when i make my lasagna soup, i put the ricotta at the bottom of the bowl then layer the soup on top. it melts but you still get a bite of ricotta in every spoonful. 🙌🏼
This soup has become a standard in our kitchen (we just had it tonight, actually). It's quite possibly the easiest soup to make and the flavor is out of this world! Thanks, Laura!
I made this recipe last week and the whole family loved it! I substituted ground turkey for the beef and also some rotini instead of the lasagna noodles because it's what I had on hand and it turned out great!
I made this today and everyone loved it. My bf said it was the best soup I've ever made. I used chicken stock instead, a little extra garlic. It was a little too thin fir me so I added a bit more pasta and used wonder flour to thicken it. Came out perfect! I also had to use mozz cheese in the soup because I didn't have parm. I added fresh mozz on top and a spoon of ricotta (a tiny dash of adobo on the ricotta for more flavor)
Laura as i have commented in the past , you are my one and only mentor in the Kitchen !!! And everyone that i have ever cooked for tells me that my meals remind them of their grandma's cooking ... Thank you sweetie . And congrats on the one thats in that oven... Ciao Bella... Love , Uncle Shane
This was the first cooking channel I ever watched when I started baking. I just want to say that this will always be my favorite and I love Laura in the kitchen!!!!!!😀😀😀😀😀😀😀 Thank you so much, Laura!
I have a box of cropped mafalda pasta in my cupboard that I had no idea what to do with... Bam, lasagna soup recipe! Will be making some this week, thank you for the amazingly easy recipe!
Made this for dinner tonight with ground turkey and campanelle pasta - a little easier to get on a spoon but has ruffled edges similar to lasagna noodles. This was SO GOOD I'm already looking forward to leftovers!
I will make this next weekend, but I will add the toppings in the pot and then bake it for 10 minutes in the oven, so the cheese gets gooey and crispy on top. Great recipe as always!
This looks so good omg and that cheese😛 also, you're thumbnails have been looking great lately!!! I'm really loving them, especially this one! They make your food stand out even more 😊💖
Nice video. This is basically the same technique as your Chicken Parm Pasta dish. Good tip about keeping the cheese separate for easier reheating as well. Good job !
I made a big pot of this to take to work with me for lunches this week. I replaced the meat with zucchini and red kidney beans and it came out delicious. Thank you for the recipe!
I made this and it was AMAZING! I had to add a little more beef stock for the lasagna to cook well, but nonetheless it was so gooooood. this was too easy and quick for it to have all that amazing flavor. Thank you so much for sharing this.
Honest to God...You are just a JOY to watch!! You're too FUNNY and your recipes are too YUUUMMMY! I am making this crazy DEEE-LICIOUS soup this weekend. Perfect time of the year. Arlene
Watched the video when it uploaded, dreamt about it, thought about it all day and just finished washing the dishes after I made it for dinner haha! Thanks Laura, another keeper!
I'm addicted to cooking videos and any video associated with food. What's weird is that I only eat through a tube in my small intestine, so I don't taste anything other than water if I'm lucky. I live vicariously through these videos!!
You have given me two recipes one as you made for the family and mine of veggies and gluten free..dairy free cheese but can't skimp gotta have the real deal parmigiana ..you did it again PERFECTLY PERFECTION PRECIOUS LAURA
I've just found you out and I'm watching all of your videos!!! All the recipes are amazing, except for the lasagna's (and the variations of it), but it's my limit because, as an Italian, I don't conceive a lasagna with ricotta and mozzarella!!! Aside from that I think you're so talented!
I'm watching this while confined to only foods I can suck through a straw... I broke my jaw along with my cheekbone, left shoulder, and pelvis in a car crash and my jaw is wired closed while it heals. Basically, it's like I'm gritting my teeth for 6 straight weeks lol. luckily the crash was nobody's fault, the tire on the drivers side malfunctioned and basically the treads just peeled off of it as I was driving down the highway going to class so it's good nobody had to feel guilty. Nobody else was hurt so I'm grateful for that too. It's torture not being able to chew anything and eat normal food though lol. You have no idea how badly I want French fries...
Hahah! Love how she referenced Rachel Ray in the "stoup" (stew and soup) in he video. I like to think she dares some inspiration from her as they take some traditional recipe and do a rendition of it their way. :)
I made Delish's version of this a couple months ago (with tiny alterations) and it was perfect but I'm dying to use ricotta now. I'm definitely putting a dollop on top (or better yet the bottom)! Although I definitely agree about the toppings making things difficult. The cheese at the bottom made washing the pot harder.
At the moment I'm just waiting for zucchini orzotto to finish (lid is on, heat is off). one of our favorites. we don't eat meats often but this is on my list!
I've made this very recipe In the crockpot! I cooked my meat and onion first then dumped everything in the crockpot except the noodles on high 4-6 hours on low 8 hours add ur noodles to crockpot for the last 30 minutes. I've also bought and used the Quick cook lasagna noodles by Ronzoni cooks in 5 minutes ;)

Amen!👌🏽😋😉

I'm convinced Laura skips breakfast and lunch before cooking these meals. Her reactions are priceless.
Lol I totally agree! It's what made me decide to subscribe to her (that, and that great recipe).

I just made this for dinner a few minutesago, it came out EXACTLY as your recipe. I used ground turkey instead of beef, but so delicious!
