  • Nothing beats tender golden brown Carnitas right from the large disco. For those not familiar with Carnitas, it is pork braised in lard until tender and golden brown. Here is the way I like to make carnitas on my stove top. Cook time may vary depending on the texture you want to achieve. I do suggest not to cook until it falls apart in the pot. Carnitas should still keep its shape, but be fork tender.
    INGREDIENTS
    3 1/2 to 4 lbs Pork Shoulder
    1 lb lard
    2 tsp salt (or to your taste)
    1 medium to large orange
    1/3 cup juice of orange
    4 cloves garlic
    1 large bay leaf
    8 oz Coca Cola (room temperature)
    1/3 cup evaporated milk
    **One Large Thick Bottomed Pot
    TIPS
    -Do not use a high heat (medium heat over long period of time works best)
    -Be sure to watch your heat (in the video I walked away and the heat got a little too hot)
    -Cook time may vary depending on how tender or crispy you prefer your Carnitas.

    Made this recipe with a minor modification. The peel of the orange - white part has a bitterness to it so i zested the oranges and put that in the pot. This was a wonderful recipe.

    I would have been horrified at that much lard but my daughter made some beef chunks cooked slowly in a pound of butter with onions, a bit of vinegar and banana peppers and it was so flavorfull and rich that i am very curious to try the carnitas

      I lost my mom about a year ago too. And my dad followed months after her. So I'm feeling you 😭. And here I am watching videos on some recipes. Ones I never got a chance to get from her. It's not like I can call and ask her. No abuelitas either.

      Eating cholesterol does not raise your cholesterol. Cholesterol is essential to our bodies. This is why our body makes new cholesterol when we don't consume it.

      This is not going to raise your cholesterol. It is all natural so your body knows what to do with this food. It is not going to be low calorie, but even that won't be too bad if your lard is hot enough. Stop worrying about your cholesterol.

      Wow, I see I was not the only who had to take a nap 1 hour after eating this recipe because I was so sleepy felt really relaxing though, I wonder which ingredient caused this? Thinking maybe the evaporated milk...who knows was good either way ...

    Tyvm I never knew about them crazy ingredients. I sure love Carnitas though. I used to get them at the corner food truck all the time. Since I moved I couldn't find any decent place to get them. Now thanks to you I'm back in business lol.

    Make sure to use Mexican coke with sugar not corn syrup

      Sugar actually is just as bad as corn syrup; research shows that sugar and corn syrup are almost identical. Sugar is bad for heart and brain health. When we consume sugar it gives us a rush and it's addicting. Sugar is the leading cause of Alzheimer's. Sugar causes a vicious cycle. We tend to forget (Alzheimer's kicking in) that sugar is bad leading us to eat more sugar (addiction).

      Well that's pretty hard to do as we live in the US as as far as I know Mexican formula coke is not available here in SoCal, even in the Mexican Markets

      @@judylaverty613 I can get Mexicoke at Walgreen's way up here in Wisconsin. Just look for slightly smaller glass bottles that say, "Hecho en Mexico," on them. That's the good stuff.

    OMG! I have had Carnitas made in this fashion before and they are so good! I have always wanted to make them like this but I had too many questions to attempt it, where do you get the Lard? is it the kind in the baking isle that reads Lard on a green and white package? Also what temp is it cooking at? Lard can easily reach 400 degrees before smoking, you certainly aren't cooking at that temp are you? What temp are you adding the liquids at? I would think it would have to be low or else it would explode back at you, for example putting a wet French fry in 350 degree oil can be pretty exciting. Any ball park temps would be greatly appreciated. Thanks for sharing.

      If I had to guess it would around 350°F at the hottest point of cooking. By the time I added liquids the temp was not at a deep fry so maybe somewhere around 325°F. Honestly these temps are just guesses. I usually keep the stove knob at a medium heat to braise it in the lard. 😊

    At the end after adding all the herbs, spices and liquids you don’t say whether the meat should be cooked covered or uncovered for the last 30 minutes. Although I noticed your picture shows it uncovered.

      Monkey Boy pork meat is not high in fat. Yes, pigs have fat, but lard is something you have make from the fat (this process is called rendering). It is well known that lard is high in cholesterol, but it is a myth that it increases the risk of heart attack. Lard is actually heart healthy. On the other hand go easy on the bad carbs (refined sugars, etc.). Those increase sugar in the blood stream and well that's a whole different mess.

      Diana actually it's not a myth that lard will increase risk of a heart attack b/c of the high cholesterol. Cholesterol builds up walls In Your arteries, then your arteries becomes blocked and it's hard for blood to get into your heart or it just gets blocked from getting into your heart completely and you'll have a heart attack

      Yugioh On a Budget 346, actually it is a myth and it has been debunk.There are 2 types of cholesterol LDL (bad cholesterol) and HDL (good cholesterol). Lard is monounsaturated which lowers LDL(bad cholesterol).

    I went to a Canadian Franchise named Guac and had the Carnitas tacos. Am I wrong to have expected Mexican seasoning in the meat? Ie. Cumin, chili powder, etc? The meat was favored like Southern pulled pork, in a smoky BBQ sauce. In a Mexican restaurant! In this video's recipe, I guess the salsa acts as the Mexican flavoring. Can someone tell me what Carnitas are traditionally seasoned with? I assume it's not like this recipe.

    I use the biggest pot I have and Lard. I do mine the most simple way possible, I use only Salt, Garlic and a touch of Cumin. Nothing sweet. I add the garlic and cumin at the end so it doesn't burn. I've looked at a few recipes online and just don't see Cumin, but some place on East Los I got Carnitas Tacos had a noticeable Cumin taste and cooking it in was the only way I could replicate the color, taste and texture I was looking for.

    Y’all can cook a butt roast with these spices in a slow cooker. Cokes out very much the same without the lard fat content. Add 1tbspn of molasses if no cocoa cola. But you need the orange and the evap milk.

    Nice. You should try cooking your salsa ingredients in a hot pan with oil for a batch. You’ll get a more complex flavor due to the caramelization.

      I've heard the same thing, that Mexican Coke Cola should be used; and not to use the American version. I add a few tablespoon of raw cane sugar and a can if beer instead. I don't know if it's a good replacement or not, but this is what I use as a replacement.

    Cholesterol or lard isn't a problem. The problem is, if you're using commerical store-bought lard, it's hydrogenated, which makes it a super-duper health risk.

    When I was growing up Mom always used lard to fry things in. She made the best fried chicken using lard. all pie crusts were with lard. on and on. This is a recipe that I will surely try.

    I made this on an electric stove and just overcompensated on the heat and fried them a little sooner than I wanted. They’re currently halfway through their simmering, hopefully they come out softer

    great job with this recipe!!! the only thing i find wrong with this even tho this looks amazing is the evaporated milk..traditionally its condensed milk and i have tried both.. for some weird reason evaporated milk curdled up on me and i used it because of so much sugar..when i use condensed milk it comes out perfect for me. I think overall this carnitas recipe is hands down Great! thanks for showing us and i cant wait for more future recipes. Buen Provecho!

    I wonder if you could cut your cooking time in half if you use 2 or 3 lbs of lard to submerge the meat entirely?

      I went to a local taqueria to get Mexican coke. Why? Because they use real sugar, not artificial sweeteners. It makes all the difference.
