    "Mind of a Chef Techniques with April Bloomfield" is a video series that highlights the quintessential spirit of Chef Bloomfield's culinary ideas, themes, and techniques.
    Don't even think of calling it Rabbit -- it's Welsh Rarebit. But really, it's just a very classic pub dish of a rich, buttery cheese and Worcestershire sauce on toast, melted under the broiler until bubbly and slightly browned.

    As a regular-old Joe Sixpack American, all I want in the world right now is a Buck-Rarebit and a pint of Guinness. And it's 9:43AM ... but best not to dwell on such minutiae

    I've watched a few Welsh Rarebit recipe videos and yours seems to be the best, so will give this a try.

    I made a Welsh rabbit with Caerphilly, brown bread, cider, and egg yolk to emulsify it all. It didn't look nearly as good as this, but my Lord it was delicious!

    This is very close to the recipe I've been making for almost thirty years. The only difference is I tend to use a standard pilsner instead of Guiness, although I think I will try it with Guiness soon. I used to make this for friends and family and they would flip over it.

      Any dark stout or porter works really well - helps round out the cheese and spice

    I'm Welsh and similar to how I make it, unlike a few recipes I've seen. I prefer an ale instead of Guinness, and I use Tabasco instead of Cayenne. But these are just variants to taste.

    April, this is THE recipe for WR. Just to let everyone know, the link to the recipe calls for a "knob" of butter. I looked it up and it's 2-3 tablespoons.

      I was rabbit when invented but as time goes some say rarebit and some same rabbit.

    Modern day cookers do not come with a grill to toast bread, it’s also hard to find a grill online as your will find yourself in a sea of hit sandwich presses.
    Toast in a toaster is just not the same the bread has to be grilled under an open flame 🔥or coil.

    I heat ale in a double boiler then slowly add 16 oz. of sharp cheddar cheese served over buttered whole wheat toast or hot chewy pretzels.

    I’m dying!!! 2:30 am and should not have watched! Btw. I LOVE my Breville and use multiple times daily. Each of my adult “kids” and family have received from me for special occasions. They feel the same!

    Velveeta (2 slices or a lil chunk) and 1 TB Butter with a dash of milk. Melt it. 1/3 C. Milk with a T flour. Add it to melted cheese. 1t mustard with paprika for color. Ready with saltines or toast in 5 minutes. Mama made it for me. Pot roast, Irish stew or steak and bp dinner were other comfort foods that take all day. Cracker egg is also a classic comfort food.

      What the @#$%.... Velveeta cheese? I don't even look at it for my mac & cheese... why go through all that work, instead of making a grill sandwich with processed cheese?

    This isn’t rarebit. I like subbing stout and changing up the cheese, but all the Worcestershire is overkill.
    Rarebit is good cheese (I like white cheddar,) toss that with some flour and add some ale to make a dry paste. Put on toast. Broil.

      this is rarebit as I would make it with stout.
