It's always fun to see the different directions people's thought processes take when it comes to the better versions of these weird foods, while Babish made mole for the chocolate my immediate thought was a sweet chocolate curry, just with turkey instead of the beef or tofu I usually use
That sounds awesome as well! Maybe make a turkey katsu, and treat it kind of like chicken parmigiana, to emulate the pizza aspect. With the right seasoning, that could work pretty well.
I'm Mexican and it admittedly took me a while to realize Andrew was making mole. It's so ubiquitous over here than people who are not abuelitas rarely make their mole from scratch, you can just buy it in tetrapak cartons.

the idea of him making a mole hit me right when he started using dried up chiles because they’re somenthing quite unique of the mexican cuisine, but once he started roasting spices, nuts and used crackers, i literally said to myself, if that ain’t a mole you can’t no longer call yourself mexican. But i definitely agree, it’s one of the single most scarce things seeing other people but abuelitas and pro chefs make their own mole, so much so that even to us is quite an impact seeing the complex process, of such a beautiful and unique yet taken-for-granted sauce in our culture.

Babish can make even the most bizzare and childish dishes seem very professional, culinary
friendly and sometimes even healthier depending how he uses the ingredients.
I love how Babish is just like: "I made it, it's bad; here's how to do it better."
Pro Tip: Before you go out to the store for some of these not-so commonly used spices [depending on your usual cuisine] check the very back of your pantry/spice rack. Chances are, you still have some leftover from the last time you made one of Babish's dishes.

I read the book as a kid - it's best to keep them separate in your head. I love both, but they are very very different animals.
For one: none of the characters have names. There is definitely not this crispy golden moment where you realize that the mayor has gone off the deep end of the fry vat. I am pretty sure the cause of the weather phenomena is never explained, but there is more variety to it: one of my favourites is the fog as thick as split pea soup (which is based on an English saying).
That said, I love the movie as much as I love the book, and really felt like Flint was supposed to be someone like me - just, he actually made his wacky inventions, rather than just hoarding random junk for "science".

This is possibly the most anticipated Babish recipe of the year, but Babish pratcically skips the actual recipe and goes straight to the "I think we can do better." I'm really glad you milk steaked this one; definitely the right call.

This reminds of of the movie Chocolat. I rewatched it the other day. There's a scene where they have a luscious meal and every course included chocolate, but I'm not sure what they were eating 🤔 Will you make the luscious, chocolate mystery meal?
Fun fact about Mole: the legend of its origins is that, in Puebla, Mexico, a Bishop was going to visit a local convent, but the Sisters had little to no time to prepare for his arrival, so one of the nuns had the idea to make chicken, which was quick and always on hand, and just make a sauce out of odds and ends that they had in the convent kitchen. The Bishop loved it and now Mole is a staple food in Mexico, with many varieties popping up as more and more people experimented with what could go into the sauce.
Try some Mole on white rice and chicken/turkey, you won't regret it. They even sell it prepackaged in some stores so all you really need to do is heat it up.

Binging with Babish idea that might be fun to play around with: the fox millet ramen from Dr. Stone. To be accurate to the show, all of the ingredients have to be made as close as possible to wild ingredients that Senku used in the show to make his stone-world ramen.

Like chocolate that hasn’t been completely watered down with several spices and other flavors.
use high % chocolate so the fruity and bitter is more prominent than the sweet. or, you know, mole!

There's a reason you've never seen it sold in stores
Don't use pre-made chocolate, or if you do, use unsweetened Baker's chocolate.
I use dark cocoa in a lot of savory dishes to get a deep, smoky flavor that's very rich and savory.
It brings a lot of depth to a dish.
If you want the meatiness of the turkey to cut through the mole a little, you should make the mole a little sweeter. Thanks to the chocolate mole does tend to be a little sweet, but you can definitely make it sweeter and that lets the meat contrast with it. Just don't make it overly sweet, because that can happen and it's no fun to try to correct

I knew it had to be mole as soon as I saw the chilis !!! It's one of my favorites 💕 I still probably wouldn't do your version because here in Mexico you can get the base for the mole in glasses or packs, so it's way more convenient than doing everything from scratch
Problem with buying pre-made is that it normally varies in flavor. My grandma makes it from scratch and I don't like mole if its not made by my grandma

What I learned from watching is that if you ever want to combine chocolate with savory food, always make mole.

I think there's another option for the mayor's request. Do as you did before, but use a slice of cheese pizza instead of pepperoni. Deep fry it, but don't douse the entire thing in chocolate sauce. Put some warm chocolate sauce in a cup on the side, for dipping into.

It's always incredible seeing what Andrew cooks even if they are like this where the original is nigh on impossible to eat. A couple of Australian food items that I would like to see him try to reproduce are an Australian Meat Pie (with either Tomato Sauce or Mushy Peas, Mashed Potato & Gravy on top), Lamingtons & Fairy Bread.
