Great collection! I especially love the refurbished one, you can tell it's lived a long time.
More I want to see more! I love his passion when he talks about knives and steel
We got more coming your way in the coming months!
I just love vegetable cleaver. I put a 10 degree edge with a 15 degree microbevel and It just goes through a pile of vegetables like nothing else.
Using a Victorinox Swiss Classic Chinese Style Chef’s Knife (red grip) since 5 years for all main kitchen cutting tasks, I get a slight hint that this cleaver would make a nice addition to your nice cleaver collection, as a workhorse. Made of HRC 56 steel with a satin smooth inox blade (in 7.9 x 18.0 x 1.9 mm dimensions), it adds a 13.3 cm polyamid grip, to make the entire knife 30.6 cm long and very light weight with a mere 210 grams. Bladeback is rounded (and thus also ideal to tender sliced meat or fish by bladeback tapping).
This knife has replaced my entire former kitchen knife collection (80+ knives overall) with the exception of a KAI shun universal 15" petty knife and a Victorinox veggie pealer knive.
Enjoyable video. The closest I have to a cleaver is a tall bunka…and I enjoy using it, but always gravitate back to the Nakiri. Nakiri was the second Japanese style knife I owned and that’s where I landed. It’s fun to watch the videos showing staff collections. In music circles the instrument you play seems to say something about one’s personality. I wonder if the same is true for knives!😊
Glad you enjoyed it! A persons collection definitely says something about them!
Ya I have a cleaver problem too…16 and counting
NICE
That last Takeda must be awesome to use 😁
It sure is!
What oil did you use to darken the Magnolia handle? It looks great!
Just good old mineral oil!
Thanks for providing the information in the form of links. Whenever possible all video hosts should do the same. Too many do not. When so done, it increases the number of subscribed viewers. A viewer is more apt to subscribe if he Is presented with either links or written comments about the items discussed. This is especially so when the names of the items are in a foreign language. A viewer who is new to these knives does not have the background of being able to de-cypher the pronunciations. So thanks for the links. I just purchased a CCK 1303 for $100 US dollars here in the US. It will arrive soon, I hope. Your videos (this one and others) helped me make that purchasing decision.
cleaver fever
Ive been refreshing the Tojiro Chinese cleaver daily for what feels like ever, any idea if it will be back in stock any time soon?
They should be showing up soon!
This video is wonderful with the exception of the background "music". It's noise to me and not necessary. This is not the time for trying to emulate Bernard Herrmann's shower scene of PSYCHO! It's all about knives, but no shower.
I actually enjoyed this music. It's unintrusive and gives a good background vibe.
Are* 15 cleavers to many - get the title right.
"Is" is correct there, and you misspelled too in your correction
In this and similar cases, 15 cleavers is treated as a distinct unit. This is the same reason "10 weeks are too long" sounds so unnatural.
