    After the recipe for saffron risotto, a Milan's classic, we went back to the Cracco restaurant to discover a dish of pasta that is nothing short of national, perhaps the very symbol of Italianness at the table. Here is the version of chef Carlo Cracco's spaghetti with tomato sauce, a quick recipe, with few ingredients, played on the textures and quality of extraordinary Italian raw materials.

    My dear friend Maria, was like family to me, she was Italian and she made me the best ever spaghetti and sauce or gravy as she called it. Shes gone now and Ive not had any fantastic spaghetti in a year. Being English we cant make it as delicious as Maria did. I keep trying.       @@ultrademigod because they used to think it was poisonous since it belongs to the deadly nightshade family. poor started eating them as a last resort, realized they were amazing and didn't kill them after all. And for some brief moment the poor had something better than the rich, who were still too scared to eat them!

      @@mat5473 There was some truth in it though, just not for the reason they thought.
      The acidic flesh of the tomatoes was corroding richer peoples fancy pewter plates, that released the lead, which although not enough to kill them did make some of them sick.

    Ho fatto questa ricetta ieri, non ho bruciato i pomodorini ma gli ho tolto dal fuoco proprio prima di bruciarsi, ma si erano quasi sciolti.
    Davvero una intensitá di sapore unica, specialmente unita alla passata ridotta con basilico e aglio.
    Impiattando gli ho aggiunto un buon filo d'olio ed é stato come dice Cracco, l'apoteosi.
    Chapeau chef.

      Vediamo se i pomodorini stanno bruciando bene. Una controllata se la pasta scuoce da più di 2 minuti e vediamo se l'olio ha passato il punto di fumo e l'aglio è diventato nero.

      imagine diners foing at his restaurant for an underpriced dish of pasta, yes. he'd go broke. you cant expect the food cost to be just your shopping list prices, it's arguably one of the heaviest taxed locations in italy.

      Gli spaghetti li compra perche non è pasta all'uovo fatta in casa, ad esempio quella delle lasagne o tagliatelle, ma dev'essere pasta secca di farina e acqua perché l'uovo appesentirebbe troppo il piatto come nel caso della carbonara

    The amazing thing about italian cuisine is the simplicity...all that flavor from 7 or 8 really simple ingredients...

      The time you cook these ingredients is the key factor. It seems impossible how change dramatically the flavour if you cook differently just only one (e.g. garlic). For aglio e olio I like to cut small slices and turn it yellow. For spaghetti al pomodoro (or for fish) just rotate the pot and "boil/fry" in the oil the garlic nut (with 3 incisions on top) over the fire and remove.

      Nothing amazing about it. Of course it's simple, the ingredients are the best you can get in the world. Tomatoes grown in volcanic ground and are full of minerals and flavor. You don't need to complicate anything when you have that. Amazing is making something delicious out of poor ingredients.

      Man you can do it as well as that with even less. A piece of garlic with oil at low fire until it pops (kinds), and the you simply put the "passata" or "polpa" tomato, add salt and sugar (very important sugar cause it reduces the acid) and pepper and let it all cook for about 20 minutes low fire, but that's up to you

      Sei ancora al ruolo della maschera. Quando ci accorgiamo che dietro la maschera c'è una persona capiremo lo sforzo di ciascuno nel proprio lavoro. I meme di masterchef hanno rotto.     This is a game changer. The ideas of reduction the sauce to half, and twice as much sauce as the pasta makes gives the perfect flavour balance. Never before in could achieve it. Thank you so much chef!

    A top notch Italian chef is showing you an easy way to make really good pasta the way he likes it. Obviously he can make it all from scratch but he wants to show the Average person how to make something quick simple and delicious.

      No, he just wanted to make it different and that's not the way it should be done. Too much tomato sauce with no flavour since he didn't cook garlic properly. No sauce, but peeled fresh tomatoes or pelati instead. He likes playing the role of famous chef and managed to prepare a horrible dish whereas it's so simple and delicious.

    Like good poetry - simple, elegant, with precision. A child could make this. Loved him dumping the sauce in that hot plan and seeing it splatter. Just like a top restaurant - that's got to roll out in 15 minutes. No different than a diner that way.

      That's just how we make food in Italy, simple easy dishes that everyone can make quickly and without 800 contrasting tastes like people eat in the US for instance (god forgive them for inventing that awful Alfredo sauce and thinking it's an Italian sauce)

    I love cooking. There is nothing I like better than going home and cooking my family a nice meal. Anything with pasta! Pasta with butter! I have a good repertoire, and I can do quite a few different dishes. Sometimes they work out and sometimes not. Love from Korea🇰🇷💕
