Great Video! I would love to See a comparison between mass Production japanese knive (Yaxell, Shun, Miyabi) and Hand forged japanese knives. I got Miyabis and a Yaxell and I really cant imagine how a knive could be significantly better.

I challenge you to go for 2 days using left-handed only. If it's not a BIG deal. Then go for a week. See through our eyes 😂 enjoyed these unique knives. "Kevin knife special." (Nakiri) looks like a bustersword (not original). Which is gorgeous looking
The Takeda is an amazing shallot slayer. (I've got the Ko-Bunka version, which is literally the Ko-Nakiri with a K tip) But yeah, it's every bit as amazing as every other Takeda piece.
That really long nakiri is actually really nice. I would buy one if I saw one in my country and the price won’t make my wife kill me with it. I could have an actual usage of such a long knife
@@ama5598 i slice a lot of very big fruits and vegetables. Like watermelons, salad, etc. And have my own garden where it grows much larger than in shops. Now I use a very large Chinese cleaver but it’s still too small for my needs. So that nakiri from the video would be ideal

Realistically, a knife is for whatever you want it! Some knives are better at some things. I don't see why you couldn't use a sobakiri for veggies!

4:25 is a little sweet knife for herbs 🌿 like chives or dill and so on. Beautiful knife.
