Feta Bread: Greek Tiropsomo: Soft & Delicious!

- Soft and airy bread filled with savory, creamy feta cheese. This is such a delicious bread! Perfect as an appetizer, side, or a delicious snack. This tiropsomo is very easy to make and a definite crowd pleaser.

Ingredients
For the Starter:
2 cups lukewarm (115 °F) water
2 teaspoons granulated sugar
1 and 1/2 teaspoons instant yeast
1/4 cup all-purpose flour
Remaining Ingredients:
4 cups all-purpose flour
1 and 1/2 teaspoons salt
1/4 cup olive oil
The Filling:
14 oz (400g) feta cheese
Toppings:
2 oz butter, melted plus 2 tablespoons heavy cream or milk
1 tablespoon (or more) sesame seeds, optional
Instructions
Make the starter:
Combine all of the starter ingredients into the bowl of a tabletop mixer fitted with the hook attachment. Mix the ingredients together with a spoon or whisk and set aside for 8-10 minutes.
Note:
A puffy cloud will form on the top of the mixture. If this does not happen, throw away the mixture and start with a different batch of yeast. Yeast very rarely goes bad, but when it does, it cannot be used.
Combine the remaining flour and salt in a bowl and whisk together.
Add the flour mixture along with the olive oil to the yeast mixture. Knead on low speed for 10 minutes.
Place the dough in an oiled large bowl and cover with plastic. Set aside in a warm place to rise until doubled in size. This usually takes around 1 and 1/2 to 2 hours depending on the temperature.
Pour 1-2 tablespoons of olive oil over your work surface and rub it all around. This will keep the dough from sticking.
Punch down the dough and transfer it to the work surface. Press it with your hands and form it into a 15 inch circle. Crumble the feta and add it to the top of the dough. Gather the ends of the circle and bring them towards the center to cover the feta cheese.Smoothe the top out and flatten it. Flip the dough over.
Sprinkle some semolina flour on top of a baking tray or line it with parchment paper.
Transfer the feta filled dough to the tray and press it to form a 13-inch round.
Cover with a clean kitchen towel and set aside to rise for about 30 minutes.
In the meantime, preheat the oven to 425 °F, 220 °C.
Once the dough is puffy, remove the towel or plastic wrap and make some indentations on the top using your fingertips.
Combine the melted butter and cream in a small bowl and whisk them together. Brush the mixture over the top of the dough and sprinkle the sesame seeds on top.
Bake for 25-30 minutes.
Allow the bread to rest for 15 minutes before serving.

I’m making this right now and have it sitting for the first rise. So far it’s really fun dough and very wet compared to another recipe I’ve made a bunch of times that calls itself Greek Bread. I’ll be stuffing it with kalamata olives, feta, and a soft cheese I made on the stove with milk and vinegar.

I just made this thank you so much Dimitra for another amazing recipe! It was so easy, people need not worry about the dough being wet and sticky because the olive oil solves that issue and the bread comes out super soft! :)
I have a above stove microwave with a light under it, I turn the light, on the heat from it heats the inside. This is where I put my dough. the dough in the microwave doubles anywhere from 2 - 4 hours. Love this !!!!

I made this and it is buttery and delicious. I was making soft pita per your recipe and doubled the dough (only difference is the milk). The bread inside was soft and moist and yet the outside crisp with a little chew. What a wonderful and simple recipe. I am tempted to make mini 7" versions for lunches.

I can't hve cheese bcse of the salt. I wud like to try onions. Pity you didn't give some advice on that - but still a lovely video. You are a very clear teacher.
Sauté your onions. Set them aside to drain and cool down. Then just add them into your dough.
I made this recipe yesterday! My dough however was extremely sticky and difficult to work with. I did let it rest for two hours not the one and a half that she recommends. Regardless, when I went to transfer the dough and feta to my baking pan the entire thing toppled over with the feta everywhere! I thought I would have to throw it away but I decided not to and baked it anyway! Well surprisingly it turned out! My husband really liked it and so did I! Thank you 😊

I love the combination of feta with za’atar and dried mint, so if/when I make this bread, that’s the seasoning I would use for the feta stuffing. I’ve read that the best feta is made with no less than 70% sheep’s milk and no more than 30% goat’s milk.
On the side I’d mix some of my best EVOO (from Jenin, in Palestine) for dipping, sprinkled with Aleppo pepper flakes and fresh-ground black pepper. I’d also offer a fresh chopped salad of tomatoes, onions, cucumber, olives, fresh parsley, cilantro, and mint, mixed with lemon juice, sumac, the EVOO, and pomegranate molasses.
For something to drink, I’d have iced seltzer water infused with cucumber, lemon, and mint.

Simply make your favourite bread dough. Break off a piece and roll it out to whatever size you want. Then just fry on both sides.
