What he created is what the churrons look like in the show, which I think is what he was going for! In the show, churrons are making fun of dumb Instagrammable food trends, so it actually kind of tracks that it wouldn’t be a proper mashup of macarons and churros.

You probably need to use a tip with larger ridges. Having a bunch of small and shallow ridges like that means there's more dough overall in the final shape making it soften like a doughnut. If you have a couple of deep sharp ridges then there's less dough and sharper edges so they get really crisp after frying.
Should also be added that the common churro is basically never truly straight. Iirc, they get fried in huge spirals and snipped into smaller pieces afterwards, so they'd naturally have a curve to them; the smaller the spiral, the more pronounced the curve.
Thanks for explaining this! Most I've eaten have longer, star-like ridges, but I didn't know they had a practical reason behind them.

For me the defining feature of a macaron is that it's an almond flour meringue cooked in a certain way (not that it sometimes has buttercream inside) and the defining part of a churro is that it's fried (not just the dough). This looks delicious as ever but I think it's pretty clearly an Instagram-friendly-colored éclair!
OR is this a deliberate set-up for a Botched by Babish episode when he's had more time to figure out patisserie techniques? 🤯

You are overthinking it, it's a bad mashup of recipes which is not actually possible to pull off with any integrity. You could add some almond flour to your churro dough if you want to go hard for the macaron side, but it's just a meme foodstuff.

@@ThePhiphler That hasn't stopped Babish before, though! I can certainly imagine a long macaron base with churro on top held in place by anise cream as an initial attempt, and then perhaps a perfected form that marries them better together.
I just thought I'd put this in the comments just in case. At 0:36, there is a brief moment of flashing for some reason, I don't think it's supposed to be there. I'm just putting this out there for anyone who needs to avoid flashing lights for whatever reason.

I'm telling you, toasted anise seed is the way to go here -- star anise is what they use in five-spice and Pernod. Anise seed is a carrot herb, like fennel, and has a gentler, more complex flavor. It's terrific in sweet pastries.
Exactly! Anise is great in sweet things, we cover them in sugar for a dish we eat when a baby is born. Star Anise I find gross, it's strong and not the same at all, it ruins a dish for me when you could just use a bit of real anise and it would be fine.
Anise seed is also the traditional flavor for pizzelle.
@@Iflie I like star anise with savory dishes like Chinese beef stew but in a sweet context, it just makes me think of black licorice.
@@cravensean You can chew on aniseseeds, if you try that with star anise I think you'd get a completely different reaction. So it annoys me that they just keep acting like it's the same thing.
Like the herb version of parsley and selery, not the weird kind you put peanutbutter in, the much smaller darker leaves. They do not taste the same yet because they look similar to flat leaf parsley they assume they must be interchangeable.

Great episode. Any chance of occasionally getting longer cuts? When BwB started, the episodes were closer to 10 minutes and didn't feel so rushed. Now it's like they are aimed more toward the 'short video' format. That might be fine for some, but I prefer longer videos with that wonderful narration.
He's been scaling his episodes back, I don't like it either and I like the other content even less but I guess he has a reason

I think the feast from Spirited Away would be very cool and worthy of that event!
I think the way to make churron would be regular fried churros dipped in some kind of ground almond/icing sugar cream that imitates raw macaron dough (without egg whites) and anise flavoured bits of meringue. The anise flavouring could be added to any of the components. It doesn’t really fit the idea that they would be sold individually like in the show but it would taste closer to a churros-macaron combination than cooked choux pastry with buttercream.
So rather than churrons, you made coloured éclairs.🤣

I really thought it was going to be something like cronut, you know where you would fold the meringue with the the pastry, bake it, sandwich it, a little chocolate drizzle. I was looking forward for that classic BABISH WAY of recipe. Still tis pretty great.

If you can bake the churros, if you pipe a medium-thick layer of churro, lay a thick floured metal straw in the middle, and then pipe more churro over it to cover/connect the bottom and top before baking - *you might end up with a churro you can then fill without having to cut it in half*

If you use anise extract instead of star anise extract, you might like the flavor of the filling more. Some people claim they are interchangeable; but I find they are quite different from each other.

I attempted this at my tech school when the episode aired haha... wasn't sure if I had to make a churro shaped macaron, because it looked like that's what they were eating.

In Brazil this is a regular churro. We stuff it with "doce de leite" or chocolate ganache, and use a machine to do so, instead of cutting it.

I was wondering what the heck that was all about, NOBODY IS TALKING ABOUT IT.
At 12 years old, and back when kids still took home economics, our teacher made us make cream puffs. It’s essentially the same basic set up as the churro dough. The making of the dough and adding eggs while they’re in a mixer. That recipe was quite hard for a lot of us. 😂 It set me up to go on and make a lot of fun things. I was able to learn it, so don’t be afraid to start your young bakers with a tough yet diligent recipe!
