    Best Vegan RUclips Channel ever! You are very conscious about the ingredients (low calories/nutrition dense) without changing the taste of the dish.
    I tried making your tofu mayo and it tastes SO good! I was totally in love! I really trust your RUclips channel. Thats a lot bc I dont say this to any RUclipsr. And I’ve watched a lot of them.
    I know quality when I see quality.

      @@cookingwithplants I made it with oat milk, no salt, and no cinnamon. I guess it’s just the bizarre combo of chocolate with potatoes. I didn’t like it. But, don’t take it personally. I like most all your recipes!

    I made this tonight and was blown away by the creaminess. I can smell the potato, and taste it a little, but it's surprisingly not off-putting and really delicious. I ate some as plain chocolate, and some with cinnamon and vanilla, with a pinch of cayanne for a Mexican chocolate vibe. Both ways were really yummy.

I certainly appreciate you sharing your recipies with us and I do wish I could buy your book... I know it is a real Treasure ... but you have many many right here that are absolute gems 💎...     Ok, I finally made this after watching the video a few times. It is surprisingly good! I've experimented making pudding with all kinds of stuff...oatmeal, rice, different plant milks; and this is the hands down winner for a low fat version. Thanks so much for sharing, I never would have thought to try with the lowly potato!

    I remember my mum used to make cake that was one of our favourites. On the crust there was thick layer of potatoes+coco+sugar cream and it was delicious.

    2:46 also, cinnamon lowers blood sugar, so I use it every time I make something sweet 👍
    I love your use of potatoes! Have you ever tried them as a glaze-like frosting on cupcakes ? It’s magic! 🧁

      That’s true about cinnamon but it needs to be a large amount to have any effect on blood sugar.

    I feel so blessed to have found this chocolate pudding recipe made with potatoes! I have iron deficiency anemia. I am vegan and being vegan it is difficult to get enough iron in my RDI for iron. I love potatoes and and I equally love pudding but did not care for the use of corn starch as a thickener to make it. NOW I can make YOUR recipe using potatoes and I not only get a tasty dessert I love! But I also get some of my RDI from the potato with skins as well! May God bless you and yours with continued better and greater health and wisdom in His ways!

    Dear Anja - I never had Chocolate pudding that i actually liked- even before I was vegan - always disliked the after taste. This completely changed my view of pudding! Very bold! how groundbreaking. It's absolutely delicious, where was the potatoes?? I don't know. I could only taste delicious chocolate, dates, cinnamon, vanilla and oat (from oatmilk)! Thank you so much!!

    I made this today! I think I must of added a little of much of the cacao because it was sort of bitter. I also added a spoonful of maple syrup and it’s better. I had my hubby taste it and he said he would never taste anything I made “vegan” again! It definitely will take some getting used to, this new way of life I must live. Thanks to people like you who are making it easier for people like me!

    I’ve asked so many places if white potatoes (ex: Russet/Gold) could be made into a sweet recipe...and always was met w/ a ‘no’. I’ve made this pudding a zillion times w/ regular sweet potatoes but never was experimental enough to try w/ white potatoes...for fear it would taste too ‘earthy’. You bet I’m trying this. 🌼

    As a flexitarian I am always trying to find recipes that work for myself and my main stream eating hubs. I made this pudding and layer it with gram crackers to make an icebox cake for hubby. He liked it. I didn't tell him it was a healthy pudding and he didn't notice. I'm happy. :)

    Must have missed this one. This looks delish! Think I’m gonna try making a peppermint chocolate version. I do something similar with chia seeds and leaving it in the mixture overnight in the fridge then blending in Vitamix until smooth the next day. I do add a little maple syrup. Really looking forward to trying this. Genius!! THANK YOU!!! 💙🙏🏼❤️

    Just made this out of complete curiosity. Honestly didn't think it would work, but for the sake of a couple of potatoes and some dates I tried it. So happy to have been wrong about this, I didn't use any extra sweetener and I put it in the fridge to go cold before I ate it. It was delicious and plenty sweet for me. The second shock was how filling this was, I shouldn't of been surprised as it's potato, but because I couldn't taste the potato, it caught me off guard. I put the second half in the fridge again for tomorrow. Thank you for the recipe, instant staple.

    It sounds good, but the sugar MD youtube said that potato is not healthy for diabetics because of high glycemic index. May be we can use tiny potatoes ( like fingerling potatoes or purple potatoes , but they are not as starchy).

    I finally made this. Good, but still has a potatoish undertone. I used the salt and cinnamon, and added a touch of chipotle powder for a Mexican type flavor too. But I still was tasting potato. I wonder if my potato to sweetener ration was off? Did it have a potato flavor for everyone else? I love the concept and want to make it work. Help!
    I also made Anja's potato based fettucine sauce. That was a total success for me! I used it on a lot of cheese type things.

      Sounds like the ratio was out. Maybe try less potato and more of the sweeter ingredients

    Just made it, but with warm potatoes so that might impact the flavour, so far I don't know if I like it. Ended up making it with more cacao and mixed sweeteners stevia, coconut sugar and xylitol. Hopefully I like it more tomorrow when it's chilled.

    For some reason, when I try to eat dates, I throw them up after 1/2 hour. I have no idea why. So I will try apricots. Do they have to be dried apricots or can I use fresh apricots? It's possible I might be allergic to the sulfur dioxide dried fruits have on them...
