I was feeling great, but of course had hoped to drop a little weight from the switch too. I wasn't 😔 in March 2020 I went no oil WFPB and this June my total cholesterol was 171 with my LDL being 101 and I have dropped 17 pounds. I will be 57 in August. I feel great, look good, rarely knee pain anymore and I weigh what I did before having 3 children in 5 1/2 years....my friend says she gets really bad joint pain when she starts to incorporate oils for treat meals.

I’m impressed you made such a big change and stuck with it!!! My cholesterol is slightly high but my ratio is in healthy range, but my dad just had bypass surgery this year, so it’s on my mind now as a preventative. I want to use less meat for health and kindness, and less oil for weight loss, but changing anything is hard, lol! So you switched from say fries at a restaurant to baking your fries at home? Do you have any other tips? What were some helpful things you learned or realized??
I was expecting the silken tofu recipe, glad to see something unexpected! If you haven't tried it, the silken tofu one, with lemon juice and mustard is great and worth a try too!

Thanks for the oil free idea for mayo! I love potatoes. I like my mayo seasoned with some dijon, lemon juice, a little pepper and kala namak for that "eggy" element. Will have to experiment.😊
My favorite by far is a mayo made from boiled down, blended bean-water (from any beans, soaked overnight). But this potato alternative looks really good!
@@cookingwithplants the original recipe unfortunately calls for oil, but you should omit it (as I prefer to) by mixing in aqua-faba. Especially in its whipped form. I hope you will give it a try and post a recipe, for it is truly a game changer in the world of fat free mayo.

Add a tiny pinch of Kala Namak salt and you will have a true egg-mayo taste 👍 I would also add a bit regular salt, sugar and some vinegar just to experiment how the taste changes.

Can I use cauliflower to replace the potatoes? Have you ever tried that? Potatoes raise my blood sugar and so many of the recipes are a problem for a diabetics. I’m referring to recipes for vegans in general. Potatoes and rice and pasta are something that I cannot have right now due to the fact that it affects my blood sugars in a negative way. This eating without oil and the other items I can’t have due to sugar issues is making this diet extremely difficult to follow. Salads are not my cup of tea and I have been trying to force myself to eat them.
This was super easy. I use my crock pot to cook a batch of potatoes for the week... easy and low maintenance. I followed this recipe, but coming of Best Foods Mayo (aka Hellmans), it was just too bland. So I decided to add a small clove of garlic, parsley, and a bit of dill seed... blend up and wow huge improvement! But again, just coming off salty real mayo... so I added a tiny shake of Jonnys seasoning and perfect! * The goal is to wean off the salt for this completely over time
What a great idea!! I substituted cashew milk (made with my Vitamix) and added apple cider vinegar and other herbs. There's no potato taste at all! What a great way to make a creamy sauce/mayo for so many things. I'm changing to vegan eating due to health issues, and this will enhance so many recipes! Thanks for sharing.

Potato, almond milk (or whatever liquid you want to use), mustard. Then add whatever herbs and seasonings you want. Mine needed to be vegan, so I made cashew milk, and used ground mustard since I didn't have regular mustard, and added garlic, onion, and other seasonings. The potato just makes it thick and doesn't really add any taste, so you just need to play around with seasonings to get the taste you want!

I love mayonnaise and have looked for one that does not contain oil and the only one I’ve found is with silken tofu. I’ve tried that one as was not overly satisfied. I think this one might do the trick! Does the type of potato matter? I current only have russet. Was going to say how is this Low cal when you're using whole potatoes.... but then I remember non fried potatoes are great! High in potassium which getting the recommended 3000mg+ dose is hard to get. If you're on a really restricted carb diet tho, you'd just have to remember to count the carbs, but it may not be that much considering the amount that's used.
This is a God send, I was just told yesterday to eliminate all oils from my diet!

So some potato starch in water, cooked, would also be a good base. Add lemon or cider vinegar, salt and mustard powder

Yes, you can! I sub'd with cashew milk. Regular milk would work fine. The potato just makes it all thicker and creamier!

Soy milk, oat milk, hemp milk, rice milk
