  • Spaghetti with Quick Garlic and Tomato Sauce. A generous amount of garlic and parsley lend a bright and summery flavor to this dish, but since it’s made with pantry ingredients, we can enjoy it year-round. In summer, substitute fresh basil for the parsley. Video from season 2 of Lidia's Italy (2008).

    Being raised by my great grandmother we ate most meals from veggies in her garden and she always made this exact dish for me, it was always our favorite now when I make it for myself each bite takes me back to being a little boy helping her in the garden. ❤️

    I seem to remember a version of Lidia's red sauce with a base of sauteed onions, garlic and pepperoncino -- still using the crushed whole tomatoes and basil. But I can't find that video online -- perhaps I just imagined it. Anyone else know about this?

    This shows you why ... The flag of Italy, often referred to in Italian as il Tricolore; is a tricolour featuring three equally-sized vertical pales of green, white and red, with the green at the hoist side. Its current form has been in use since 18 June 1946 and was formally adopted on 1 January 1948. en.wikipedia.org/wiki/Flag_of_Italy

    Should the spaghetti be under boiling water the entire time it cooks? When I tried this, like in the video, the longer it cooks the less and less water is in the pan, eventually half the noodles aren't in water anymore and are probably cooking via steam and internal heat. It turned out fine but there was almost no starchy water to use in the sauce. Would it be better to use a deeper pan (like a saute pan) so that you can have the noodles under water the whole time (while still using a fraction of the water in a typical pasta making pot)?

      Those tomatoes are straight out of the can, and she has crushed them, do that with either your hands or a wooden spoon or something. You can find whole canned plum tomatoes anywhere, but if possible, the San Marzano tomatoes are the best.

    • @juliadove5528
      @juliadove5528 4 года назад

      Robina Baloch you definitely over cooked your garlic.... when garlic is almost burnt it becomes bitter. Make sure the pan is not too hot when adding the oil so that the garlic can marinate the oil by start on low flame and the gradually building up from there.

    • @johndelzoppo1366
      @johndelzoppo1366 5 лет назад +2

      Here's a suggestion: cut your garlic in large pieces, or leave them whole just crushing them lightly. This way they will be large enough for you to see. After you add the tomatoes and let the sauce cook, and right before you put the pasta in, go in with a pair of tongs or a spoon or something and remove the garlic cloves. The flavor will still be there, but you won't have to worry about biting into a piece of garlic.
