that my girlfriend and I really love watching your videos together. We met in college as well! Seeing how happy you two are together really inspires us a lot.
Great video you guys. The editing couldn't be any better. Jealousy became me as I sat here eating my toasted cheese bread watching you eat that magic man's sushi.
Watching Mr. Saito work is mesmerizing. I've never had sushi so I have nothing to base my opinion on, but you can instantly tell you're watching a master of a craft at work. The delicate movements, the way his eyes never blink until he's satisfied with the end product, the perfectly choreographed start to finish motions that reveal the (probably) thousands of hours he put into mastering his passion is just addicting to watch. Thank you Simon and Marina, for letting me watch an art form from the comfort of my home,
I seriously love how many views this has gotten. It's such a well made video and I hope that one day I can taste this amazing sushi! I kind of feel sorry for people in the comments who say you're overacting. Like, how do you just go through life mindlessly shoving food in your mouth, not paying attention to the flavors? When you have seriously good food, you just can't hold back the emotions. Been of fan of you guys for years and you always make such awesome videos.
You can tell that he loves being a rung/step on people's ladders by creating this experience for people and I think that's how he builds his ladder and its beautiful 😊
I just want to say, as someone who has been here (fairly quietly) from the beginning pretty much, I am so proud of what you two have achieved and continue to achieve with your quality of food documentary shorts. I remember the days when this channel was you two in a tiny kitchen with a laptop doing parodies in wigs of music videos- and don't get me wrong, that's how I fell in love with your content, but watching you grow and improve and expand and now produce quality content like this that has a very honest, clear approach to food is amazing. Your shots, editing, sound editing and composition are in the same field of documentaries like chef's table, and the quality of chefs that you are interviewing is awe-inspiring. Your growth makes me get teary-eyed.
One of the reasons I really enjoy watching these types of videos is because of Simon's commentary. He really manages to perfectly express his feelings along with keeping an audience captivated. Simon, you've become very eloquent and I really felt like I was sitting in that room with you guys! 👍
I am a dentist and one of lowest most inexperienced guys. I stumble, and I make mistakes, but I am extremely hard working. Just seeing the passion and energy this guy has put into his work has seriously inspired me to achieve greater and be the best version of myself. I will no longer treat my work as a burden or a job thrust upon me. I will treat my trade like an art and a labor of love and passion just like this man has. Thanks for helping me see the light, its really tough down here
I'm super happy that you guys are enjoying all these amazing restaurants in Japan!! His sushi quality and skills are of course wonderful but I'm actuary more impressed by the quality of the video itself. Can't believe I just watched 17 minutes long video. I just couldn't keep my eyes off of the screen. Keep up the great work guys!! :)
JunsKitchen I agree 100%. The video ended and I thought, "what?, that's the end? where did 17 minutes go?" Thank you EatYourSushi; the magical time you had came through in your video as well. I was transported away! Beautiful music as well. Along with some other comments I read, my eyes teared up as well. To Everyone involved in the making of this video, (in front of & behind the camera), I bow in appreciation. ❤
Great video! Awesome storytelling. Love the angled shots, slow-mo, music choice, text overlays, B-rolls... love the style and overall feel. Props to the editor(s)!
Watching Mr. Saito talking about his virtues we can understand why he is the best in what he does. Amazing sushi pieces and the level of skill with knife, it slides through the fish. No comments, the images say more than a thousand words. Congratulations from Brazil
You are definitely not wrong by calling him the sushi god! I can’t wait till one day making my way there and experience this sushi heaven! Thank you for the video!!!
I'd expected you guys would describe the taste and texture of each piece of sushi you eat. You didn't. I like you. You are good guys. You respect Saito-san and his work. Your feeling was showing. Thank you for sharing your great moments.
If you had used words to tell us about the sushi, I would have unsubbed myself from this channel. Instead you tried to tell us how you felt. So I love you guys more now.
The video quality is amazing and so cinematic. It makes it seem as if the experience there was magical. I'd love to try sushi as good as that some day.
I have no idea how I get here, but I will definetly stay for more. It's my first video of you guys and when it is about a food, im on it! Keep it up, great video!
+Max Winiarski thank you! Our videos aren't always like this, though. We often go for cheaper food, and goof around a lot more. Though we will have more videos like this in the future :)
+Simon and Martina I am pretty sure you will! From that what I saw so far I will definetly checking out your videos. Watching this Japanesse stuff which I trully love just inspire me to move abroad :D This is just amazing for me haha. I hope you will have a wonderful New Year guys! Cheers!
very well done footage! I like the fact you can do your silly/fun videos, but can transition to videos like this. Thought I was watching a vice documentary (probably better tbh)
I really do enjoy watching this time after time over and over again, and not just this video. All of your food videos are things I watch on the regular, even when I'm eating! Entertaining, yet I find myself always learning from you guys. I hope to see maybe more videos like these or maybe an hour long documentary ;)?!?! Thank you and keep up the great work! -From a huge fan.
Wow! Simon and Martina, I've been following you for a while now, and I must say your editing is getting better and better. It's always been entertaining to watch you, but this is high quality filming and editing. I also noticed there were more negative comments on this than usual. Please don't let them get you down. You are really a wonderful couple, and you make so many people happy with your videos (including me). I'm so excited every time you upload a new video. Please don't ever stop! :)
+Gnafsable oh, we're not worried about the negative comments. Whenever our videos get shared somewhere we get hoards of new people saying mean shit, but we also get lots of new people joining the community, so that's a good thing :)
It warms my heart so much to see an American couple be so passionate and appreciate authentic sushi this much. This is exactly what good food should do to you.
Sushi Saito is often acknowledged as the best sushi place in Tokyo, and some argue he's the best in all of Japan. We got a once in a lifetime opportunity to not only eat, but also shoot with him.
Simon and Martina this is AMAZING! Guys, 2016 was definitely the most culinary year for you yet! Can't wait for what you have in store for next year! Also Merry Christmas!
My father in law was a 3rd generation sushi man in Meguro, I used to go to Tsukiji Fish Market early in the mornings with him to buy what he needed for the day. Great episode guys.
For the its simple haters: kicking a ball is simple, dancing is simple, even making a pizza is but as my grandma used to say: The most simple things are the one that are the hardest to do in perfection!
Well she must have suffered from some form of dementia. That's a laborer's opinion. Of course you can become extremely efficient at a simple task. It's a matter of repetition.
Tom Praytor I think you miss the point here: Being really good at something and creating something that can be compared to art, are two different things. You can't meccanically create something that moves other's soul, right? (Sorry for bad english)
I don't even like fish and i'm also allergic to shellfish but i would kill to go here, this man is overflowing with passion for his food and what it is he does
You don't often hear of fish being aged and any sushi gourmet knows its importance!! I share Saito's attitude regarding traditional sushi and I've never found it anywhere but Japan, My all-time favorite sushiya was in Fukuoka, 1960. For the lack of refrigeration the raw seafood was laid out on cloth covered ice, under glass. On the front of the counter was troth with filtered water circulating allowing you to dip your fingers. Back then no one used chopsticks for sushi. That's what I call traditional!!
What a WONDERFUL video, you guys have truly honoured this Sushi Master with this wonderfully edited video. Watching this made me feel good the attention to detail and the information you give is excellent.
+M Barik thank you for subscribing! I can't promise all of our videos are going to be like this one, but we will be doing more videos with food masters in Japan in the future :)
I'm so impressed with the quality of your videos. It's like I'm watching a documentary. The music you use is very fitting. You always choose good music. Ps. Pickled gizzard shad is my favourite sushi. I had it at sushi Nakazawa in ny... So good...
I am sorry to hear that you haven't had any good sushi in your whole life. If you live in LA, maybe I can recommend some good sushi places that may change your impression about sushi.
Same. I respect the skill involved even if I dont like Sushi... I dont like raw meat. I dont like 'fishy' stuff. And you dont know how many pretentious people have told me I just havent had 'the right kind' implying ive only gotten cheap stuff. Trust me ive tried all kinds, im not insulting your culture, its just not for me lol.
I ate those sushis with you guys. Best experience and expression video that i've ever watched in RUclips, by far! Huge thanks for that, I really appreciated guys. Love you
Saito san must have been through tons and tons of shitloads of hells just to get to where he is right now. It shows on his face and aura. I am too scared to even imagine what he went through in his early training days.
I only just found this channel through the Stories feature and I'm really glad I did. This video alone is incredible, it had me hooked throughout. Dam! You live some awesome adventures!!! I can't wait to start watching more. Thank you so much for sharing and stay awesome!!!
I didn't think you guys could top your other high end sushi video, but this video just crushed it. I was also wondering how you guys were gonna edit this documentary style video and do Saito justice. You guys definitely brought your A game when editing this video. Thanks guys for another amazing video and I just..just..hold it...okay i just came in my pants. Thank You.
You mean people can not try their sushi unless they know someone that knows the owner? omg are you kidding me....so there is no way that we can try it....
So about ppl who think they are overreacting false, i've been in Tokyo twice already, the food is an experience from a different universe, first piece of medium grilled kobe beef made me shed a little tear of joy and ecstasy. Thanks for the video, i miss Tokyo :)..
I'm glad you know what we mean! I didn't know food could be this good before coming to Japan. It's just something else. And people who don't know think it's faking.
if you're talking as an American maybe... i live in Melbourne and have been to Tokyo twice we have a lot of Japanese/Chinese restaurants and even Japanese specific grocery stores the food in Tokyo was basically the same as the Japanese food found in Melbourne even in some of the cheaper end $20 meal places
Overreacting isn’t the right word but they are clearly efforting to show their happiness instead of just letting it be and that’s what comes across as very annoying. It comes across as very touristy and immature. But hey, if that’s what their happiness is like then whatever. Chances are I won’t be sitting next to them at my next sushi dinner anyway :)
After landing in Narita Airport, my aunt who lived in Japan picked us up and brought us to a gas station diner 'cause she thought we were starving. Heck, even the gas station serve better ramen than anywhere else outside of Japan.
The gap between the almost juvenile smile he has while he's picking the fish and the intense glare he has putting the finishing touches on is staggering.
Hi Simon and Martina, I noticed how the editing is a bit more artistic in most of your "Japanese restaurant/famous chef" videos (often in the opening) compared to the rest of your food adventure videos. Who usually does the editing for these videos?
As i've been a Nastie for the last few years, I watched this video when it was uploaded, loved the quality content, smooth editing and truthfull opinions that Simon and Martina always give us. Came back to rewatch it today and oh all the hate! How did it even get 6K dislikes!? I think it's quite obvious that the people spreading hate are newbies who have no idea who Simon and Martina are and how genuine every video of theirs is. PLEASE PEOPLE! Spread hummus, not hate
+Khuslenzaya Ts ah, we're not worried about it. I understand we have a look that many might not like. That's fine with me. I'm impressed at how angry people get about how people look though. And the conclusions people form about us because of our clothes: even more surprising :)
😂 Martina’s posh establishment voice: ACTIVATED! This was beautifully made guys seriously - I always come back to this video when I’m eating my smoked salmon because I’m Scottish.
I really love your channel. You guys always talk to chef with great respect and have good manner. For Japanese,I think It's best channel to find the goodness of Japan
Wow S&M, I think this video is one of the best you made. The sound, the looks, the frames, the music...everything feels so professional. It truly feels like a high budget ad. Congratulations! Cheers.
Ah yes, overpriced elitest elders. I watched Jiro and his disdain for everything in the industry made me sour. As someone who grew up eating raw fresh tuna my father caught, Jiro's disconnection with fisheries and reality while milking the elite is almost inspiring. At least he knows aging has something to do with quality, though most sushi chefs in the states have figured that out. It's like the blind taste tests for vodka. As long as you have a pure grain source and distill it multiple times, the most esteemed taster couldn't taste the difference between a handle of Sobieski and a tiny bottle of quintuple distilled Grey Goose.
A true master doesn't care about human finesses. They care about their art, everything is about them and their art. You may feel angry about it but that doesn't take from the fact that he is the best in planet earth. You can go eat walmart sushi and enjoy it, but Jiro's sushi is not walmart sushi and it is not a scam, art is there if you know how to see it. If you don't have the education and sensibility enough to see it you will only think it is just overpriced rice with fish.
I'm sorrry you guys are getting so many negative comments on this video. Honestly, the video is beautifully made, and the food looks fantastic. As a food lover myself, I know I would react that way trying it, so I believe you guys. Thank you for posting, I hope I get to try this some day!
This video isn't about sushi it's about the effect of true passion of a man. The energy of that passion that affects the energy of people around weather it's good or bad. But on this video I found serenity and finding of purpose.
This is great! Not just a food review you guys got some amazing footage behind the scenes and I really loved getting the chef's commentary and it felt like we got to know him a bit. Excellent job!
I truly appreciate that we are loving Japan because of someone who keeps the Japanese culture and keeps the way. I also want to live with pride and awareness as a Japanese.
Absolutely beautiful! I'm really liking the quality of your food videos lately this looks like something I'd see on the Food Network. This should really be shown on tv😊
I've been reading recent comments on this video and it honestly breaks my heart. I guess that's the challenge of having a "viral" or 1 video that becomes popular outside of your subscriber base, that they judge quickly without taking the time to know the context of the video, the channel, and the lovely Simon and Martina first. I'm writing this not because I feel like you guys need to be protected or to patronise you because I know that you guys have been doing RUclips for more than 10 years, and probably you guys already know how to deal with mean comments. But I just want to take the time to let you know that your videos are amazing, you guys work really hard and you always take the time to respect and understand the subject you are dealing with. And may this comment be a reminder that you have your loyal nasties that will always be here for you both, because your videos and personalities have brought so much happiness into our hearts. I watch your videos on bad days and good days, and they never fail to make me smile. Hope you are taking a good rest, and please take as much time as you need, we will still be here for you. We have 10 year-worth of awesome videos to explore :D Love you, Simon and Martina.
100% agree! It is terrible to see all these heartless comments attacking them with out even knowing them. I love their story telling and their personalities. I'm rewatching this since I miss them lots!
Ying Hung Sze Simon and Martina need to see this kind of comments. 💗
Thank you. And I really hope they see it too. So they know how much I appreciate their efforts
You may always reach to them through their other social medias. Send them a Facebook message or a tweet. I'm sure they'll greatly appreciate those excellent words you write! 😁
Hi! Do u know whether is it possible to make reservation if you're non Japanese and a first-timer going here?
Thank you for all your work, Simon and Martina (and Dan and everyone else involved whoever you might be!). Thank you for sharing with us.
+AnironSunblade holy shit. This was touching. Thank you for the lovely words :)
Simon and Martina I became embarrassingly starstruck reading that. What a great end to my night!
Your English is perfect. Don't apologize. Thank you for the loving words :D

I love how he loves his job. So passionate about it.
Cooking is an art, and just like any art, you have to love it to be good at it
why does he overreact ..... why not simply enjoy greatness....
@@wellps812 I'm Japanese and I don't think it is overreaction😊
Best Sushi makes me crazy!lol
@@dodoapexch1389 id understand if japanese reacted like that...but he looks fake reacting to it....
@@wellps812 Actually, Japanese "can't" react like that!😊
I just react like that in my mind!lol

Can we just take a moment to appreciate the editing. Having done it before, it's hard and very detail-oriented. This is high quality material y'all.
MEvox I know, right? This is seriously like professional TV documentary level.
I feel like the last dozen simon and martina videos have had a similar level of editing. They have really stepped their game up lately.
Simon Digregorio Yeah. I'm not sure if Dan is helping them or not, but whatever is happening, is definitely great content.
That's because they're professionals! RUclips is their careers haha
MEvox You added Y'all to the end then it killed my vibe
"I want them to tell me things like I had a hard day today but eating your sushi gave me the power to be motivated to keep working until the next reservation."
The quality of this video is so EXTREMELY high, I love the filmography. Thank you so much!!!!! My favourite video yet, all the best from Toronto :)
I'm glad you liked it! Thank you so much :D
Perfect rice, perfect fish, perfect preparations, perfect co workers.... godlike sushi chef... ure perfect chef saito. I would die just to have one of his knives.... Thank u guys for sharing this video. Watched this for like 10x already but still it is one of the best sushi video ever....
it should be simple, but the flavours should work together I wouldn't rely on just the flavour of fish & rice...for me needs flavour balance acidity/sourness, sweetness, bitterness, spicy, savoury, smoky, salty & even have a minty or aniseed flavour.
those elements usually come from the rice vinegar & soy sauce & the saltiness of the seaweed...I'd use smoked fish and the rice provides a savoury element & coriander can provide a bitter element, for spice add chili.
his knives are surprisingly sub-par and more practical than anything else
I am Japanese. Thank you so much for giving me the videos that respect the Japanese culture in this way. Also, I was moved to express my feelings towards sushi in a wonderful way and it was such a tearful truth. Respect each other 's culture. I think that such a world is desirable. I think that it is wrong because I am not good at English, but I am pleased that this happy feeling is conveyed.
Your English is fantastic. I am happy that you liked this video. Thank you!
Japanese culture is amazing...the respect for yourself and for what we do...amazing place...
I think you expressed your desired message perfectly!
I think youre pretending to be japanese and wrote this sappy comment pretending to suck at english when you wrote it just fine to draw some sort of heart felt responses.
Jeremy McQuinn How can you be so sure
The golden age of this channel. I think you really set the bar for later japan based youtube creators - and you set it rather high.
This video was shot and edited sooo beautifully. Holy shit, I just love how much your channel has grew since the first time I saw your videos. So proud.
+Peyal and Pammy Kazi thank you!
indeed! it's so beautiful! it really captured "magic" that Saito has
Damn, the editing skills of this video are exceptional. And I like how the guy shaved his head, his restaurant is already spotless, but for some reason, seeing his shaved head just makes it feel even cleaner....
Huadong Feng heh llol
also all the other chefs had their heads shaved as well.
shaving their head, I think is their way to show totality and sincerity (both are really important aspect of life in eastern society especially in japan) into their craft, showing how hard they tried to maintain hygiene for the food. To prepare food on kitchen, in general u suppose to wear hat that cover all of your hair so no hair will fall into the food u prepare. Though shaving their hair really is "extreme" version but it is in a good way I guess :D
They are? lol
Josh Scott ohhh I get it you work in a holloywood studio on editing stuff so you can do soooooooooo much better
Ever since you guys moved to Japan, your video quality gets better and better. That looked like an incredible experience, thank you for sharing it with us.
Thank you for watching!
I religiously watch every video you guys release. You have gotten me through some really tough days!
Rebecca Smith crazy how they no longer have a huge staff and their video quality is still good

凄い共感しつつ、日本の食にここまで興味を持ってくれてて凄く嬉しいです😊
I think you two honored his artfulness and passion beautifully. I am so impressed at how these chefs are opening up to you guys! Keep up the terrific work!
Oh, and the experience you guys had where you froze up and couldn't think clearly is called "Stendhal Syndrome". It's a psychological phenomenon where in the presence of amazing art where the audience is struck dumb by the experience. :) It really is one of the greatest compliments one can give an artist.
You my friend are lovely for this comment! xoxox
Awww, thank you, Mariah!
Draculady123 i
I love how you beautifully filmed this in a way food is truly appreciated and shows the love and passion of the chefs artwork. This only motivates me even more to do well as a future pastry chef. You are one of my favourite YT channels that I enjoy watching especially the food vlogs. Much love from Australia x
pastry chef sounds amazing!
kajitani13 it is but it's hard work. Worth it though!
This sushi master acknowledges his team before himself. You already know your dealing with someone at a much higher level with that amount of humbleness, sincereity, and loyalty. Mix that with his amazing skills and extensive training and now your dealing with a Legend. Awesome!!
He's a General. A General relies on his soldiers to be a General. Salute.
you are no good
Not all great people are this way
Something about Japanese people and their craft. No matter what it is, they do it with the upmost passion and respect
This is shot and edited so beautifully. Very stylish, almost sensual, haha! But seriously, very well done.

I, myself, prefer the purity of the fish.
vanderley3 They're both yummy you poop face
vanderley3 I love and appreciate both kinds of sushi!
*Facepalms at ignorance* yeah radioactive fish, you're brilliant
Lenemations it’s not about sushi. This couple overreacts. They’re gross.
@@emadheydaribeni3626 then don't watch. pretty simple
Lenemations I don’t. The video and the shots are very nice. I fast forward the parts when she eats sushi and having prententious mouth orgasm.
Emad Heydari Beni agreed lol
Wow. The Chef really love his job. He loves what he do. I wish I could feel like that.
in Japan, people take their jobs very seriously
and to earn the title of "Master" then it's a huge fucking deal
cuz you don't just graduate and earn it, you have to really work your bones for it
And they even had their heads shaved! That's what I call passion
Flop Flip like Saitama from the anime OPM
Everyone is bald bcos they don't wanna risk their hair falling in the sushi. Much respect
A waste because I love their beautiful black hair
Everyone has Saitama's hairstyle lol
They can wear head caps
What about the eyebrows? 😁
what about nose hair, eyebrows, eyelash hohoho😁
This would be my very first comment done ever. I just wanted to take to the time and let you guys know that I loved your video. everything from your comments to the music. your expressions and yummy faces just makes me want go and eat sushi. Hats off to the chef, the true meaning of Excellence.
Strange how many people seem pissed off by this sushi video (so why are they watching?)
Looks delicious to me and Chef Saito seems committed to the craft.
I couldn't agree more, it really highlights the beauty of sushi itself
ya'll should watch Jiro's Dream of Sushi then.
Well said! It’s quite poetic and full of so much personal expressions. I just love this video! It’s actually my 3rd time watching it! I can’t sleep and I just love their channel.
They call this man One Taste Man; one taste and your mind is blown!!

I Love how sushi is not just a dish it's a history a legacy.. it's beautiful
Soccer God
Great video you guys. The editing couldn't be any better. Jealousy became me as I sat here eating my toasted cheese bread watching you eat that magic man's sushi.
Watching Mr. Saito work is mesmerizing. I've never had sushi so I have nothing to base my opinion on, but you can instantly tell you're watching a master of a craft at work. The delicate movements, the way his eyes never blink until he's satisfied with the end product, the perfectly choreographed start to finish motions that reveal the (probably) thousands of hours he put into mastering his passion is just addicting to watch. Thank you Simon and Marina, for letting me watch an art form from the comfort of my home,
thousands of hours is underselling the training it takes - he has been doing this for 20+ years at least
Im just wondering why you havent had one yet. 🤔
LauWalla I still miss music Mondays, and it certainly is awesome too see how much their quality has improved over the years.
AH SHIT THIS COMMENT MADE ME TEARY EYED.
OH GOOD. NOW I'M JUST CRYING. IN A GOOD WAY.

JunsKitchen Jun comment! love ur channel and cat!
JunsKitchen is so right. I
JunsKitchen I agree 100%. ❤
JunsKitchen Oh wow, I didn't even realise that this video was 17min long until I read your comment! 😅
+JunsKitchen thanks Jun. Hopefully you like the next place we eat at :)
Great video! Awesome storytelling. Love the angled shots, slow-mo, music choice, text overlays, B-rolls... love the style and overall feel. Props to the editor(s)!
Thank you! I'm glad you liked it :D
This video was beautifully made, I felt the passion Chef Saito and his team has for creating sushi. This is definitely on my bucket list.
I'd expected you guys would describe the taste and texture of each piece of sushi you eat. You didn't. I like you. You are good guys. You respect Saito-san and his work. Your feeling was showing. Thank you for sharing your great moments.
+Yoshi we tried, we actually tried to describe the food, but we couldn't. We were just too overwhelmed.
I've watched this a bunch of times. This video should with no doubt win an award from youtube due to its perfection.
Toddy Ha thank you! We'll still be doing silly videos though. Once in a while we'll do videos like this :)
+Danny Math thank you! We've got another video with a Master Chef we're working on now. I hope it'll be done within the next two weeks or so!

Simon and Martina woah, I've never clicked on a video so fast. :)
Simon and Martina I Love your videos!!! So glad you live in Japan now!! Send my love❤️❤️

Simon and Martina looks so yummy 😱😱😱
how does Saito compare to Jiro?
My father in law was a 3rd generation sushi man in Meguro, I used to go to Tsukiji Fish Market early in the mornings with him to buy what he needed for the day. Great episode guys.
I have to say this is the most beautiful video I ever seen about sushi

this is one of the most beautiful videos you guys made. Thank you so much, that was lovely :) what an experience.
Thank you so much! We really poured our hearts into this.
For the its simple haters:
kicking a ball is simple, dancing is simple, even making a pizza is but as my grandma used to say: The most simple things are the one that are the hardest to do in perfection!
Jan Your grandma was a intelligent woman...
when things are simple, there's no where to hide the mistakes.

You are one lucky man to have lived through that experience.
@@Puppy_Puppington Me and a billion lucky Japanese!!

Ps. Pickled gizzard shad is my favourite sushi. I had it at sushi Nakazawa in ny... So good...
i dont like sushi but i respect the art or anything that requires passion
I am sorry to hear that you haven't had any good sushi in your whole life. If you live in LA, maybe I can recommend some good sushi places that may change your impression about sushi.
Same. I respect the skill involved even if I dont like Sushi... I dont like raw meat. I dont like 'fishy' stuff. And you dont know how many pretentious people have told me I just havent had 'the right kind' implying ive only gotten cheap stuff. Trust me ive tried all kinds, im not insulting your culture, its just not for me lol.

Huge thanks for that, I really appreciated guys. Love you
Why the fuck is a video about sushi making me so emotional
Because Chef Saito is so passionate you can feel it through the screen. 😳
Thank You.
How did you guys make reservation?
Our friend is friends with Saito.
Me and my wife would love to try it in April. Can you advise us how to make reservation there?
+Porsche Carrera I can't advise you, because it's referral only. You need a friend who is a regular to get you in.
You mean people can not try their sushi unless they know someone that knows the owner? omg are you kidding me....so there is no way that we can try it....
Michelin stars mean serious business...hard to get in and probably EXPENSIVE!!!
I think this was the best interview/restaurant review to date.
i am glad that this "dining experience" touched your hearts and brought you joy. you will never ever forget this meal.
Well, Japan has the most amount of 3 Michelin star restaurants. Nothing suprising about food there being so good. Great video!
if you're talking as an American maybe... i live in Melbourne and have been to Tokyo twice we have a lot of Japanese/Chinese restaurants and even Japanese specific grocery stores the food in Tokyo was basically the same as the Japanese food found in Melbourne even in some of the cheaper end $20 meal places
My first Simon and Martina video, and this was mesmerizing and wonderful.
Welcome to our channel!
17:05 minutes worth of gold. My body shivers just by watching this piece of art. God bless them all.
I love how Martina eats with such joy!!!
We do the editing. Dan helped with a couple of montages, but otherwise we handle it all ourselves :D
thank you :)
Yes for hummus. I think 54k voted up for that too.

Skyler indeed man!
Because Simon and Martina are traitors for Koreans.
.
They are insanely overreacting.
No they are not. I'v ate there...

Absolutely beautiful! I'm really liking the quality of your food videos lately this looks like something I'd see on the Food Network. This should really be shown on tv😊
Thank you!
I totally agree with you
100% agree! It is terrible to see all these heartless comments attacking them with out even knowing them. I love their story telling and their personalities. I'm rewatching this since I miss them lots!
