Healthy Vegan Easy Oil-free, Nut-free Mayo (Chipotle, Pesto, Golden, Plain)

    NOTE:
    Because these mayos contain blended sunflower seeds, they will start to oxidize and darken quickly due to a certain acid contained in the seeds. To minimize, get completed mayo into a jar quickly and seal air-tight. I have kept these mayos four days with no spoilage issues.It's advisable to use it within a few days. You could make half a batch if this suits you better. Keep in mind that these mayos can be used as toppings and sauces also.
    Nut-Free Mayo
    ½ cup cannellini beans
    ½ cup sunflower seeds
    ¼ - ½ cup water
    1 tbsp lemon juice
    1 tbsp apple cider vinegar
    1 tsp Dijon mustard
    1 tsp garlic granules
    ½ tsp onion powder
    ¼ -½ tsp salt
    INSTRUCTIONS
    Place all the ingredients in a high-speed blender. Add water gradually. Blend until mayo-like consistency is achieved.
    Nut-Free Chipotle Mayo
    ½ cup cannellini beans
    ½ cup sunflower seeds
    ¼ - ½ cup water
    1 tbsp apple cider vinegar
    2 tsp lime juice
    1 tsp Dijon mustard
    1 tsp garlic granules
    ½ tsp onion powder
    1 tsp chili powder
    1 tsp smoked paprika
    ¼ tsp Chipotle powder
    ¼ -½ tsp salt
    INSTRUCTIONS
    Place all the ingredients in a high-speed blender. Add water gradually. Blend until mayo-like consistency is achieved.
    Nut-Free Golden Mayo
    ½ cup cannellini beans
    ½ cup sunflower seeds
    ¼ - ½ cup water
    1 tbsp lemon juice
    1 tbsp apple cider vinegar
    1 tsp Dijon mustard
    1 tsp garlic granules
    ½ tsp onion powder
    1 tsp turmeric
    ½ tsp ginger powder
    ⅛ tsp black pepper
    1 date
    ¼ -½ tsp salt
    INSTRUCTIONS
    Place all the ingredients in a high-speed blender. Add water gradually. Blend until mayo-like consistency is achieved.
    Nut-Free Pesto Mayo
    ½ cup cannellini beans
    ½ cup sunflower seeds
    ¼ cup water
    ¼ cup pesto
    1 tbsp lemon juice
    1 tbsp apple cider vinegar
    1 tsp Dijon mustard
    1 tsp garlic granules
    ½ tsp onion powder
    ¼ -½ tsp salt
    INSTRUCTIONS

      I just saw You on Chef AJ's, about Your Healthy Vegan Meat !!! 😊
      Sooo Very Glad I did !!! Because,
      I'm 73, and in 2019, I decided to be Vegan ~ at age 68. Why ?
      Because of my LOVE🥰 for Animals, Looking into my Rescued Pitbull, Connor💙 Boy's Eyes, I Knew it was Long Time coming, bc I'd thought of it thru the Years...this did it for me.
      A Bonus that I was Shocked at, is, after Battling with Weight since Childhood, and getting Nowhere, a Emotional Stress Eater...
      Lo and Behold, in
      4 to 5 months, I lost 67 lbs !!! 😳
      Shocking !!!

      Miraculously !!!
      4 Years Later...
      It has stayed off !!!😁🙏

      Dr. Macdougall; Dr. Neal Barnard; Dr. Furman, as You Mentioned, and others Along the way...But,
      Looking at the one with You on Chef AJ, I think I can FINALLY Learn much. I Pray so.
      Sadly, my Health has Never gotten Better, as Many of the Vegan Docs say could/has Happened.
      I Still have Diabetes, and had Open Heart ❤️ Surgery in 2022. But, I Finally figured out, that though the Weight came off and that has Stayed off,
      I'm a Worrier and Stressor, Very Empathetic, other's pain, suffering...Animals & Humans, All happening around us in America, Israel, Heartbreaking to me. And, that, does Harmful things to the body 😥.

      I am so happy to have come across your videos it has been a life changer for me . I worry about my adult autistic daughter with her constant fluctuations of not trusting herbs . She is a very picky eater it has given me the ability to incorporate the same herbs in her meals to sneak it in to build her immune system and she loves it. I love that I can meal prep her food without her knowing that she is receiving all the benefits that she's been refusing.     I became a huge fan the moment I "discovered" you. Personally I find an immersion blender produces the best results for homemade mayo. It creates the smooth, creamy, light texture I like. Thanks for all the recipes.

    When I became vegan-ish for lots of reasons including lots of illnesses/toxicity (kidney disease, eye stroke, massive hives/swelling, TMJ, Hashimoto's, insomnia, depression...) I found I had lots of food sensitivities including nuts, yeast, cacao, most prepared foods. Now off all drugs and getting better and better each day. But as a foodie I really miss sauces that enhance my food. So excited to make these! Thank you!!!❤

    Thanks so much. I just tried it (with my modifications) and so good! I used garbanzo beans instead since i can also use the garbanzo Aquafaba for fake eggs plus the little Aquafaba that coats the garbanzo beans after draining helps with the creaminess. . also used reg. mustard which gives it a slight kick. and nusalt (because i'm trying to cut down on salt). So made the reg. flavor and came out great and can't wait to try the other flavors. You made my life so much happier because now i can have my tuna salads and sandwiches. All the garbage they put in mayo now just kills me.

    Again, I thank you for the time and effort you have allocated to these mayonnaise recipes. Yes, the inclusion of additional ingredients. Will undoubtedly change, and enhance the end result.
    Oddly enough, I have been looking for suitable mayonnaise recipes. That foregoes the use of oil etc. And so, I will therefore make, and savour their ability. To enhance my forthcoming salad dishes. And the satisfaction, they will bring to my palate.

      @@healthyveganeating Sometimes, we can be met with a degree of hesitancy. When faced with the unfamiliar. However, your adapted versions , of mayonnaise. Allayed this misconception.
      My sister, and I devoured, and relished your plain mayonnaise., via the use of coleslaw. We have yet to try the other versions. However, they will undoubtedly have the same response. Thank you for allowing us, and others. To discover a healthier alternative, to the accepted norm.

I did make a dressing for my salad just by throwing together some avocado, plant based yogurt and some poppy seeds and seasoning, I thought I did great for my first time, although it was missing something but I don’t know what, maybe a little salt.

    Great video. Interesting a mayo reduced in fats.
    Personally I reed that emultion makes fats easier to digest so I emultionate the coconut fat I usually take for breakfast with my soy milk yogurt and okara dehydrated bicuits. I emultionate this coconut fat with soy milk (racio 1:1~), sweetens it and flavors it with a pinch of vanillin and salt, plus coloring eventually.
    The mayonnaise I do with soymilk is very interesting because it need's just a tiny amount of soy milk and the resulting texture is marvelously creamy. Simply 1/3 glass of soymilk with a clove of garlic and then sunflower seed oil (not canola because of the adverse cognitive effects, you know) and finally salt, black pepper, mustard and/or vinegar, flavorings, colorings.

I modified my recipe yesterday following your concept and adding half a cup of water to my already very fatty mayo (with soy milk as I said) and the resulting texture is marvelously creamy ! I encourage you to try this recipe and share it with the familly, it's so good, they'll appreciate. (It's succulent especially with white truffle flavored oil my man)

    This is the best absolute best cooking EVER
    Only one suggestion when you say salt lots of salt have sugar in it so I would suggest using sea salt

      I am actually salt free in my personal cooking. I let others decide what salt they prefer, and I also write "salt to your taste" in my recipe instructions after I give the suggested measurement.
