DELICIOUS Pistachio & Almond Cookies

- Nonna does it again in this innovative fusion of pistachios and almonds, rolled into a lemony ball of cookie heaven. This simple and quick recipe is guaranteed to tickle your taste buds and a huge hit at parties and other gatherings. This is a gluten free recipe!
This recipe makes approximately 70 small cookies
INGREDIENTS
MIXTURE
pistachios - 2 cups, finely chopped
white almonds - 2 cups, finely chopped
sugar - 1 ¼ cup
eggs - 2
lemon - 1, juice and zest
GARNISH AND ROLLING
sugar - 2oz, for rolling
white almonds - whole, a few for topping
pistachios - whole, a few for topping
DIRECTIONS
using your hands, mix all ingredients together until well blended
let the mixture sit for 10 minutes
using your hands, roll the mixture into small balls and place onto parchment lined baking sheet two inches apart from each other
bake in preheated oven at 350 degrees for 10 minutes

Thank you for sharing! So delicious! The inside was a little too wet when I tested so I added a sprinkle more pistachio and they were perfect. Great for Christmas

Interesting recipe... thanks for sharing... noticed there's no butter. Please advice if it's okay to add butter in it. Also can I use almond powder? Thanks
Thank you for watching my video! This is a classic recipe from my childhood.
This recipe doesn’t call for butter or oils, the chopped nuts give the moisture and structure of the cookies.
I don’t think almond powder will work, you need the chopped nuts as I mentioned for the structure.

Hi there - so happy they turned out for you. I do use 2 cups of finely chopped pistachios. You can definitely chop them up finer to get more in. Love this recipe.

Ciao, I have never tried without eggs. but my kids have told me applesauce is a good substitute. 1/4 cup per egg. Let us know how it works
These look delicious! I think my husband will love them! I have a question.........Are you measuring 2 cups of pistachios and 2 cups of almonds and then finely chopping them OR is it 2 cups of finely chopped pistachios and 2 cups of finely chopped almonds?
