Lovely Linda, I am from New Mexico. Your red chili sauce is somewhat different from my area. I'm sure your red chili auce tastes wonderful! You were correct saying that if one wants to have less "fiber" then strain or use blender to lessen "fiber" (pulp). I prefer to use a blender for about 5 minutes to not have any trace of "fiber" (pulp). I would use about half the onion, but more garlic. Where I differ from your recipe is no addition of any tomato products. I use much less cumin to no cumin. I do use bouillon (chicken mostly, or maybe beef) for the awesome taste the chili sauce will have. Judging by the amount of chili you prepared, I would use about 3 maybe 4 tablespoons bouillon. I let chili sauce simmer for about an hour or more . For a deeper and wonderful taste of this sauce, I would use pork meat while simmering. Pork gives chili sauce a much wonderful depth and taste. Yes, chicken would work as well. I'm very interested to see how you "can" your red chili sauce! I don't can any food since I am alone as you are, but I want to learn! I have seen many of your canning videos years past but can't recall you canning red chili sauce.
I agree Robert... growing up in my Mexican home, Mom and Abuela never used tomato or cumino in their sauce. But, I am going to try Linda's recipe just for fun and a change of pace ... it sounds very good.

I'm making some enchilada sauce for my pantry right now, but I don't have your wonderful Tupperware pressure cooker, so I brought my pot of yumminess to a boil and stirred it good, then put it in the 350 degree oven, probly for 6 hours. I'll let you know when I go to make the enchiladas. I already have all the stuff I need. Thanx for all that yummy recipe guidance and info.

I love some cocoa in my sauce. I also add a little of sugar. No tomato. I do use flour to thicken, but want to can my sauce, and have heard no thickeners. I've used whole chilis before, but usually opt to make it easier and use a couple different chili powders. I would guess whole chilis would help with thickening.

Many have asked for a canning video, but I'm guessing this Enchilada Sauce should be canned like any other "soup". Looks truly YUMMY. I grew up on Tex-Mex, and for me, Mexican food doesn't taste right without the cumin...and tomatoes.

MMMMMMMM! Your sauce looked so rich with flavor! I just made a sauce that called for simmering the peppers as you did and it went over very well. When an encore is requested it's times like this I wish I canned!! Blessings for sharing your talents
Well that's very interesting... I have never seen dried peppers like that... I am not sure we have Hispanic sections in the Supermarkets in many places here in Canada... Maybe in the large Cities... but that is nowhere near where I live... Probably they could be ordered online... I definitely enjoy the videos you make Linda...

I know that nm chiles are grown close to ground and lots of rodents, bugs spiders or etc. Sometimes they spray for them so be careful. I actually been looking for recipe to can Chile so thank you. ♡

living Off Grid McGarvey style you can boil the chilis and blend them in a blender. No need for a pressure cooker if you don’t have one. I boil mine all the time.

@@carolgreenfield3167 I don’t know what she means by Anchor chillies, but the 3rd chili was New Mexico chili. So they are guajillo, pasilla negro and new mexico. I live in Texas and the new mexico is hard to find (for me).
Why on Earth would you need tupperware and an American canner? Just cook the ingredients until they're soft and then blend them. Any pressure canner will work.
As I said in the video you can cook this on the stove top you can use an instant pot you can put the mixture in a blender you have to have a Tupperware item that's just what I chose to use to day because I love the equipment so much and it saves me time please don't think that you need Tupperware to do this recipe no sad faces over here
