Curry Chickpeas in Coconut milk is a very easy, quick and healthy home-made recipe that is also nutritional. The chickpeas is a very good source of fiber, thus promoting healthy gut and prevents constipation. This dish is made of chickpeas cooked with vegetables such as Irish potatoes and pumpkin smothered in coconut milk with a curry flavor.
Ingredients/Measurements:
1/2 Bell peppers
1 Tomato - diced
1/2 Onion - chopped
2 stalks Spring Onions
1/2 Scotch bonnet pepper - based on heat tolerance
Fresh thyme
5 cloves Fresh garlic - crushed
2 small Irish potatoes - diced
1/4 of a Squash - diced
2 cups chickpeas
1 tbsp. butter
1 cup coconut milk
Spices:
1 tbsp. Curry powder
1 tbsp. Turmeric powder
5 cloves All spice - powdered
1 tsp. Black pepper
1 tsp. chicken season
salt - to taste
