      Thank you for watching my video! This is a classic recipe from my childhood. This recipe doesn’t call for butter or oils, the chopped nuts give the moisture and structure of the cookies. I don’t think almond powder will work, you need the chopped nuts as I mentioned for the structure. Hope this helps you, let me know how they turn out if you try the recipe.

For the oven part: Position a rack in the center of the oven. preheat the oven to 400º Cover the baking dish with parchment paper and aluminum foil and bake at 400º for 30 minutes.       It lets people scanning for recipes get a sense of what is being prepared. But call it vegetable loaf if you want -- nothing to get fussed over. I think it looks tasty, and easy enough to make less -- just estimate what you need for -- as in my case -- one loaf pan. Same with what's on hand -- I am currently out of zucchini, but think this will taste just as good without it. I don't have oat flour -- in this I would use whole wheat. I might season a little differently -- cumin would add something to this, I think. But I like this sort of recipe -- flexible. I never thought of doing chickpeas, but will certainly add them the next time I do a veggie loaf. But I will use canned ones! BTW, I think lentils would be a nice alternative, but I tend to think lentils improve everything.

    Interesting! I think I might try a version of this. Would everything still work if you sub the carrots for more sweet potatoes? I figure that still would be good
