INGREDIENTS:
CASHEWS MAYONNAISE:
1 cup of raw cashew nuts, soaked in water for at least 6 hours
1/2 cup filtered water
1 lemon juice
2 teaspoons of apple cider vinegar
2 teaspoons of garlic powder
1 teaspoon of powdered onion
1 teaspoon of Dijon mustard
1 teaspoon of salt
TOFU MAYONNAISE:
400 grams of medium-firm tofu
⅓ cup of olive oil or water
½ cup of parsley
juice of 1 large lemon
1 teaspoon of salt
2 teaspoons of apple cider vinegar
1 teaspoon of garlic powder
1 tablespoon of onion powder
AVOCADO MAYONNAISE:
1 large avocado (6.34 ounces, peeled and pitted)
½ lemon juice
1 teaspoon of Dijon mustard
¼ teaspoon of salt
¼ teaspoon of garlic powder
¼ teaspoon of onion powder
1 tablespoon of apple cider vinegar

I made the cashew mayonnaise flavored it caramelized cut fresh onion, cut fresh garlic, grated ginger, grated galangal, cut curry leaves. It had a Asian flavor. I kind of liked it. thanks Jana for ideas.
Sounds like another great recipe alternative, wondering do you have to use galangal as it's not so easy to come by where I live ?

Oh my goddd all of these look so good! I struggle finding vegan alternatives for sour cream and mayo that aren't super expensive for a tiny amount so these are life savers! No more dry sandwiches or burgers lol

I forgot to buy olive oil and I didn't have mayonnaise, so I tried the avocado sauce, and you know what? it's delicious! I'm not going to buy mayonnaise anymore, I'm going to use these sauces but I'm going to put olive oil anyway because it should give a better texture and olive oil is good for your health. I tried the tofu mayo and it is great, I finally have something that I can use on salads that is oil free. I just used 1 teaspoon of onion powder not 1 tablespoon. Was the 1 tablespoon an error?

I mix cashew with silken tofu. I don’t call it mayo because my husband “hates” mayo, so I call it sandwich spread and he loves it.
You don't have to simmer your cashews. First chop the cashews in a kitchen machine to quite small bits. Then add water until just submerged. The small bits will soak up the water very quickly. Add water in small quantities until the cashews are saturated. If you add just the right amount of water you don't even have to drain them before you put them in the blender.
My avos always purrrfect. Just a lot of the experience on that turf ^^

You can add as much lemon as you wish! It's a personal thing. :)
