- Here is the way I like to make Mexican barbacoa at home. I put all of my ingredients in the Crock Pot overnight and wake up to tender fall apart barbacoa. As a kid, I remember waiting in a line out the door at our neighborhood Mexican meat market for fresh corn tortillas, menudo and barbacoa. You can make barbacoa tacos dresses with your favorite salsa, fresh onion, cilantro and a squeeze of lime for the perfect breakfast taco.
INGREDIENTS
2 bls beef cheek meat (stew meat or beef tongue work too)
2 tsp salt (1 1/2 tsp if using fine table salt)
2 to 3 cloves fresh garlic
2 bay leaves
1/2 small onion
5 to 8 drops of liquid smoke (optional)
2 tbls water (optional - to combine with liquid smoke)
CROCK POT

Crock Pot
Cook overnight on LOW for 12 hours
OR cook on HIGH for 8 hours

I LOVE HOW THIS RECIPE DOESN'T CALL FOR A LAUNDRY LIST OF INGREDIENTS (NOT DISSING THE OTHERS) ! SIMPLE IS ALWAYS BETTER! THANK YOU :)'
And it taste great like this. I tried it without the smoke, the smoke is better.
Hello everyone! I just want to thank you all for your continued support and feedback. I'm sorry if I don't respond right away, but I really do appreciate you! Have a wonderful day! 😊💖
Gochujang Mamá beautiful im from the east coast new jersey big hello 👋 and thank you for this video perfect 💐💐🌹👉
Gochujang Mamá I purchased some beef called Cachates o labio. Is this beef cheek? That's what the guy gave me at the market.
Gochujang Mamá 👍🏼 no problem we still love you. This barbacoa l👀k’s Soooo Yummmmmy can’t wait to do this myself THANK’S for the recipe 🙏🏼♥️
Gochujang Mamá that looks amazing, thanks for sharing
Gochujang Mamá Hey girl what Matamoros did you go to? I live in Denver Harbor and still get up early to stand in line on Sunday mornings at the Matamoros on Lyons Ave. to buy barbacoa.
God bless you for posting this! As a gringo, I loved that when I went to college, a family next door had the whole head in the ground. I fell in love with the style of cooking from that day. So many fond memories. All the best!
So many memories flooding back. El Ranchito, in Zillah, WA. We would get 1/2 lb of barbacoa and dozen warm tortillas and eat it on the the patio. I still make this. Thank you....I love your show!
You have a very good voice for these videos - almost felt like dora taught me how to cook this . Thank you you made it easy to understand
Cilantro onion and lime juice is all it needs for me(: looks amazing
I’ve made this recipe about 3 times already and everyone loves it!!! Thank you for this super easy recipe! 😘
Thinking of trying this, did you use the liquid smoke?
Absolutely the best and most authentic recipe on the internet. Exactly what you will find at your neighborhood molino. Found this and purchased some beef cheek meat and "bam" barbacoa deluxe. 👍👌😎 (puro gringo)
You've seriously become my go-to person for authentic Mexican recipes, I love your cooking! You have a talent 🤗
My husband is always bragging and says that the Barbacoa sold here isn't authentic. Que su tio hacia barbacoa debajo de hojas toda la noche. Just to spite him, I made your recipe and OMG, the man ate the whole pot by himself!! Ay ta! Pa que se le quite. Esta chicana si sabe cocinar....con ayuda claro. Muchas gracias y feliz dias festivos.
Lol! My grandfather always told the stories of his life on the rancho in Mexico. He would talk about how they made true barbacoa...as we stood in line at the meat market to get barbacoa. 😂I'm like, times change abuelo and the neighbors here in the city don't want you cooking meat in a big hole in your yard. Thank you for the laugh! Have a good one. 😃
Finally someone that knows how to make it shows us how simple it is to make and enjoy.
I like my tacos with pick de Gallo and guacamole 😋
Lol, pa que se quite! Well now I have to do that for my hubby. We grew up in Houston and still here. I'm gonna have to cook this for him. He loves Barbacoa. No more standing in line at Matamoros! Tfs, your story made my day.
Lol I make this comment all the time. El Paso has several places that make it the old fashioned way but here in San Antonio the way to make it is different haha so I understand your husband
Doesnt mean hes wrong. Authentic barbacoa is lamb cooked in a pit.
My go too barbacoa recipe🤤. Simply mama never disappoints
I haven’t had barbacoa since I lived in San Antonio. I made this for cinco de Mayo 2019 in California. It came out great!! It took me right back to Texas, all I was missing was some ice cold big red!! Thank you for sharing this delicious recipe! I hope to make this quite often now. I also made your tomatillo salsa and it paired perfectly!!
I'm SOOOO glad you made this video. I was JUST about to search barbacoa videos and this popped up. I love your videos. thanks so much
Wow, this hits close to home because you’re describing everything about here in Texas going to the butcher shop and standing in line and ordering the barbacoa, carnitas!!! Also remember my grandpa and his stories of saying “back in my day we would do the barbacoa from scratch” stories
I can hear my uncles saying “para la dieta” hahaha
Making barbacoba for the very first time. After reviewing so many you tube recipes, I end up with your recipe. Why, you may wonder? Well for all the RUclips viewers, I up with GM recipes because they are simple and very delicious. You're a blessing GMama.
Barbacoa from Matamoros meat market by Jackson Middle School was the bomb diggity on the weekends. The good old days in the segundo....
Omg!!! I am a taco addict. I fell in love with Barbacoa the first time I had it. I didn’t know what it was, I just knew it was tender, shredded beef. Ever since then, I’ve always looked for it on menus at different taquerias. None have been as good as the first place.
Then I stumbled across this video and have been eyeing it ever since. But I didn’t pay attention to the packaging in the video and just assumed the recipe would be expensive. I finally went and bought the ingredients for like $10 at a Mexican grocery store (beef cheek is harder to find in the Detroit, MI area).
I followed your recipe (almost) exactly. I added a sprinkle of adobo and I had to add water as it was cooking because my meat didn’t produce enough liquid. But still, THIS WAS THE BEST BARBACOA EVER!!! It was just as good, if not better, than the restaurant I get it from. I just made this yesterday and I’m already thinking about making it this weekend because I didn’t get enough meat.
THANK YOU SO MUCH!!! I will be trying more recipes.
(Sorry for the long comment. I’m just so overjoyed)
Yes, it's 1:30 am, and I have barbacoa in the slow cooker set on low for 12 hours. Fellow Houstonian here too. Husband and I LOVE your videos. So simple and you explain so well. So I got this in the cooker about 12:30 am, so about noon-ish tomorrow, we'll be eating great barbacoa (fingers crossed I did it exactly as you showed). I can't wait to wake up to the house smelling wonderful.
OK....here I am, back, 12 hours later. Oh. My. God. I have no words. This is EXACTLY like the barbacoa tacos we get here in town. It is incredible. Thank you so much.
Im so happy i found this! This is exactly the type of barbacoa I was looking for to make for my family. Simple, delicous, easy. Thank you!
Finally, finally! I'm not Mexican, but I love me some Mexican food. I lived in a small town predominately Mexican and Filipinos. I too miss eating this on Sundays with my friends. I've seen so many other videos that don't use the cow head, which I grew up eating. Your recipe looks delicious. I can't wait to make this. Thank for sharing, from California.😊
This is awesome that I have finally found someone that knows what Texas Food is suppose to be like. I am in Minnesota now, born in Austin, Texas an the idea of introducing the folks as to what True Texas Taste is exciting. Thanks for the info.
Thank you and welcome to my channel. 😊
Larry Cleveland
Uhh wtf do you mean? Barbacoa is a traditional dish from Mexico not from Texas 😂
Lol you should stop appropriating our Mexican dishes with Texas, the only reason Texans eat so many Hispanic dishes, is because we introduced them to the dishes.
@@Rea1_Madrid I know I was like wtf are you talking about hahahaaha
I remember Daddy going to the carniseria on Saturday to pick up a head for Sunday breakfast. Me and my siblings loved the barbacoa and Daddy loved his cecos and eggs. And the house smelled like heaven. It felt like Christmas morning. 💖 Thanks for the memories. Another great video!
Yes! I love the smell of a good Sunday breakfast of barbacoa and menudo. 😁👍
@ My dad cooked the whole head. And Mom would cook the Lengua for dinner. Boy. Now I'm craving barbacoa. I really love your videos. 😊
Followed your recipe and it turned out awesome. Very authentic. Cheap and extremely easy to make. Thanks for sharing!
Native Houstonian here and I share the same memories; waiting in line at Gerardo's, Alamo's, or Matamoros! Great video!
Yes! I have waited in everyone of those lines.🙌😂
I just made it. It wss so delicious! My husband loved it.
Hello, fellow Texan!! I'm here, from deep South, Rio Grande Valley! Great video and I can't wait to get home cuz I also went to Heb and have some in my slow cooker waiting for me. I hope it comes out just like yours.
Hello Rio Valley! 😊💖
i love the rio grande valley best texmex in the world i drive 6 hours from Houston just for the best we dont have good texmex or good mexican here its horrible.
Sofia Delgado...hey, sending you saludos y abrazos from one Rio Grande Valley girl to another!😊
hi Sofia
Thank you so much for this recipe! You recalling your own memories brought me back to growing up in San Antonio, TX, and going to the market every Sunday with my father and sister to get our barbacoa and Big Red. I swear I could taste it, even from here in Australia where I am now. Thank you!!
Carmen’s Barbacoa in Brownsville, Texas is the only place in Texas where barbacoa is still cooked in the ground. It is the only place in the state still licensed to cook it in the ground. Absolutely delicious!
I just made this and holy smokes! Big hit in my house! I'm so glad I found your channel! Can't wait to try the rest of your recipes!
love love your video!!!!!! i also remember the good old days whem my dad would make us barbacoa every sunday with fresh flour tortillas and fresh salsa in a molcajete. 😀😆
Noelia Morales That sounds so good! 👍
Out of many recipes I have watched this is the best one. No crazy amounts of spices or excessive use of a whole head of garlic. Will be going out to buy my crockpot and beef cheeks today! My husband is going to salivate when it's ready.
Now this is my kind of barbacoa..you know GM this is exactly the barbacoa we grew up eating and still eat to this day and I'm 59..and just like you said, on Sunday waiting in line to buy a pound or two of barbacoa with fresh corn tortillas and hurrying back home to enjoy a beautiful breakfast with family mmm..I live in South Texas and this is our preferred barbacoa de cachete de res..this is why I just love your channel GM because we have a lot in common..sometimes your videos make me emotional because your childhood stories are similar to mine and they are near and dear to my heart..and still I go on sundays to buy barbacoa and enjoy it with my grown children and my grandchildren..I'm a young grandma, wink wink..love you girl ..God Bless..❤️🌈🙏🏼
Thanks for the recipe and especially the memories of your youth! Can't wait to try this!!!
Best barbacoa tacos I've ever had were in freakin Rome lol. My wife and I found this little spot that made tacos and the owner actually grew up in Jalisco where my wife grew up. Best tacos I ever had
That's a trip, in Rome, rented a house below Guadalajara for 6 months, loved Jalisco I was near Ajijic & had a avocado tree in the courtyard. Great are, loved the people & the food, omg! Jamual sounds like Rome was fun as well.
We went there too!! The owner was from Guadalajara???
Rome, Italy?!
@@Tomes23 That's what I'm wondering too!
Just put this into my crockpot - I'm doing 8 hours, as well. The smell is already incredible! Love your channel - thanks for another great recipe!!
This is exactly what I was looking for. Best Barbacoa recipe I have found on the net. Everyone else was using tons of water and that wasn't what I was after. Thank you so much for this video I will be making these in the morning for dinner tomorrow night. Thank you
Oh yea! Barbacoa every Sunday morning from the panaderia, also, fresh flour and corn tortillas, pan frances, menudo and pan dulce
I’ve never made this. I always thought it would be too complicated. When we’d visit family in Mexico, my dad would do this up by burying it in the ground. I can hardly wait to do this! Thank you so much 😊👍
This is a most informative and helpful video. I plan to make this recipe this weekend. I appreciate the nostalgia and great memories you invoke about how my familia used to enjoy barbacoa with fresh corn tortillas and salsa on Sunday mornings at guelita's house. My father would buy this delicacy from the local tortilleria and welcome the entire neighborhood while we watched the Domingo Pena show on TV.
I am so grateful that I have a Mexican meat market near me. Tacos de Barbacoa are my fave! I made this and it was awesome. The smell of that amazing barbacoa kept waking me up throughout the night and I couldn't wait to shred and taste it in the morning! This guera thanks you from the bottom of my heart!
Barbacoa every Sunday with some big red lol! watching this video made my mouth water. keep the videos coming. San Antonio here :)
vordven rio's on south side San Antonio gotta love it
Wow! Brings back memories picking up Barbacoa from carnicerias near Kelly AFB in South San Antonio in the 80s when I was stationed there. Sunday mornings and Barbacoa ahhh! Thanks for this video.
Lol when you said Big Red I knew you were SanAntonio
We love the barbacoa and tamales from Tellez on Gen. McMullen. Yumm😋
ahhh Sunday morning tradition - barbacoa and big red - miss it
This is my go to recipe! It takes me back when I grew up in Brownsville, TX. Thanks so much for this video!! ❤️
Same here; I grew up in Brownsville and occasionally had barbacoa, fresh corn tortillas, from the tortilleria, and fresh salsa. There was a lot of us, so this was a treat.
I've made this recipe twice and we absolutely love it. It tastes so much better than store bought. I don't think I'll ever stand in line for it again....that's how much we loved this recipe. I just wanted to say "THANK YOU".
😋😋😋😋😋😋😋😋
I really enjoyed this video! When I was a boy (that was a very long time ago, 1950's and 1960's), an old man would drive through my neighborhood in San Antonio selling Barbacoa from the back of his old car (1940's Mercury). Good Memories!
You are just like me. I was so excited when I found the store that had the “cheeks” on the meat section. I could hardly wait to cook it!’ Thank you for sharing.
WOW girl ! That looks delicious and easy to prepare . Gonna try it this weekend , thanks !
Don’t be fooled by the thousands of Barbacoa recipes on the internet. This is the one and only true recipe. It’s authentic and delicious. If you read a recipe and it says to use chuck meat or is a Chipotle copy cat, leave a nasty comment and move on jk ;) Seriously though, this is the best barbacoa you’ll eat. It is exactly what you’d find at a tacoteria in Texas. Thanks for sharing the knowledge. Beef cheek meat for the win!!!!
Cooked up this exact recipe...and was not disappointed! Sunday breakfast once a month from now on. Thank you for delivering a simple and informative recipe. Most people use a different type of meat such as chuck roast but it doesn't duplicate the true texture of cheek meat.
Houston Texas yes! Born & raised so happy I found you! Looks so delicious
Txsunflowerss Thank you! 😊💖
H-town rep
Txsunflowerss inremeber thise days I used to pass by there all the time thx
Houston too, but in E. Tx right now, I use to go by Taco Cabana at Shepherd & 610 & get breakfast tacos, eggs with Barbacoa, guess that's why was sleepy during the mornings. lol Need to get back & see all the changes made in Houston, especially the Heights where I & my Moms Family are from.
Taqueria Laredo Washington Ave!
Love the Houston shout out. Born and raised here. I purchase Barbaqua almost every week for years at Celaya Meat Market on1960 and Jones Rd. Never dreamed I can make it in a crock pot. I've done the whole head before in the oven. Your method is a lot easier and less work. Will suprise the family at breakfast next week. H.E.B have 4 pounds ready for me here I come LOL
Nice! I hope you guys like it. Just remember to take it out whole then shred as you eat it. It keeps the meat moist. Btw I have a lot of criticism in the comment section about how this is not barbacoa. I get it. Honestly this is barbacoa as I know it, so I appreciate seeing comments that can relate to this style. Thank you! 😊
My husband found this u tube and said plz make this." I know it will really be good. I had never had barbacoa before. He grew up with it. I did it just like you said, and man, it is really good. Thank you so much for sharing this jewel. I'm going to start looking through your recipes. You've got some good ones. God bless you and your family. Angela
Oh goodness. I’m craving this so bad! Matamoros was where we used to hit when we still lived in Houston. After we moved to Alvin we would get homemade barbacoa. We lived on a farm in Alvin, mostly chickens but an occasional pig and larger animals for cooking. I’m 52, but the memories are like yesterday.
I so love your English! In so many ways 💜I am definitely making this delicious barbacoa this weekend.
Gracias por compartir
There was no love button so I had to hit like! Super hungry now, can't wait to try making this!
I’m originally from Brownsville. I live in DC now and I saw beef cheeks at Sam’s club here last month. I bought them and made them and was immediately transported to Sunday mornings in the Rio Grande Valley. Good stuff. One of my favorite things to make now.
Since I got this recepie i have made it over and over. My son loves it and it takes me back to Texas. Thank you. 🙌 blessings
Omg. My husband sent me this video and I just so happened to be at the grocery store. I immediately grabbed all the ingredients for it and and I am going to make it this weekend. Hopefully it comes out as delicious as yours looks
You ever make it and how was it?
H-town classics, looks so delicious
Heck yes!! My cuñada introduced me to beef cheek barbacoa and I never looked back.
Girl! You have every recipes I need or looking for!! Thank you for posting and sharing them with us! 💕💕
Thank you so much for sharing Guchujang Mama. I just wanted to let you know for any of you that would like to try cooking this a faster way, you can cook this in an instapot on manual for 36 minutes, just wait 10 minutes for the pressure to naturally release. I tried it with 2 cups off beef broth, & it turned out PERFECT! Less than an hour! I made mexican rice on thd stove top while I waited for it to cook.
Thanks! I was wondering about making it in the IP. Gonna give it a try
WOW, I'M SO HAPPY RIGHT NOW, BC I FINALLY KNOW HOW THEY WOULD MAKE THIS. THANK YOU FOR SHOWING US N I'M GOING TO TRY IT. I HAVE NEVER REALLY LOOKED FOR THAT KIND OF MEAT, BUT I WILL NOW N THANKS AGAIN FROM PASADENA, TEXAS
You are so welcome! Hello Pasadena, Texas!
Linda Ramos homemade tortillas
I'm making this right now just the way you did. Im from CA but lived in San Antonio for many years and fell in love with Texas food. Thanks for posting this, now I can make it myself in CA 😘😎
Barbacoa everyday for breakfast is the best way to start the day. A street taco truck parks in my favorite grocery store AND every time I'm in town i get all the barbacoa meat she has for breakfast for my daily taco fix. She also makes this green sauce that is out of this world and is sounds just like yours. Now I just have to find beef cheeks in this part of Texas to make it myself. I have seen another one of your videos that you used chunks of beef to make barbacoa I might have to resort to that choice myself. Thanks for sharing your knowledge of the best food recipes online.
OMG brings back childhood memories !!!
I Love Barbacola
I think I have spent 2 hours looking at all your recipes!!! Makes me excited to try some. I have not cooked authentic food from my childhood in over 10 years!!! Thanks for making a channel!!!
Great video! Growing up in Chicago in the 60's my father on Sunday mornings would drive down to Maxwell Street to bring home 3-4 lbs. of fresh Barbacoa for the whole family to feast on! I remember how great it tasted in tacos. Can't wait to try your recipe! Thank You!!
😭😭😭😭
I said I was done watching your video for today but I lied
Lol
I'm still here making my self more hungry !!!!
😁😁😁
Aww...thanks a bunch Bibi! 😊💖
add cilantro and black pepper ,use the juices from the crock pot for pinto beans.
Jesse Bentley Nice! Good call. 👍😁
Mmm can you make that video 😂
Jesse Bentley you added cilantro and black pepper to the crockpot as well with the other seasonings?
Thanks you
I’ve never cooked barbacoa before but I had torchy’s barbacoa tacos and I needed to make it myself. This was such a great and easy recipe than even I was able to make it and all my friends loved it. 🥰 Now I’m always making it for potluck and special occasions! ♥️ Happy New Year!
My mom used to work at the Matamoros Meat Market on Irvington back in the day, that's where she met my dad and I always drive by Gerardo's on my way to work but just didn't know if they still sold barbacoa. Will need to stop by! Thank you for this recipe, am trying this tonight with two beef cheeks I just got from HEB.
How did it turn out?
One of my favorite foods
The most authentic style I've found yet. Beautiful! And bravo...not finding the tomatillo salsa recipe tho. This will make it complete for me. 😀 I want to put this in a burrito with pintos rice guacamole and cilantro...😳
THANK YOU SO MUCH FOR THIS VIDEO!!!!!! Going to make it tomorrow. I love this en un bolillo con salsita, limon, sal, bastante cebollita y cilantro!! LORDDD!!!! Brings back memories of my childhood in Chihuahua, MX!!
I remember as a child sitting quietly and patiently waiting for church service to end so we could visit our local bakery for some fresh hot corn tortillas, some pan dulce and yes some BARBACOA with salsa... thanks for sharing!!!
asi lo. hacemos en mi Rancho en zacatecas wow que Rico 😘se me antojo eso are hoy. gracias por enseñar nuestra comida mex

She is the real deal I get home sick watching her videos I live in alabama but from the great state of Texas. San Antonio. ...
I made this for my family last night and everyone loved it!! Thank you
La Montana in Pasadena Texas is hands down the best I have tried.
Buddy at the plant brought some to work for us in texas city....it was awesome!
That looks so very yummy.
I made this yesterday and it came out AMAZING!! Thank you for a simple recipe. I even had to special order beef cheek from a local meat market... this is something i will be making a lot!! I live in a small city so (good) Mexican restaurants are far and few.
Thank you for sharing all these recipes. They are great
Believe me I will be giving this recipe a try!! The meat is so tender and it's not dry. That's food!!
😉💖
you are the real deal.
Finding your channel is like falling down the rabbit hole. I’m completely addicted to it and all the childhood recipes I grew up with in San Antonio. Thank you for helping me share this with my husband and son! I, unfortunately, did not get to serve them all these yummy dishes before I lost my mother and grandmother. But I know my ladies are smiling upon us as we toast tacos in their honor and memory!
How wonderful! I always wonder how people come across my channel. Glad you found your way here and what a wonderful way to remember loved ones. I lost my Dad 3 years ago and one if the recipe videos I have for an easy Mexican rice was the way he made it. It's not authentic by any means and you'd be surprised by how many hateful comments I get because I am not Mexican enough, my Spanglish is bad or the way I cook is not authentic, but comments like yours make it worth while. My cooking might not be authentic to some, but it was delicious food I grew up cooking that reminds me of my relatives. Thank you and thank you for trying out my recipes. I truly apprecate it. 😊💖
I fell down the rabbit hole yet again.
I live in Tennessee but was born and raised in San Antonio. I literally just got back to Tennessee today after being in SAT for my Godfather’s 100th birthday celebration.
Of course this Texas girl had to shop at all the HEB’s she passed! I bought beef cheeks and lengua to bring home. So I now need to rewatch this to make barbacoa.
I always enjoy watching your videos. I made this for my husband before and we loved them. Thank you for all of your hard work!
Looks yummy.
I saw the store was HEB and I then knew your were in Texas! I am in Houston.
Hello my fellow Houstonian! 😀👍
Htown for the win
EddiesAlterEgo SOHO is where the best meat markets are!
Hola! I live in Houston, TX as well!
I agree. I'm technically in Pasadena but on the line with Houston & Clear Lake. I'm surrounded by great meat markets.
I made these tacos today with the salsa verde! Turned out so delicious, I had a happy family!! So glad I came across your videos!!
You and I must have the same abuelito. Barbacoa is my favorite meat. I too have loved it since I was little and had it on weekends as well. I have never been able to know how it has been prepared. There are only a handful of restaurants throughout Texas that know how to prepare it.Thank you, thank you, thank you for the video. I am going to go and prepare it your way to see how it comes out. I love Barbacoa. And I never figured it would be this easy to make.
If you were my neighbor I would be bugging you all the time to feed me! Definitely shopping for some beef cheeks now. Thanks!
Lol! Thank you! 😊
Me too... lol
every mexican american in Texas i know only use a cows head wrap in foil or oven bags put in oven at 250 for 6 hours been making it for over 50 years now 68 if you like use onion, cilantro, dice tomato or use chunky salsa from walmart after cooking it use flour or corn tortillas. Barbacoa is mostly a breakfast taco dish.
gochujang~~~ I'm from South Korea. How familiar word it is!! haha
I love your crock pot! Thanks for sharing your video.
Hello from Galveston! Love watching you cook and all of your recipes, reminds me of my grandmother and all of the great meals she used to make for us.
looks delicious i recommend after shredding put in back in a bowl with the juice that way extra flavor doesnt go 2 waste
#L0v3Bu& Pr0dUcT0f94 cheek meat lets out a lot of fat so all of that "juice" is grease
Awesome informational educational video experience Y'alls
I have watched this video again and again. One can find a variation of this technique in every indigenous culture: Indonesia, northeast of Brazil, the Pampas of South America, Mexico, Hawai and so on. Bury your food on a rock lined hole, a layer of hardwood coals, cover it with banana leaves and aromatic leaves, build a fire over it and let it slow cook the whole day. Of course in Mexico the indigenous people have developed it to a science. You have found a very interesting way to do it at home on the crock pot, which, when we think about it, it is physically “the whole on the ground”.
When I smoke brisket, pork shoulder, etc, I save the liquid on the drip pan, remove the fat and concentrate the wood flavorings present. I freeze that and use to flavor dishes on the crockpot. I am going to look for cheek meat on the local Latino áreas tomorrow. Well done. Thanks for sharing such interesting recipes.
I made this the last two Sunday's and I wish that I made it today too. This is one of my all time favorite recipes. Thank you so much!
