      So you're essentially saying our standards are shiet? I'm embarrassed that came from my country. Especially from North Carolina, they have high standards, but if they delivered something that costs tens of thousands of dollars, you'd at least expect it to not be in the condition.
      Imagine if you received a Mustang or a Challenger delivered to your house, but the guy crashed it on his way TO your house.
      "Sorry bruh, didn't mean to do that" and then the dude leaves with your money. I think then you might be able to understand the guys frustration and shade throwing, he was expecting to make money, but because of the shiet work the dudes did in capturing this fish, he just lost (I'm assuming) about $6,000.

      It doesn't matter what standard he expected. You can order a $4.95 pizza from Domino's and wish for a 5 course gourmet meal to arrive instead, but that's not ya gonna get.

      But is that a $4.95 pizza? It's one of the most expensive fish in the world, worth several thousands of dollars.
      I would hope that the people who caught it would at least do it properly.
      Also there are such a thing known as "standards". If you want an example: If you don't meet Gordon Ramsay's standards in the kitchen, you get the boot. Simple as that. In this case, not much can be done as
      A) he already bought the fish and was screwed by their job
      B) He's not their boss, or their mom.
      The worst thing he can do is just do nothing. If they continue to do a poor job, he could say "they fking suck at fishing" and all of a sudden, any restaurant worth it's salt will stop buying Tuna from North Carolina.

      @@User18dog I believe it is standard for sellers to sell their products at its best quality. The people in Japan deal with goods based on the trust between the seller and buyer. So I can see why Yamaguchi san is quite disappointed.

    I meet him in Tokyo, he is definitely the God of tuna. He was so amazing to watch and his tuna was definitely on point! I got some toro from him at a cheap price. He definitely love his customers and his work!

      ​@013nil do you even know why he's called the tuna king? He is the number one buyer for the number one fish of they day on multiple occasions on a steady basis. Each tuna caught that day gets a rating of 1- how many fish being caught. #1 being the best fish of the day. Imagine how many buyers want that fish. He outbids them all, all day everyday for the number 1 fish

    This video is so good I've watched it so many times I cant count them. The tone it has from the beggining till the 8th minute is all aboit work and how it goes for him in a daily basis. From there on is all about his story and what he can tell us about it. What it means for him to be a professional, the best tuna, what he loves, his craft and the final quote... I would PAY to have him talk about himself at my university.

      Totally wrong though, the head is like a pice of leather. I am a commercial tuna fisherman and I have bought many fish, the scar doesn't affect the cost. This guy is being dramatic for the camrea. The head is literally impenetrable.

      I feel this is one of those quotes that sounds wise to dumb ppl but is not really true though at all... for many things its great to learn from others and you would be considered excessively arrogant if you assumed you could just teach yourself. I love many things that I have been humble enough to admit there are others that know much more about this topic than me and have been curious and eager to learn from others.. the passing on of information from human to human is so important to our nature and success as a species. Also its impossible to teach urself something completely unless u have invented it completely independently urself.. if it existed before much of what u learn has been passed on by another human being .. if you count reading books and learning things as teaching yourself you are wrong because this is still others teaching you.. take learning to play the piano.. for example .. unless u invent the piano and teach yourself completely independent of any other human being you will have already had multiple ppl teaching u before u even sit down to play the first time...

      Spunkmire that’s great and all, but what does that have to do with my original comment? I understand that you’re trying to bring to light some of the questionable fishing techniques some (not all) fisherman practice. But this is not the video to do so.
      If you truly want to make a difference, there are plenty of videos online that show the questionable practices of the fishing industry (you know, the actual fishing part) that you can comment on. You’re overreaching here with a video that is tangentially related, especially when it highlights someone who clearly has respect for the product.
      Let’s just take a step back and appreciate his hard work and dedication. Screaming about fishing ethics here will just push ppl away from your view, not towards it.

      @@changlee1196 I believe the buyer sees the fish before buying it but it's not always possible to see injuries so it's a bit of a gamble. I remember seeing a video of an auction in the market or something where they bring out the fish and those like the tuna king bid on them.

      I've never really liked seafood, no-matter what I try it always has that same unique fishy taste to it that for some reason makes me nauseous. Yet after watching a video like this it makes me wonder if Tuna would be a different experience, it looks like the steak of the sea.

      @@_Saracen_ Tuna does indeed have less of a fishy taste than other types. Maybe try canned tuna at some point (though it tastes completely different from the tuna they use for 🍣) and if you have a good sushi restaurant nearby go and try a couple of pieces there. Maybe it works for you, maybe fish really just isn't your thing.

      Which is why the Japanese sentence seems longer than the English. I'm marking all of the subjects because it does not exist in the Japanese sentence. Japanese sentences often omit the subject.

    I fished on a commercial fishing boat in the South Pacific jig fishing for Albacore for a Japanese buyer. We would meet a “Fish Technician” in Tahiti & he would grade the fish. Every fish had to be head gaffed. It is difficult as the boat is moving & your pulling fish by hand as fast as you can. That experience taught me how serious Japan is about their fish. Beautiful video.

    When I was in Japan, I watched this man portion a whole tuna. I didnt even know who he was but his shop was the only one still working while others were closing up (It was late morning, after all the days orders had already been sent out for delivery). Watching this video made me appreciate how lucky I was to be able to witness firsthand in Japan.

    I come from along line of fishermen and I was thought to deep sea fish bye hand lining a technique that in my opinion has long been forgotten.
    I highly respect this man and his technique and keen eye to detail because that is how my grandfather has thought me.
