    When I became a vegetarian then vegan, I felt the same about food I make. It doesn’t fit traditional definitions of meals. I understand your issue with definitions!! They tend to constrain a lot of things. Especially in today’s world. Still love your cooking, energy and soul!! Thank you for what you do

    I have never been a quinoa girl either but tried this recipe and liked it alot! Thank goodness you reminded me of acorn squash tho, that was my favorite part. I love your videos, they give me lots of great ideas and make me feel safe and warm.

    I'm a half Lebanese vegan who is always looking for new and interesting flavors. I'm so glad that I found your channel. Some of the dishes are like ones I make, of course, but you add a twist to them. There's also many I have never seen before. I can't believe you don't have a mass audience already.     By the way, when you cut open the avo, twist it after you've cut it, before you separate the two halves, and then you won't get the skin from the other half. Just a trick 😜

    love your videos, so glad I found this. I wonder if you know of a roasted veg salad that uses sumac? I ate one once in a Lebanese restaurant, immediately forgot the other ingredients, but bought sumac, and never found a recipe. Please post one if you do!

    I love quinoa and have never tried it toasted. Going to give it a try! I love that you said you could add feta to it, bc I was thinking the same thing, maybe a little sumac, too.

    I just made this today and it is so delicious! Now I’m dreaming up others ways to use this quinoa such as in granola, as a crunchy topping for chicken or fish, or as a breakfast cereal with fruit! Thank you for sharing!

    Looks delicious! I have generally been a bit unenthusiastic about quinoa… but I made homemade granola featuring toasted quinoa and it was pretty incredible stuff! So I believe in this culinary miracle Nadia!

    I just tried dry sautéing the Quinoa before boiling in stock per instructions, very delicious because of the toasty taste. I’ll try your method next.

    The sweetened flakes are really only lightly sweetened, and delicious!!! Quinoa flake "oatmeal" is definitely a bit of novelty, but now i wonder why it took so long for me to be invented?

    Hi Nadia! New subscriber. You mentioned that your family owns an olive oil farm and “that there was nothing like it (big whiff!)” I’m intrigued. Does your family sell it? Or what olive oils do you recommend?

    if only I'm allowed 'ONE' recommendation to that recepie : I'd add 'all' the spices /condiments TO the oil , in a separate bowl and then spread THAT over Quinoa - the way it would be absorbed in the Quinoa would be much more flavourful I think.
