    People from mex, stop complaining, that´s what you get when you go to a mexican restaurant, can´t blame her if that´s not the correct way of preparing them, do you really expect her to go to every part of the world to see how dishes are really made? people adapt dishes depending where they are, i mean, let´s be proud of our mexican food, and that everyone loves it in every part of the world, authentic or not... besides... it´s like us, we put jalapeño, chipotle, tabasco sauce, jugo maggie and lots of different things on pizza, we don´t use real mozzarella because it´s so hard to get... AND STILL CALL IT PIZZA! , you know what i mean?....

      I'm here in California and I've NEVER seen a flour tortilla enchilada, not even in grease spoon franchise restaurants like Denny's, Norms, and Hometown Buffet. I wonder if the flour tortilla enchilada is more common in the Midwest or East Coast or both?

    That looks so good! my grandma who lives in Mexico makes her enchilada sauce using Ancho and Guajillo chilies. She roast them a little on a griddle then boils them till there soft. Adds some garlic, chicken broth and seasons, mixes it all in a blender and strains it well. It is the best!!!:)

    This is a pretty good version. My grandma usually shallow fries the tortillas in vegetable oil for a few seconds to get them slightly crispy and then she dips them in the sauce, fills them, and bakes. They usually don't come out as soggy. It's an extra step (and extra calories!) but so so good. :)

    I've made this recipe a few times but I've found that adding roughly chopped peppers and red onions to your filling is amazing. I also add fajita seasoning to my filling and instead of adding the enchilada sauce to the tortilla wraps I add a thin layer of light mayo. So good! My favourite dish ever!

    Since I'm mexican, I'll share with you all non Mexicans the more traditional recipie for green enchiladas which are my personal favorite.
    You boil about 8-10 medium sized tomatillos which are a green version of a tomato. Within the same pot in which you are boiling the tomatillos, you put in a jalapeño or two or a few serranos or both depending on how spicy you like them. Some times they can turn out not being spicy so it can be a hit or miss, to the boiling water you will add just one regular tomato.
    Once they become tender, you will get a blender, put in the tomatillos, tomato, chiles and about a cup or half a cup of water. To that you will add one consommé cube, oregano and salt to taste and chop one medium sized onion either white or yellow onion and one to two cloves of garlic. Blend it all so it can come out as smooth as a consistency as possible, do not sift it.
    When it's completely blended, you put it in a pan with large sides and crank the heat up and make it come to a boil.
    When it's close to getting up to a boil you get CORN tortillas and you ehat them up a bit to get them softened, you get a separate pan with oil and you fry the tortilla for a couple seconds on each side, don't over do it or it'll burn to a crisp or it will literally become a tortilla chip. Then when you take it out of the oil, Immediately dip it into the already boiled sauce. Don't over dip it or it'll get too sauggy and break.
    Then when it's in sauce, put it in a plate, get the shredded chicken and put it in and roll it up. Once you get the desired amount per person, you top it with extra sauce if you'd like, cream, queso fresco, lettuce and chopped onion.
    You can't do a lot at once because they will get too sauggy make them accordingly to how many each person will eat.
    I know this is really high in calories and cholesterol, don't give me the talk, I'm a med school student, I know what's in it. But once in a blue moon is fine.

    Laura, try making your own sauce, I promise it'll taste so much better. The reason why we dip our tortillas in the sauce, is because when we don't bake them, we fry the tortilla in a little bit of oil, dip in the sauce, stuff with chicken or cheese, depends on what kind of enchiladas you're making, and eat. Much faster, and equally as delicious :) They're are 3 sauces; green, red, and a brown one which is sweet and made with lots of spice.

    I make them similar to yours. I like corn tortillas best; and when they are beef enchiladas, I like to add chopped black olives to the filling. My mouth is watering!

      Jessica Ingenbrandt We offer fried eggs on top of enchiladas here in New Mexico at every restaurant, its normal :) just like green chile on a cheese burger. All Subway restaurants in NM carry green chile as an option to put it on your sandwich, so delicious. Our green chile was just harvested so every grocery store you go to they are roasting it fresh for you, we just got 60lbs roasted this past weekend, bagged them all and put into the freezer. Here in NM, if you dont have green chile in your freezer, its a sin LOL

    I'm mexican, and even if this is not the "mexican" way of making enchiladas, your addition of all the spices to the chicken sounds great! We use another type of sauce with chile, chocolate and other things. My mom then dips the corn tortilla on the sauce and fry them in a little bit of oil, it's messy but they taste amazing! We fill them with either chicken or cheese, but not that yellow "mexican" cheese, we use Chihuahua or Oaxaca cheese and top it with sour cream, onion, tomato and lettuce. :) thanks for sharing your recipe!

    I'm Mexican and since today is our Independence day celebration I'll share a simple recipe for "Enchiladas Suizas", the trick is the sauce. Put 15 green tomatoes and some green chiles in water and put them to boil, I like sauces very spicy so I put like 5-6 hot chiles in there, after they're done put them on the blender with cream cheese and season with chicken stock, blend it and you have your sauce. Now all you have to do is roll shredded chicken with corn tortillas. Put the sauce on top of the enchiladas, then add shredded gouda cheese and put them on the oven or what I do because I'm not that patient I put them on the microwave, lol. And there you go, ready to enjoy.

    Looks yummy! I rolled enchiladas for years now I just make what I call enchilada casserole and layer it like a lasagna, tastes the same and easier to serve!

      Yea, I only use chicken also. But I boil mine then season it and add chile, onion, salt/pepper... Then between the layers I use a mixture of sour creme and creme cheese and lots of Monterey Jack... Now my mouth is watering! Lol

    I made these last night! So simple and so good!! First time Ive ever used corn tortillas for enchiladas; heating them over the stove was a great idea, much easier to work with, not to mention so much better than flour. This will be going on my dinner rotation.

    So, I am Mexican and the way we make enchiladas is somehow different, The sauce we use is the one called "mole" this one is a mixture of chocolate and chiles, then we just cook our chicken and let it cool just a little bit and after that we drown our tortillas in our mole and add our chicken to the tortilla and make a roll then you pour more mole on top of them and you decorate it with chopped onions. All in all this recipe look super delicious and I will make sure to cook it in the near future great video laura!!

    I submerge the tortilla in the sauce and then I pan fry it on each side for about 20 seconds. I fill mine with mexican blend cheese and top it with queso fresco, sour cream(mixed with 2/6 milk, 1/6 may & red onion! SO GOOD!

    I made this the other day and it was a big hit. Didn’t use cornstarch; didn’t need it. I also added garlic powder and a chicken bouillon to add more flavor.

    I love how this is not authentic! Its always great to have different versions of a dish to keep enjoying every time!!! My mom taught me how to make authentic enchiladas but these look in no way less delicious! I made red cheese enchiladas yesterday but I'm going to make these today! Lol hubbys favorite dish ;)

    these look pretty great. i was raised partly on Tex-Mex style cooking.
    i noticed, you used some cornstarch to thicken that sauce that was thin. my mom use to use a tablespoon or two
    of white flour, mixed with a teaspoon of ground oregano cooking it a bit in hot oil making a sort of a roux, then pouring
    the can of red sauce into the hot mix (be careful, it will splatter a bit) then she would cook it on med-high heat until
    the roux and sauce were combined and thickened. when the sauce was just about done cooking, she would add an
    additional teaspoon of oregano, which she would grind in the palm of her hand. if you have not tried this method to
    thicken a thin enchilada sauce, try it. you might enjoy the end result.

    I make mine with corn tortilla. I put them on top of a large wet napkin and cover them with another, then heat them up in the microwave just until they are warm enough to roll without cracking. Then I roll in chicken breast and a good amount of cheese (sometimes chopped olives and/or raw chopped onions), and place them side by side in the dish. I then pour the red enchilada sauce all on top and around ( I don't smother them because I like my edges crispy), and cover with cheese. If I add olives or onions in some, I'll sprinkle some on top of those so everyone knows what's in them. The longer you cook them, the more crispy the edges of the corn tortilla gets!😋 I serve mine with Spanish rice, homemade beans, guacamole, salsa and sour cream. Oh man, looks like I know what's for dinner tomorrow! Lol

    These look delicious Laura. My family has always added chopped black olives on top of the cheese before baking. If you've never had them that way, and you're an Olive lover, I say try it. They come out so good. I'll try to share a pic with you on Facebook.

    l had leftover filling from her Chili Stuffed Peppers recipe so l applied it to this dish to make a beef enchilada casserole. lt was delicious. The texture from toasting the flour tortillas right on the stove top was perfect and l was surprised to see how well they held up after being baked in the sauce.

    im mexican and enchiladas vary from state to estate from house to house its just that kind of dish that you can costume your way and im loving this recipe i never fried the tortillas bc for me its not necessary and i dont want that extra fat so good one Laura im trying this soon :)

    I gently fry my tortillas to make them a little soft, and they also will not rip or tear. I boil chicken with onions, jalapeño, oregano, garlic and cumin. I shred, then a touch of sour cream, green sauce and cheddar cheese. I top with more green sauce, olives and cheese, everyone loves them

    I am Mexican and this looks so different from what I cook or eat lol ... was actually eating enchiladas while watching this video! I’d still like to try this because it looks delicious none the less.

    I've been dying to learn my mom's recipe for enchiladas. She makes a homemade authentic sauce which I must say it's magic. When I learn it Laura I am sending you the recipe (maybe I can do a video and send it to you so you can share it with your million subscribers?). I might give this a try too. My mom sometimes fries the tortillas to make them hard and then dips it into the sauce. Then we add our toppings, I like lettuce, sour cream and cheese. We call it queso fresco. (Keh-soh freh-skoh) but you can also add onions and tomatoes. Oh and my mom doesn't add chicken, you can in many authentic enchiladas but I just love it vegetarian.

    Soy de Mexico y I make enchiladas, i like new tips .... Good job!!! I put tomatoes onions jalapeño sour cream and lettuce on the top and I enjoy!!😉👏👌

    I don't like how the Mexicans are going crazy over how it's not authentic. I'm Mexican and sometimes I'm in te mood for this version of enchiladas. There's nothing wrong with it not being authentic. Over and over she said so. You can tell she was so careful to not offend anybody. This is why she doesn't make Mexican recipes as often -.- love Laura's cooking idc if it's not authentic, it's delicious!

    Those look amazing!!
    Can you do a video about utensils, pots, pans, baking items. You know...like the items someone should have in a kitchen. Also go over measurements/sizes of these items to know what is needed or what may be completed pointless. I'm trying to get an idea of the items you always use. Brands that are high quality are really important to me!! Any suggestions you have are great. Hope this doesn't sound too confusing :)

    We use store bought maíz (corn) tortillas, mozzarella cheese, sour cream. To make the green salsa we use like 5 tomatilloes, 8-10 jalapeños, salt, cup of water and that's how we make it at my house...you can stuff the tortilla with chicken and it's such a simple recipe but good.. :) i hate onions but my mom usually uses raw onions

    Laura its not good watching your tutorials in the morning on an empty stomach.. but i will be trying your version of the enchilada bc i love alot of cheese and its funny bc i just had enchiladas for lunch yesterday :) thumbs up to an i cant wait for your show to come on and more of your cooking tutorials.

    My family's recipe
    We use New Mexico chile and boil it with water and a garlic glove and some slat until it gets soft then we put the chile in a blender with some of the water that you put the chile to boil in with some more salt and another garlic glove and we blend really good and drain it and with the chicken we boil it with garlic onion and salt. Then we shred it and add garlic salt with parsley and peeper then we add some of the sauce to the chicken mix it up. After that we dip the tortilla and put it in a skillet with some oil and fry it till it gets a little soft the we flip it add the chicken and cheese then fold it with a spatula and serve it with some Mexican rice

    Im in college and not gonna lie i've been surprising my dorm mates with these recipes especially the donuts thanks so much for the recipes.i'm in culinary school.
    And I have one question how can you make perfect white rice with out burning it would love if you could help thanks so much keep up the good work

    i take the red enchilada sauce, heat up a little bit in a skillet and coat each tortilla before filling them w/ whatever filling i'm using. makes ALL the difference when they are soft and coated before you pour the red sauce on top. yum!!
