Omg Rachel, we have been roasting several pounds of Hatch Chiles. Not thinking I rubbed both of my eyes and experienced the most painful burning sensation in my eyes. I’m writing to share what helped the most. First I tried saturating cotton balls with milk and dabbing my eyes but received no relief. My wife read about using the back portion of my hands and washing my eyes out with baby shampoo and rinsing several times with water. Lastly I rinsed my eyes with a bunch of saline solution from contact lenses. The saline helped tremendously! I recommend for anyone working with Chiles to keep a big bottle of saline solution and baby shampoo near by!
    Thanks for your wonderful recipes!
    Jorden

I've been watching you for a while now but have strayed off to see what other people are doing. What you're doing is teaching people to cook authentic Mexican foods is an easy to understand format. I'm in Denver and every restaurant I go to serves pre-made red and green chili and that's a drag because everything tastes great except for their cookie cutter chili sauce. So bravo to you. I also think your enchilada sauce has a greater depth of flavor than just about everyone out there...thanks for your lessons, they go a long way with me!

You make us feel right at home, just like we are family! I'm Italian, but my favorite food has always been Mexican food! This is a fantastic video because it gives us a new (at least for me) set of skills! I kind of get stuck in the notion that certain ingredients have to be bought in an "already-processed" form, and you just showed us THAT isn't necessary. And I'm lucky to have a Mexican/Hispanic supermercado that only opened up a few months back - I saw their grand opening festivities and "open house" walk-through online, and I'm completely curious to go and see it - and now I have you, my online friend, to show me what can be done with these wonderful things! Thank you so much for helping me broaden my world :-) ❤

QUESTION? Love, love, love your videos. I went to 1 mexican grocery store and 2 regular grocery stores that had large ethnic food sections and bought bags of chiles from all 3. None of the ancho were near the size you showed. If you could include the approximate amount of the chiles after grinding, that would be most appreciated. After grinding my Guajillo chiles, I had 4 tsp; these also seemed small compared to yours. My ground anchos (I used 5 due to the small sizes) yielded 8 tablespoons. Are this amounts what to expect for the recipe? Hope to hear back. Keep up all the amazing videos please. L

Thank you so much for sharing. Home made is always fresher. Who knows how many years those bottled spices have been sitting on the store or warehouse shelves.

Just love you and your love for food I can almost see your eyes light up when you do a taste test for us. Thank you for all the ingredients you put dow in the scripting area. Wish you would also add the directions 🙄. Because later when I have the taste for your recipes that part I seen to forget. I know that I'm not along on this.
Usually videos fom other I do try are aloud with directions. My brain 🧠 isn't as good as once was😂.
You are one of my top 5 that I do go to watch . Your husband is one lucky Man.

I like the guajillo peppers and the ancho as well. I use those when I make tamales. I boil them together. I use them in the meat but also in the masa. It really gives it so much more flavor! I am so glad you made this chili powder because I also love enchiladas and I need a good recipe for the sauce I have found it here I believe! Blessings to you! I love your channel and the food that I tried and cooked came out beautifully and tasted like no other!!

I will be making your enchilada sauce tomorrow. Tried it once I don’t know if I did something wrong so I am attempting it again I think I was just into much of a hurry hungry husband but thank you for all these videos they’re very informative.
