      Now I'm just hungry.
      One should have lamb and the other roast beef and both with yorkshire puddings.
      Roast dinner is best home made because then you can have roast potatoes fresh and crispy and vegetables not overcooked as in many pubs that serve it.

    As a Welshman I was really pleased to see this film, you very sensitively explored the ins and outs of some of our best culinary offerings. The faggots and peas looked just like my mother used to make, and the laverbread (traditionally served with bacon and a small shellfish called cockles although there's nothing wrong with a spot of good old ketchup with it too!). Have to say though that I have never seen a chocolate Welshcake in my life (I live 30 miles or so from Cardiff) so congratulations on a discovery there. The more common variation is what is known as a "jam split", which is a Welshcake sliced across into two circular halves and filled with a thin layer of jam (jelly to Americans).
    Welsh Rarebit - yes, the version you found is commonplace, but the most traditional version is eggs beaten together with milk and with plenty of cheese sliced up and simply floated in the mixture (add salt and pepper) before being baked in the oven. That then would be eaten with bread and butter, the heat of the egg complementing the cold butter on the bread. Toast is also an option, but cheese on toast and "Welsh rarebit" are not the same thing, however much it is marketed as such! You can make the rarebit mixture in the microwave very quickly, you will find. Hwyl fawr a benedith arnoch chi (all the best and every blessing) Julian.

      my mother used to make a variety by making a tomato sauce with lots of cheese in it and then put it on toast. It was pretty common for us to have it after church on Sundays. I hated it! never have enjoyed tomatoes and it made the toast soggy (yuk). It was also common for me to be sitting at the table with this cold stuff on my plate for hours after the meal as my father was very strict. ahhh the memories!

      As a North Welsh person, I personally love seeing people from around the globe. I would definately suggest cutting your bara brith a bit thinner though. I love lathering it in the butter spread stuff.

      That microwave traditional is it? Rarebit minus milk is what it was cooked as back home, and yes, it's almost identical to standard cheese on toast. I'm from Cardiff, with my family being Welsh.
      Honestly, Welsh food recipes and marketing is becoming more and more stuck up these days, pretending this and that is usual, when it's just a modern twist. That's never admitted to though, like they aren't proud of the food's origins, and they aren't proud to have made a new thing based on an old thing.
      Most of this is peasant food, my ancestors ate it, as have I, as standard.

      Agreed, a microwave isn't very traditional but it does work as a quick means. I prefer it cooked on an enamel coated metal plate in an oven - as I was brought up having it - but have made a microwave version when time was short.
      Agree a!so it is peasant food. The modern slanting is ok and people will eat what they will but there is something rather odd about presenting something as traditional when it isn't. I suppose it's all about money as things Have to be when making a living. Even so, commodifying food in this way to up the price leaves a bitter taste in today:s climate.

    To make proper cawl like my mother and grandmother (who lived about 5 miles up the valley from Gwaelod-y-Garth) used to make) you really need neck of mutton to give it proper flavour, but you just never see it now. Simmer it overnight, scoop the "scum" off the top, let it go cold and lift the disc of fat off, add root vegetables and simmer for another 12 hours. It really is nicer than it sounds.

      Tim Diggle I think that's because you can't buy mutton easily these days. Years ago it was available everywhere, but now lambs/sheep don't grow old enough to become mutton.

      Halal butchers will always have mutton available....obviously cheaper than lamb too. Head out to a town with a large muslim population and you will find some :)

      Nothing tastier than a dead sheep that started off by being hung up by it's back legs, had its' throat sliced open and left to hang there whilst its' life drains away down a grid! Or you could just look for a small traditional butchers shop where the animals are killed more humanely. One of the reasons I'm a veggie.

    As a UK Chef, I think you have done quite well with your expedition and tried a good range of items, granted some of the high street places dont offer the traditional ways quite so much but you definitely deserve credit finding some good places to eat. Well done.

      You taste the tea better with milk. Too little milk and the tannins ruin your ability to taste it.

      Yeah bit the thing is Welsh and Scottish food generally is pretty awful... English cuisine on the other hand, especially considering the range from general eateries to Michelin star restaurants and street food in London, is probably the best in Europe, if not among the best in the World...

    Love watching your adventures you two! The Gwaelod y Garth is one of our local pubs, shame you didn't have chance to climb the Garth, the views from the top are great. Also we often drive past the Forest cafe but I've never been in, going to have to now! Loving the vids, keep it up!

    It really annoys me when Americans are told how to eat stuff, then ignore all that and eat it cold without cream/
    custard/ gravy, and don't like it, Just how difficult is 20 seconds in a microwave? Saw some American eat a crumpet cold - uncoocked and without butter or jam. he couldn't understand how Brits could eat it. We don't eat it like that! Nobody in the uk would eat it dry or cold like that, because its disgusting! Also cream teas should be absolutely lathered in butter, clotted cream and jam (jelly) not just a small spread of each, It's not a jelly sandwich it's a CREAM TEA.They give you all that cream and jam (jelly) cos thats how much you're supposed to load on the fairly dry scone. These guys eat it mostly as it should be ate and enjoy it.

    Leeks and browys in Powys. We used to make griddle cakes over an open fire or on the top of a stove. Then pop out into the snow to cool off. Browys is bread butter cheese onions pepper salt covered in boiling water. A peasants snack. We used to eat a lot of beef .

    Great stuff, I loved the look of that Bara Brith loaf, reminds me of 'Barmbrack' which I think is an Irish version of pretty much the same thing. Ive been all over--quite a few places, but to my shame Ive never visited Wales, although Ive had many a great night in Welsh company, when they come up for the Rugby and kind of take over

    If you think that any dish made with offal is bland add mint sauce it puts a new dimension into it.
    Toast here is toasted on both sides and brown as oppossed to warm bread that you might get in Europe classed as toast or one sided American toast. worcestershire sauce on any cheese dish is a must!

    Great video....fabulous food! Do you guys do this for a living or are you just on vacation or a honeymoon? If you're doing this as a living....smart move! Thanks for sharing....keep 'em coming! Really enjoy these videos ...living vicariously through you! I was in Europe many moons ago and had a couple of great meals but I think the proliferation of restaurants and cafes/bistros is even more now even here in the USA compared to decades ago!

    Brith is Welsh for speckled. Sometimes its part of a place name because hillsides can look speckled from a distance with gorse and clumps of bushes.

    If you're still in Wales you should try Welsh cakes with butter, Cockles with salt and vinegar from a market, Dragon sausages (from butchers, maby get a bbq) Botanical gin, & Penderyn Whisky.

    Come up to Shrewsbury in Shropshire!!! Its beautiful, I can show you all around. LOTS of history, our castle and abbey were first built in 1068. Also the home of Charles Darwin.

    I went to Britain a few months ago for the summer. We went to London first and stayed there for 5 days. Then we went to pick up my aunt from the airport then we were on our way to Abitelary, Wales. We stayed for 6 days. One of those days, we went to Cardiff and we went to a restaurant right by a gigantic stadium. By the way, I am Welsh. I just was not born in Britain. I was born in Delaware, U.S.A.

    Garth Hill is the original of the mountain that that the Englishman went up and came down. They made the film in mid Wales where it looked more picturesque.

    You NEED to try an Eccles cake if you haven't already. There are crap cheap ones or original good ones packed full of fruit. The ones M&S sell are pretty close to the original ones. Make sure you pick one with a caramel bottom!

    Remember having a bowl of Welsh Cawl in Cardiff absolutely delicious (Don't think I would've paid £10 for it though!)

    I like my rarebit on thinner bread TBH.That cawl looked lovely, my gran used to make it,it should be mutton as far as I know thats why its boiled for so long to tenderise the mutton which can be tough.

      Yeah unfortunately it was the only place we could find to try both dishes at once. Still, was pretty good though!

    Cheese on toast every one knows, Toast one side of the bread, Put Grated or Sliced cheese on the other side (I normally like a little pickle with mine and that goes on the toast first).
    Welsh Rarebit is the cheese melted in some Ale, Cider or Cheese/White Sauce with Mustard added (I like the Honey Mustard with Mustard Seeds), This is spread on the toast and toasted as normal. Here in the U.K A good Strong Cheddar is used. In Wales they tend to use a hard cheese.
    If you are not used to Lamb (I had some last week and that must be the first in over 5 years) it does taste Gamey.

    My own version of Welsh Rarebit uses good grated cheese (a decent Cheddar) English mustard and vinegar, a few chopped chives are good.

    Laver is best with non-US bacon, pan fried in butter and pork fat. Just heat it in the pan and don't mix it in with bread - its like an oily cabbage. Dark green and delicious - perfect with bacon and eggs. Buy tins and use as a base for stuffing fish. No one will know its tinned.

    My grandmother used to make Bara Brith, she used to call it Barmbrack. It's also eaten in Argentina where it's known as Torta Negra (literally Black Cake). Glad you've enjoyed an average British summer. Wet. :D

    As a Welsh man you suppose to eat the cawl with the cheese and bread and the Welsh cakes you cut them in half and but butter on them and there a sweet bread we eat call lardy cake

    Bara brith - literally translated as ‘speckled bread’ although it’s more like a cake than bread.
    Chocolate Welsh Cakes are not proper Welsh Cakes!!
    The way you had the laverbread is not how you would commonly find it. Go and buy a tub of Parsons Laverbread to get a proper experience!
    In Welsh it’s called Bara Lawr.

    We have a lot of cakes and things that are best eaten hot, in the case of Soreen you have to heat it to make it less sticky. Its like glue otherwise.

    The remote coffee shop reminded me of "The Copper Kettle" on the series "As Time Goes By" starring Judi Dench and Godfrey Palmer. She played "M" and he played an admiral on one of those James Bond films.
