Hi Guga, Last October I had a “Mashed Potato” pizza at a little restaurant near where I live in Playa Potrero, Costa Rica that might rival the “Potato Pizza” you enjoyed in Italy. It tastes like creamy potatoes and bacon! So delicious! If you ever get to (Surfside) Playa Potrero on the Pacific Coast of Costa Rica I highly recommend you try this one. It’s made at a little restaurant next to The Potrero Brewery where you can get a unique beer to go with your pizza! 10 out of 10, highly recommend! My 2 cents worth… There are many other great places to eat here too and I want to give a shout out to CanaTico Restaurant where you can get delicious wood oven pizzas but I highly recommend you try their BBQ Ribs! F’ing epic! Even by your standards! FYI they do a delicious steak too but it’s not possible to get cuts as thick as you have in the States so if you have a steak don’t blame the restaurant if it’s not a thick cut! But CanaTico does know how to make a delicious medium rare steak! One of the few places around here that does! Everywhere else you have to order rare and maybe you will get the delicious medium rare we love! PS: I definitely don’t have the palate or experience you do so you might absolutely hate the foods I love! 😂😂😂
I wish you had tried the square pan pizza in Rome. Fiori di zucca. It's pumpkin or zucchini flowers stuffed with anchovies and mozzarella. MAGIC. It would have been your favourite I'm certain.
steak in italy isnt raw or unseasoned, its different from the meat you can eat in other places of the world. traditional fiorentina is supposed to be served rare because if you go to the right place, they give you a hot iron to cook it to your liking, same thing for the seasing, your supposed to put it yourself.

@@jamescorrigan6063 there's nothing wrong with that, just like Korean barbecues where you cook the meat yourself or a hot pot. I'm not a fan of Fiorentina steak, but that's how it works, it's a tradition: it's thick and very rare, lightly seasoned (you can see there is salt on it in the video), they joke a lot about this with customers that want it more cooked but if you like it that way they bring you a hot stone where you can keep the meat warm and keep cooking it a little bit based on your preference. They also bring you salt and olive oil if you want more, since it's a very thick steak you may want more salt but some people may not like that much salt. Also, since it's so thick and usually 1kg or more, it takes a while to eat: if they cook it too much, once you are halfway there and the meat is cold, you may want to warm it up on the stone but you will keep cooking a steak that was already served medium / well, and then it will cook too much. Problem solved if they serve it that way because while you start eating, you can rest those slices on the stone and reach medium, as Guga did at some point without realizing it. Like it or not, that's how they do it in that specific place, Guga was quick to criticize without understanding the tradition behind it, and in Italy each single city has different traditions.

The best pizza I found in Miami Florida is Pizza Rustica. They offer so many choices like in Italy. Sold by the slice and warmed up. They also have one in Delray Florida as well. Guga you need to try it if you can.

Well the porchetta was quite obviously not an authentic one. As an italian in Rome I can say that tere are tons of tourist traps and most of them look authentical. Always ask the locals.
As I kept going with the video i also noticed another thing: italian cuisine is not coreographic, almost at all if not for some very specific traditions. Pizzas don't fly, pasta is made in the kitchen and cacio e pepe is served on a plate. Our food tradition is older than tik tok, so once again trust the locals, they will know better.
So yes I am a person that does not use salt to season the meat directly. I use really equal amounts of good quality smoked pepper, Garlic powder, some crushed red pepper and then some Cajun seasoning or blackening seasoning, as I like a little heat on my steak and there is a little bit of salt in both Cajun seasoning and Blackening but not much. If I do not use Cajun seasoning or blackening seasoning which is only if I am out. I still will not use salt, I have tried and recently, it is just too salty for my taste. Then again I do not add salt to anything, if I am making a recipe and it calls for a tsp of salt I put half tsp of salt in it. Now if I eat out at a fine restaurant, I know they are salting the steaks. I can not taste the salt on the steak but whenever I do it I taste it. And I do not use much. Everything else I agree with you on how to cook the steak.
Just the fact that the Italians say that breakfast is "only" croissant and coffee etc shows how pathetically limited their cuisine is. Italy is literally just bread and pasta.
