    • @happybuddyperson
      @happybuddyperson 10 лет назад +19

      No doubt. The last few days I've melted it on bread, in tacos with fake meat, with beans, with vegan fries, pasta, even on sandwiches. It melts every time as long as you don't glob it on.
      I've also used it on pitas for a fajita so it would work as pizza. It also reminds me of pizza when I eat it.

    As a person who quit eating meat and dairy just two weeks ago, I must say this cheese tastes EXACTLY like the hot melty cheese we get with nachos when going to the movies. It's incredibly yummy, but I must say I prefered it melted. Guys you have to try this on a baked cheese toastie with vegan butter on top, it's heavenly. Thanks so much Anja, you make my transition easier.

      That's what I do w this and similar recipes. I remove a cup or so to use immediately on pasta, nachos or steamed veggies, then reduce the agar/water mix proportionally to finish the firm cheeze. It's nice to not have to wait hours to enjoy the savory goodness, and, as I live alone, i don't end up with more than I can eat before it goes off as this has a very short shelf life compared to a dairy cheese.

  • @gerdaho1

    I must have made this fifty times already, but I do not want to buy agar agar any more and throw out thick plastic containers, so make it without (add less water) as sandwich spread, appetizer or nacho dip. Great for sharing with non-vegans, everyone seems to like it. Thanks for the recipe! This one and the egg salad are fav in this vegan household!

    HI Anja. I just made your smoked paprika cheese. The cheese is so delicious! I cannot believe how easy the recipe was to pull together. This is by far the best vegan cheese recipe I have made. I also used the mixture as a sauce poured over steamed cauliflower. I put all the cheese ingredients together, blended them together but did not add the water/agar . Again, delicious! I can't wait to try another one of your cheese recipes.

  • @Beatle214
    @Beatle214 8 лет назад +4

    Wow wow wow! I just made this with my boyfriend and we love it! Also, adding just a dash (1/4 tsp) of cayenne pepper along with the other spices helps bring out the flavors. FYI the texture of the cheese once cooled is not like dairy cheese. It feels more like jello. However, it melts pretty well as we found out in a grilled cheese sandwich. Thank you so much for this recipe!

  • @JaneMadden
    @JaneMadden 10 лет назад +1

    You are a genius! This works beautifully. I did only 2 substitutions, plus I have a suggestion for others. Substitutions: My husband is not allowed oil in any form so I simply roasted a red bell pepper in the oven instead of using one that had been in oil & vinegar as noted in the video. The second substitution was to bake the sweet potatoes as I wanted to maximize the sweetness and in this part of the world baking is preferred over steaming to accomplish that task. As they say, to each their own. Suggestion: I tasted this mixture in the blender before I started the agar agar in the water. The flavor was fantastic! Just as a cheese sauce for anything, especially baked tortilla chips for the ever-popular nachos for parties, this would be very hard to beat. Thank you for both - the wonderful "cheese" and the immediate use as a sauce without the need for the agar agar process.

    • @cookingwithplants
      @cookingwithplants  10 лет назад

      Thanks for your feedback Jane. So glad you like it. I try not to add any oil to my recipes so the chargrilled peppers I had were only marinated in vinegar, salt and sugar brine (no oil) but making it yourself is even better :-) Well done and thanks for your comments. I loved the base sauce too for mac and cheese or grilled cauliflower etc

    • @JaneMadden
      @JaneMadden 10 лет назад

      I have now taken the sauce base and used it on sliced baked potatoes and then heated, to make the most delicious scalloped potatoes! I think nachos are the next experiment. I'm baaack! I just wanted to let you know that I did just this evening make another batch of the better-than-cheddar cheese using the proper amount of agar flakes this time - and with amazing results. Because I like to experiment in the kitchen, this time I added a tiny bit flavoring from black truffle - just a bit - and because I didn't have smoked paprika I used a good Hungarian paprika and added almost a cap full of liquid smoke. The flavor is so divine, I wish I could send you a chunk. Be well, and thanks again for sharing. :)

    I found this recipe this morning, and, luckily, I already had every ingredient on hand. I just took it off the stove, and it is now setting in a plastic container. The agar powder is amazing. It's unreal how non-vegan this cheese tastes, not to mention, the texture is just like cheese. Literally. Fresh off of the stove, it feels and tastes like melted dairy cheese. I love this. I will definitely be doing this again. Thank you! :)

    Made this today - love it! Was worth waiting to order the agar powder. Just had it on toast and grilled it for a few minutes; it browned a little and was really tasty with tomatoes on top. I bought a smoked vegan cheese recently and it was mostly made of coconut oil and soy and I felt yukky after eating it - this is way better. I may make some more and freeze it as the big jar of peppers I bought for it need to be eaten in 3 days!

    I know it's not a fresh vid but i have to say it (after all these years of me watching v-cheese videos and making it myself): You are the only one, who adds REASONABLE amount of nooch, while others used to put not more than 2 or 3 tbsp tops😕 We need a _strong_ 💪cheesy flava for our vegan cheese, people! And 2 tbsp will not make a thing. So nooch it, nooch it.. nooch it like you should!😀

    Thank you for the great recipe! I love that this is nearly fat-free. I used agar flakes... I used 8 tablespoons + 1 teaspoon of agar flakes, which I allowed to soak in the water for 10 minutes before beginning to cook it. I cooked it for a good 10 minutes thereafter, just to make sure it was completely dissolved. Thanks again! I look forward to trying more of your recipes!

      You can just buy the peppers already roasted in a glass jar, usually in your pickle section in your supermarket. Then if you want, you can take one of the roasted red peppers from the glass jar and soak it in vinegar for a bit.

      CookingWithPlants Okay, it took me some time, but I finally made it. I made it with regular steamed potato (that's best for baking) and didn't use garlic powder (didn't have any and I'm also afraid it might "burn" me, as raw garlic "burns" me (too much stomach acid afterwards), but raw onion doesn't). I also used hot paprika instead of smoked, added 1 tsp of chilli powder and instead of white I used black pepper. I also used 1 tsp of sea salt, but could easily use just 1/2 (I like to keep my salt low). I've also added 1 tsp of sunflower chilli oil with smoke flavor. I must admit this one is a winner (I liked cheeses when I was eating them, but this is way better!). So, how long does this last in fridge? THANK YOU AGAIN! :)

    I really want to make this, but not sure what the UK measurements would be? I think I have converted it correctly or there about for UK. Does this look ok? Does it have to be really precise? I know Australian measurements are slightly smaller than UK tbsp, and had to change cups to grams.

    • 90g oats
    • 250g sweet potato, steamed until soft
    • 1 whole roasted red peppers, marinated in vinegar

    I made this years ago and it was AMAZING! Something went wrong though- not sure if I didn't leave the agar agar on the heat long enough or didn't add enough, but it turned out with a softer texture... more like a cream cheese. I used it as a spread for my bread though and it was seriously addictive! Must give it another try. 🙌

    Ok dang-I wish I had read the comments here before I started! I just put my cheese loaf in the fridge to cool. I was a little concerned since my agar didn't get all thick like your did in the video, but I read the package, which said simmer until dissolved then cool until set, so I'm hoping it comes out well. The taste was magnificent, so if it comes out as soft cheese that will be great, too! I've always appreciated cream cheese on chips or crackers or on a toasted cheese sandwich tomato soup! Thanks for the recipe!

      CookingWithPlants Hi again. It didn't set up to the consistency of any kind of cheese - initially it was more like cream cheese when it's been sitting on the counter top a while - but it works on toasted bread. After it had been in fridge a while I notice water in the bottom of the container so I took the remainder of the loaf and put it into cheese close and hung it up over the sink to let the water drain from it -now it's more like a pretty good paneer - talk about adventures in the kitchen. I'm disappointed at all since the learning process was fun. I'm sure the next batch will turn out beautifully.

    • @cookingwithplants
      @cookingwithplants  10 лет назад

      Wow... lots of adventures there. The two main things are that you need to use agar powder (if using flakes use 3 times the amount) and make sure you cook it long enough so it activates... also make sure NOT to use a lid when setting the cheese as this creates condensation and can make the cheese wet. Good luck with the next batch xx

    I made this yesterday, and loved the flavour! I couldn't quite get around eating it cold in slices, as I found it a bit rubbery (not sure if that's the word). I tried it in a toasted sandwich with avacado, and it was the best! I think I will freeze the rest, in small portions, to use in sauces, sandwiches etc at a later date. :-) thanks for your creation. CookingWithPlants I ordered the agar powder online and bought smoked paprika and sea salt. Still need the white pepper and sweet potato. Do you marinate the pepper in white vinegar after it's grilled or before? Do you think we could do other types - like a strict cheddar or jalapeno? I'm thinking of making subs like Subway and using this or perhaps some type of bean patty similar to the veggie patty they sell.

    • @cookingwithplants
      @cookingwithplants  10 лет назад

      Potato Strong I get the marinated ones from the shop and they are just in a vinegar and sugar brine. You could put any flavors you like... I actually ate mine with jalapeno and the chili punch was awesome. Let me know how you go :-)

    Thanks from one cook to another. I appreciate your recipies, they are great and you do a great job of explaining everything and you also have a delightful presence. This is such a great recipe. No nut vegan cheese. I used a little less water so the flavors wouldn't be diluted. Just enough water that it will mix in my blender. Also I don't have a fancy blender like yours but it worked anyway. The real test will be whether or not my husband likes it! I also used a roasted red pepper and a half a roasted onion and 1 roasted garlic clove instead of the powders. My sweet potato was also roasted. Everything was in the oven yesterday ready for the experiment today. I got the agar agar at a Asian grocery near by also yesterday which gave me a good opportunity to get out of the house for a walk.

    Thank you for this great recipe. I tried it yesterday so I wanted to tell you about my experience. I'm from Germany and the agar-agar powder I can buy here doesn't thicken when I cook it. It will thicken though, when I let it cool down in the fridge. But sadly the cheese turned out softer, than in your recipe. I cannot grate or slice it :( So I guess the agar-agar powder you can get here isn't as "strong" as shown in your recipe. But besides this little problem the cheese is delicious and I will give it another try. Just thought it is some useful information for you, because I guess you have other viewers worldwide :) Thank you so much for your great recipes! i really enjoy watching them.

    I used jalapeños instead of bell pepper. I had Agar Agar flakes that I grinded down in a coffee grinder, still as I cooked the water with Agar, I kept looking at the consistency and kept adding more Agar until it looked like hers in the video. It definitely hardens fast so be ready after blending. I love the flavors, will definitely be a staple in my home.
