I made up my cookie dough and chilled it overnight, then took it to our party, sliced and baked... and they were such a hit that I get asked to make them every year now!

Also, I just made the have of the ingrediants. They were so yummy and crispy. I'm going home this Christmas and I will make it for my mom but I will replace the dry cranberry with dry apple because it is my mom's favorite fruit. I ran out of all-purpose flour, so instead of 2 1/3 cups all-purpose I used 2 cups all-purpose and 1/3 cup whole wheat. I didn't think this would be a big deal but my cookies had a very dry, crumbly texture. Was this the culprit? Only other problem I could think of was I hand mixed rather than using an electric mixer. Also, I would like to cut the sugar but was afraid that would affect the texture; is it okay to halve the sugar? Thanks! Still enjoying your channel thoroughly!
@@joyofbaking I think it probably was under-mixed; sadly I think I got lazy creaming the butter and sugar with a fork. (The batter was already dry and crumbly, so it wasn't the bake time.) Time to buy a mixer... Thanks for your help!

Hi, I have some of your shortbread cookie dough in my freezer and want to bake them, is transferring the dough to the fridge for two days enough time to let them defrost?
I really love this recipe and definitely going to make it. Here are my questions. This looks like it could be a biscotti or a mandelbrot. How is your recipe similar, the same, and/or different from biscotti and mandelbrot? Can I bake these in small, straight sided loaf pans then slice them thinly for the additional bake? And, last question. Do you have a recipe similar to the above recipe but using chocolate and almond or chocolate and pistachio as I'd really like to make a chocolate version.

Hi I tried these cookies. .removed them from the oven once they started browning from the edges. .the only problem was that they were soft and were breaking when I was trying to take them off the baking tray to put on the wire rack. . M I doing something wrong? Should I let them cool completely on the baking tray before moving them on the rack?

abida Muneer You could substitute the cranberries with more pistachios. Or, you could leave the amount of pistachios the same and just leave out the cranberries.

You could try mixing the batter a little longer in order to incorporate the butter more fully into the flour. Also if you didn't weigh your flour then make sure to spoon the flour into your measuring cup and then level the top.

Whole wheat flour will change the texture. If they are too crumbly maybe the butter wasn’t mixed with the flour enough or the cookies were over baked.

Most of the time I like to use granulated sugar, but you could use powdered sugar if you prefer.

I'm sorry, but I've only used dried cranberries in this recipe, so I can't say how fresh cranberries would be in this cookie.

You could form the log in a round shape. Or you could roll out the batter and then cut it into shapes.

The answer to question 1 is that it shouldn't make a difference. To question 2 - slice the dough while it's still cold.

You can do that. Although, like you said, there are lots of pieces of dried fruit and nuts, so it may be difficult to get a nice clean cut.

This is a shortbread cookie so there is no baking powder or baking soda. Because of the high butter content the cookies are nice and crisp.
