The reason the cabbage turned blue after adding baking powder is because there is an ingredient in red cabbage that changes colour depending on the acidity of what you boil it in. When boiled in a pH higher than 7 (which is what baking powder does) it turns blue, if you had added an acid to make the pH lower than 7 it would have turned red.
@@samuelargyropoulos1249 Yes, I used it in undergrad organic chemistry lab experiment and compared it to the standard chemical-based pH reagent called phenol-red/phenol-blue along with other pH indicators.
The compound is called Anthocyanin - and is also what makes blueberries blue. They turn reddish purple when smooshed/cooked because the interior of their cells are acidic.
5:40 If I remember this correctly from my biochemistry class, the reason why the water turns blue if you add baking soda is because purple cabbage acts like a pH indicator. That means it changes color in accordance to the acicity or basicity of it's surroundings. By dumping baking soda onto the cabbage/into the water, you change the pH-Value to basicity. If you would have changed it to acicity, it would turn more of a red/pink-ish tone. This process is actually used in the preperation of a (questionably) popular German side dish, where one part of the country calls it "Rotkraut" (Red Cabbage) and prepares it with a hint of acicity and Bavaria calls it "Blaukraut" (Blue Cabbage), which is prepared just how you do in this video.

Even though it's only gradual, thanks to you I start thinking creatively in the kitchen nowadays :)
it probably would work, but tomatoes can end up making dough more orange when cooked, I'd probably mix tomato paste with a small bit of beet juice to balance out the orange with some purple
@@thetacoman4268 This. The way things change color as they go along is vital to this kind of food prep, so you really need to use beets for red, tomatoes for orange, oranges for yellow, etc. Beets CAN be turned purple with the right pH, just like how red cabbage can be changed from red to blue. I've had some bright electric purple borscht before, it was incredible.
I know nothing about cooking, but I was wondering if gochugaru would work since it makes a really red-pigmented sauce! However it might be too spicy for some people ;;
I have to imagine that tomato paste would be too strong a taste in the quantity required to colour things. The patties are relatively delicate flavours and paste tends to dominate even heavily flavoured dishes. (Basil and garlic etc.) That said there definitely could have been more vegan friendly seasonings added to improve flavour for all the patties.

But I do appreciate that you went the extra mile & put all that effort into making them! Awesome work!
That black halloween whopper BK had was exactly like a pretty patty. First think i mentioned when i bought one. It even had a similar public backlash when it turned everyone's stool irish green.
I think the most mind blowing thing to me is the cheese, never would I have thought all those ingredients combines would make something that not only looks and cuts/melts like cheese, but also tastes like it apparently.
Very cool. This also reminds me of the blue and green catsups Heinz came out with a few years ago. I think they had green (probably made with green tomatoes) and blue, so it would have been interesting to add those to the appropriate colored burgers. And, of course, regular mustard would work on the yellow burger. Also, have you seen the Sneaky Chef series of cookbooks? She adds veggie purees to different recipes and tries to color coordinate them with similar colored recipes so they won't be noticed. It's her way of sneaking healthy veggies into her kids' diets. Anyway, she has a blue puree that contains blueberries and she mixes it into a recipe for brownies; she says you can't taste the blueberries at all. So I wonder if the blue puree might work as a catsup substitute for the blue burger?
Honestly, you can have a lot of fun with these. Imagine if you went on to make krabby patties with jelly on them and applied matching colors of jelly/jam or marmalade to each burger. Green could have kiwi jam Blue can have blueberry Purple can have grape Red can have strawberry Yellow can be apple jelly or lemon marmalade Orange can be orange marmalade

I made a painting of a macaron once, it was a beige/brown one and SO many people thought it was a painting of a miniature burger XD
You researched so much for this and used your culinary talents and science to make freakin SpongeBob pretty patties! I LOVE your channel!
Honestly knocked it outta the park! As always impressive Babish!
I'm not gonna lie, when he said "lean burger bun dough" at 1:19, my very first thought was "but lean is purple, how is he gonna do the other colors"
I'm having a bit of a slow day
I love lean 💜

Not sure if this was mentioned but - red cabbage acts as a pH indicator, hence why the baking soda made it turn blue! You can add different substances of various pH levels to achieve greens, reds, pinks, etc!
Pretty and even sort of appetizing! Yes, even the blue one!
The pretty patties episode was always my favorite. Glad to see it's not tainted meat, but painted meat. Great job on this one!
They mocked the green burger in Spongebob, but they didn't realize it was the best tasting burger.
Man, Patty Hype's one of my favorite episodes in the whole show, and seeing the Pretty Patties come to life is quite the experience.
But I wonder why what caused those who ate them had odd effects to their bodies the day after...
I wouldn't really trust what the creators say. They also said they can't show fish as food, but they do that all the time in running gags like one scene where hot oil got thrown onto a crowd of fish & they turned into fish sticks.
But I do appreciate that you went the extra mile & put all that effort into making them! Awesome work!
This guy is awesomely smart and creative. Lol i doubt anyone actually made these like he did. If you did then wow, thats a lot of work!!
One of the most memorable episodes of Spongebob (which is saying a lot). Only thing missing is the glow-in-the-dark tongue afterwards.
That black halloween whopper BK had was exactly like a pretty patty. First think i mentioned when i bought one. It even had a similar public backlash when it turned everyone's stool irish green.
All the ingredients that were put into these patties/project is just amazing. I would love to try one of these if it were possible XD
I think the most mind blowing thing to me is the cheese, never would I have thought all those ingredients combines would make something that not only looks and cuts/melts like cheese, but also tastes like it apparently.
pretty cool how it isn't just color dyed regular burgers but well thought out methods of colouring
There’s blue, green, orange, purple, red, and yellow cultivars of indian corn.
I always wanted to eat pretty patties when I was a kid and I am so happy that you made this video.
Milk: Look what they need to mimic a fraction of my power. 3:46
Can we all just take the time to appreciate all the chefs on RUclips that take the time out of their lives to make dishes for our entertainment?
I'm so glad he stay dedicated to the art of the food and try so hard to make it perfect
I can’t imagine the time it took to make all this or anything in each video. you’re awesome for doing these!
The resting dyed dough balls honestly had me thinking 'giant skittles' XD
Honestly, you can have a lot of fun with these. Imagine if you went on to make krabby patties with jelly on them and applied matching colors of jelly/jam or marmalade to each burger.
Green could have kiwi jam
Blue can have blueberry
Purple can have grape
Red can have strawberry
Yellow can be apple jelly or lemon marmalade
Orange can be orange marmalade
Jello?
@@dometalican1990 you can always use agar agar
That wasn't my question. How would you make *patties* with jelly? Jelly isn't a solid.
@@katekramer7679 Oh, I didn’t word that well. I meant make the vegan burgers with the vegan “cheese” and put those specific jellies on them. There’s an episode where SpongeBob puts jelly on a normal krabby patty so I thought it’d be fun to make pretty patties with corresponding colors of jelly on them.
Kid me would’ve died of happiness seeing someone make these for real, Thanks King Babish
Nice to see you doing fun stuff again and not just normal stuff like "ah they had a normal burrito on this show let's just make that". Anyone can make a burrito. Everyone has made a burrito. But how many people can say they made a pretty patty?
Let him make his content. He uses basics with Babish when doing normal food. Chill
Every episode gives me a huge amount of joy but this one?? Just seeing the thumbnail gave me a huge smile and made me go ‘what?! No way!’ Truly amazing 😁
That's literally what I said 😂
3:31 it literally looks like claydoe balls that were just baked but it would be an incredibly fun idea to do with kids that could relate with it
On any day in February, make Homer Simpson's Valentine Breakfast from, "I Love Lisa", episode
Major kudos on getting the patties to look just as mouth watering in live action as they were in the cartoon! 🤤😋😍
I wonder if the patties Babish made turned his face purple, his underside plaid, and changed the color of his tongue. Maybe it made his tongue glow in the dark, just like in the episode of SpongeBob.
This looked like SO MUCH work😂 you’re a legend babish
Imagine how much work SpongeBob had to do
I watched a Spongebob episode yesterday for the first time in 20 years, what are the odds of this video suddenly popping up?
As a vegan I appreciate this video so much! The patties turned out so pretty ♡ Props to you for even making your own 'cheese'. This entire recipe is art.

Krabby Patty's have onion, lettuce, and tomato!
And the cheese comes from sea cows. So it is not vegan. The patties are believed to be made of kelp, as its a locally grown and abundant food source.
One of the best babish videos in a minute! nicely done
How nostalgic and aesthetically pleasing. You did such a great job, knocked it out the park!
3:09 I can't believe Babish didn't organize the buns in primary and secondary colors.
I loved that SpongeBob episode! I always wanted to eat a burger like that, but they didn't exist - or so I thought! Thank you for this video!

Bravo! That is obviously a LOT of work doing all the different patties but also awesome because then you really experimented with a great variety of ingredients ❤ Love this!
Babish: Ah, I can't believe I have to make a different burger for each color
Everyone: You don't have to-
Babish: NO I HAVE TO
Just finished the krabby patty video and this came awesome
The fact that he made PRETTY PATTIES and also MADE THEM VEGAN is such a power move, you are awesome dude!
How is that a power move?
Vegan food sucks, it isn't a power move as people want a delicious meal first, but this is not it.
My dream has come true, I’ve always wanted to see pretty Patties IRL. SpongeBob is a huge part of my childhood ❤
