The chili powder is ground chili's, just because she didn't go through the bother of re-hydrating chili's doesn't mean she left them out.(no blender needed for the chili's, brilliant!) Message from Cuernavaca Mexico!.... we know how to make enchilada sauce too but this is a welcomed version. Has anyone else noticed the taste difference in Guajillo chili's over the last 10 years? Maybe monsanto is killing that crop too?

I've never seen enchilada sauce like this, lol. We usually make it with dried chili peppers. (like chile ancho, chile california) and tomatoes and some spices ... Very interesting though
R Walker They are pretty darn good! Just make traditional meatballs using lean ground beef and ground pork, about a 70/30 ratio in favor of beef, and instead of adding Italian seasonings to the meat/breadcrumb/egg mixture you add taco seasoning or a combo of chilli powder and cumin. Brown the meatballs in a skillet or for a few mins in the oven and then finish in your crock pot with the enchilada sauce poured over them. Easy-peazy.

Different variations of how to make enchilada sauce. I make them with Chile California. never thought about using tomatoes. I'll have to try it.
I use Chile California , boil with tomatoes and Chile serrrano .. blend with a piece of small garlic and onion ..salt&pepper. --- must try Laura 😋👌🏻!
