    Welsh Rarebit is a bit of a family tradition with some of my friends. It is interesting how many different takes on this dish there are. I'm going to have to try this one. It looks tasty, is the the most straight forward, and doesn't seem to generate the same level of mess.

    For this I would go out of my way. Nice recipe. Truly an upscale version. Colby is a nice Cheddar. The product will change with the quality of cheese, and I recommend the best cheese your pocket book can pay for.

    Welsh Rarebit ....is a very common dish....in Wales. It was very popular many years ago when meat was a luxury.

    Welsh Rarebit is a traditional recipe from 18th century Wales. It became a signature breakfast dish in exclusive London hotels like The Ritz and The Dorchester, along with Devilled Kidneys, Kedgeree and Smoked Kippers. Perhaps Daddy Jack can have a go at those classic British dishes.

    I remember the episode of Gomer Pyle USMC in which he ate Welsh rarebit and would sleep walk I don't know if that tradition is true but Google that episode very funny.

    I agree NookyBroon first dibs. but do not forget Macewans export. guinness is too bitter. Tennants Sweetheart stout is too sweet,but that is perfect for christmas pudding. Lager is only good for boiling tatties. Do not comment untrill you havetried it

    Amazing how many different versions there are all calling themselves Welsh rarebit. I agree with the Guinness comment.. newci brown isn’t as sharp, much better.

    Think you will find everybody in Wales is familiar with caws pobi and that is not even close to a rarebit mixture.

    A lot of people eat Rarebit in Wales, we call it cheese on toast but we have forgotten our roots, its because our ancestors ate it and they called it rarebit. As a Welshman I often found English people preferred Beans on toast rather than cheese on toast so it is a Welsh tradition.

    Always wonder about people who change their accent to this extent, not a trace of an English accent. BTW, this recipe is definitely NOT a traditional Welsh Rarebit recipe....garlic?!

      I can hear his accent. It's neat to hear how it became more "New England." I lived in England as a child and then moved to Texas. Every once in a while someone will ask me about my accent. It's southern with extra enunciation from my English accent days. 🤷‍♀️
