as an italian, i love that they ordered the revisited dishes. many italians are so stubborn about the “traditional” way and love to gatekeep about recipes. then they’ll go to restaurants that put beef in carbonara and love it. in fact, as long as you like it, you can put whatever you like on your carbonara and noone should say anything. the only thing when you do that, dont judge the italian cuisine until you try the real one.
It's one thing to make a carbonara by changing the type of meat from guanciale to bacon, from guanciale to a particular beef. Calling a pasta with cream, mushrooms and bullshit carbonara is another thing entirely. What would Americans say if Italian restaurants sold "apple pie" with bananas, strawberries and blueberries but no apples? That's what they do with carbonara, they call a dish that has nothing to do with carbonara. Carbonara has 3 ingredients, eggs, pecorino, guanciale. Someone makes carbonara with none of those. Those people exploit the name of a famous recipe to sell crap, it is a practice that is not only in terrible culinary taste, but also totally unfair towards the customers. The same of calling "Parmesan" an American cheese or the same of producing jeans with a fake Levi's logo or producing a horrible B-movie titling it "Alien 2".

Love the video, and it’s great seeing Mr.Z again. The pasta bake is cooked with the evaporation of the water in the tomato sauce. Because tomatoes have a high water content. That’s why boiling tomato sauce down is important to make a good sauce and release the herbs. I sometimes make my pasta sauce a day before because the herbs get a longer time to flavor the sauce before a reheat it. I love a good strong flavor in my pasta sauce sometimes. And sometimes just some herbs and olive oil with veggies on pasta is good enough. And note Italian cooking is seasonal which means depending on the season you’ll get different items. And every region in Italy has their own unique food and taste.
Absolutely still love Mr. Z and his enthusiasm for food. The way he educates the boys, but still able to take a joke honestly puts a smile to my face! Wishful thinking, but would still love a part 2 tour of Italy or S.Korea with Mr. Z~

In Spain we say "rebañar" when we clean the sauce with bread. I love to learn different words that refer to this wonderful thing. When the bread is good and the sauce is good, is just glorious.
Italian here and 100% agree. It's an etiquette faux pas but whatever (especially if you are eating at home), it's just too good. Leaving that delicious leftover sauce in the plate without dipping bread in it feels like a crime sometimes 🤣

Interestingly, piccata or cotoletta was brought to Austria and changed slightly, becoming schnitzel. Schnitzel was brought over to America and changed slightly, becoming country fried steak. So it's no wonder that Josh recognized the similarity.
It seems most cultures have a breaded "elephant ear" meat chop of some kind. You'll find Milanese in most of the Latin world, Germany is most famous for it in various preparations (I prefer the jaeger schnitzel), the US has country fried steak, and Japan has tonkatsu... all variations on a theme and all very good.

Olly, it’s not a biscuit, it’s a sponge finger called Savoiardi. Moistening it with espresso turns it back to a soft sponge underneath the flavours on top.
At the very beginning I laughed as many cultures have their word for "soppins" which is taking bread and cleaning your plate so you get every last bite. I remember Ollie doing so when they were eating southern food. Soppins are THE BEST! Thanks for a great video. I always like to see Mr. Z and hear what he has to give to us.

I love Jolly. Been following them and KE for a few years now. At this point they’re the only 2 YT channels I watch everytime they release new content. And so the following is said with love and good intentions: I think Ollie should drop his shtick of being a clueless person around fancy stuff. Like in this video when he wanted to dip the bread in the wine glass. I mean, it was funny the first few times, but Josh and Ollie would be more cultured now, after all the trips and meeting people and eating at michelin-starred restaurants, so that kind of gimmick just doesn’t seem real anymore. I think Josh and Ollie can still be relatable to the common people without overly doing it. I will continue watching Jolly and Korean Englishman regardless though. The veal with tuna sauce dish is called vitello tonnato, and in Argentina (which has a pretty significant italian influence in its cuisine), it has evolved into vitel tone, which is pretty much the same, except made with normal beef and it's a staple holiday dish. Olly, it’s not a biscuit, it’s a sponge finger called Savoiardi. Moistening it with espresso turns it back to a soft sponge underneath the flavours on top.
At the very beginning I laughed as many cultures have their word for "soppins" which is taking bread and cleaning your plate so you get every last bite. I remember Ollie doing so when they were eating southern food. Soppins are THE BEST! Thanks for a great video. I always like to see Mr. Z and hear what he has to give to us.

I love Jolly. Been following them and KE for a few years now. At this point they’re the only 2 YT channels I watch everytime they release new content. And so the following is said with love and good intentions: I think Ollie should drop his shtick of being a clueless person around fancy stuff. Like in this video when he wanted to dip the bread in the wine glass. I mean, it was funny the first few times, but Josh and Ollie would be more cultured now, after all the trips and meeting people and eating at michelin-starred restaurants, so that kind of gimmick just doesn’t seem real anymore. I think Josh and Ollie can still be relatable to the common people without overly doing it. I will continue watching Jolly and Korean Englishman regardless though. Sending you much love from halfway across the world!

The veal with tuna sauce dish is called vitello tonnato, and in Argentina (which has a pretty significant italian influence in its cuisine), it has evolved into vitel tone, which is pretty much the same, except made with normal beef and it's a staple holiday dish. Be it Christmas or new years, that one always sits on the table.
