- 2 Roma Tomatoes, ripe
¼ white onion
1 garlic clove
1 jalapeno or serrano chili
½ cup Fresh cilantro
Salt
Heat up a small sauté pan (with no oil!) roast tomatoes, onion, garlic and jalapeno pepper until black.
Blend all ingredients with cilantro leaves and season with salt.

This very nice reminds me of my grandma when she was alive before cancer I remember her when I was small she always roast the same way you guys did it it’s very authentic and the taste it’s just way better to do it this way it keeps all the original flavors together ain’t nothing better than past generations of handing down receipts

Fresh homemade salsa can't be beat! Store bought salsa has a lot of salt and preservatives which are very bad for health....(makes my ankles swell)! Make your own! Thank you sweet ladies!

Two things I wish you ladies would've done... One is add more garlic and onion. But hey, what do I know anyway! Home made salsa is the best!!! Most store bought salsa just tastes like vinegar mixed with canned tomatoes to me.

It's Molcajéte. The Pestle is the English word for the "Mortar & Pestle" Too bad that at this moment I cannot recall the name for the grinder/smasher part. For the "Metate it is called "la mano or olote"

+drunkinmaster1 Sorry for the delay! It is also called salsa. Usually the ones that are roughly chopped are called "pico de gallo" and the ones blended are called "salsas", boiled or roasted. Thanks for your comment!

tony not unless you are going very hard. Authentic 'rock bowls' are super hard volcanic rock or very hard granite.

My most well known, home made salsa "Baile De Sabor: Samba" is as follows: Fresh ripe tomatoes, tomatillos, extra cilantro, fresh garlic, red and white onion, jalapenos, habernero, poblano, red and yellow bell pepper, limes, Himalayan salt, black pepper, cumin, and last but not least avacados. Every vegetable except the cilantro and avacado gets fire roasted and seared very well on both sides, for a huge depth of flavor in the salsa. A food processor is used for the chopping. Salsa is kept refrigerated. The salsa sits for at least 24 hours before eating, for all the flavors to fully release and work thier true magic. The avacados are added in as a cream, after blending in the food processor and it adds a beautiful creaminess and flavor to the salsa. Habernero adds an amazing flavor that most people dont realize and that pop of heat.
