The Ultimate Welsh Rarebit Recipe:
50 g butter
50 g flour
1 can of beer
300 g mature cheddar cheese
2 tsp of Dijon mustard
2 tsp of Worcestershire sauce
Country Bread or Sourdough
Salt and Pepper
First, we need to make a luxurious and indulgent cheese sauce. To start melt your butter in a pan, as soon as it starts to bubble add your flour and mix well. It will turn to a paste, allow this to cook for 1 min to cook out that raw flour. The butter and flour mixture is called a roux, if we added milk to it becomes a bechamel or white sauce, if we added chicken stock it would be a velouté, IF WE ADDED BEER it would be awesome!
So that’s what we’re doing…we’re adding beer!
Make sure your beer isn’t fresh out of the fridge and cold, in fact, if you can be bothered to warm it up a little, it helps with the emulsification - what? It will make the sauce smoother.
Pour your beer in bit by bit stirring constantly, as the flour, butter and beer combine it will start to thicken, then add more beer and so on and so on.
Add your mustard, Dijon or English will do…
Add the Worcestershire sauce which is there to give this whole thing a BIG UMAMI kick up the backside!!
Dump in your cheese and let this melt. I like a big rich mature cheddar for this, I love the funkiness…this whole thing is a massive umami flavour bomb!
What’s Umami? It’s a flavour…there are 5 flavours that your tongue can taste: sweet, salty, sour, bitter and umami. Umami is like that funky big savoury meaty flavour you get from cheese, mushrooms, beef, soy sauce…
Slice up some country-style bread, you can use sourdough here. If all you have is white sliced bread that’s also fine, use whatever you have...
Butter the bread and place it under your grill just until it’s a little toasty.
Then smear your gorgeous cheese sauce on the bread, be generous - we have no time and space for skimping on cheese sauce in this house. Season with salt and pepper.
Put this back under your grill until it’s nice and brown and bubbling.
Get a fancy plate, add a few extra dashes of Worcestershire sauce, cut up some fresh parsley and boom…

I remember watching that Gomer Pyle episode about him eating Welsh rarebit, sleepwalking and telling Sgt. Carter off, and I've been wanting to eat Welsh rarebit ever since, so I can try it to find out how good it really tastes. By the way, what does Welsh rarebit really taste like?

One tip to make it even better is to add a little marmite to the bread and butter before you put it in the oven! That extra boost of salty umami brings the dish to a whole new level ^w^
Edit: you can also use vegimite if you can’t get marmite in your area :)

Or, if you don't have Marmite, or Vegimite, you can use axle grease, with a liberal amount of salt added...

I've got to make this again. I used to make it, with milk in the sauce though, for my little sons 30 years ago. I have never like grilled cheese sandwiches but Welsh Rarebit , he'll yes. Also buttered toasted rye bread with thin slices of Xtra sharp cheddar covering each slice then thin slices of tomato on top. Throw under a broiler til bubbly yummm

I like english muffins. And I add some bacon. Along with that, I’ve even added some steamed broccoli florets and chopped cherry tomatoes. Stoffer’s makes it, but they quit selling it in Texas. I’ve been craving it for years. I’ve looked at several people’s recipes for this and your’s looks like the best. So, gonna make it and I’ll get back to you! 🤞🏼

I was introduced to rarebit with a slice of bacon and a cold slice of pineapple on the bread before adding the cheese sauce.

Regarding the beer, use a porter or stout. I make mine with Guneses. I don't need the whole pint so it gives me an excuse for not wasting the extra. 🙂

I love peasant food. Think about it, Welsh Rarebit was end-of-the-month and rent-is-due food. Stale beer, stale bread, and stale cheese was mixed in order to keep the bairns from squalling.

And if you brown the butter and flour a little more,
then add milk and pepper
(black if you want to warn people or white if you want to surprise them :) )
you have the base for Southern (U.S.) peppered/spicy milk/white/country gravy.
Great on American biscuits (or any soft white country bread or dinner rolls) as is,
or you can start adding things
(drippings from cooked bacon or ham steaks (UK/IR/CN/US),
browned breakfast sausage scrumbles,
crumbled or finely diced cooked bacon/ham)
Fun fact!
Southern (U.S.) Red-Eye Gravy is made with the drippings of cooked ham steaks
mixed black coffee to deglaze the pan,
then simmered till dark and thick,
(some add a little flour to make roux to make thicker)
Serve on side with ham steaks and biscuits(U.S.) and pour over to desired heart attack level.

I live in the US so I’m not sure what beers would be available or if I would need to buy an import.
Definitely don’t import anything, any beer will work. Preferably an ale, lager or pilsner. I wouldn’t use a stout or a porter etc. good luck! Thanks for watching

@@SimonJamesCarter It's funny; there are so many ways to make, what my grandmother called, 'Welsh Rabbit'.
Yet, they each taste very similar.
My family's recipe calls for making a dip-like concoction in a bowl consisting of:
sharp cheddar, Worcestershire sauce, ale, heavy cream, Dijon mustard, paprika, and egg yolks. Spread on bread and bake in the oven. Fantastic! I will try your's as well.
I must say that also sounds really good. I like the addition of paprika! I guess as long as it tastes great and you have fond memories eating it then you have a winner!
@@SimonJamesCarter I guess you could go the extra step, like here, of cooking the sauce first, but when you bake it, then broil it, you end up with the same product. Here in the States, there's a frozen food company called Stouffer's that actually makes a frozen Welsh Rarebit in a frozen-food style meal. Not bad. I always throw in a splash of ale. Cheating, I know.
@@brocklanders6172 its okay to grab a frozen meal here and there. We definitely do it in our household! The secret to getting that extra umami is certainly the broiling 💪🏽
This is an awesome preparation of Welsh Rarebit; I use Guinness. Thankyou....but why, oh why did you dribble the sauce on the bread right over the unprotected grill? Don't shoot me, bro. I loved your recipe. That little detail just stuck out.
