this is the best tomato sauce on the planet. i’ve been making it this way ever since the video came out. i must confess i do take 2 small cloves of garlic and make it into a paste with some sicilian sea salt adding it to soffritto after it has cooked for 15-20 minutes. always use the san marzano tomatoes i process them in a food mill, perfect consistency every time. blending the vegetables with the extra virgin olive oil for the soffritto is brilliant. there are other tomato sauces out there that are very good, this one is simply the best. well done Vincenzo. greetings from Long Island. - Tim

@@samcohen1625 I made it with garlic, and added a light amount of other herbs (oregano, but more of a mix), mostly just adding basil at the end. It was very good, though I prefer a sauce with a bone/meat in it and to cook longer. I'll be doing the blending step w/celery+carrots+onion+olive oil from now on, for sure.

The sauce in a bowl so you can dip the bread in and hopefully have some homemade meatballs. You don’t need speghetti!! That’s a meal itself!! My kids always fought over who got to dip the first piece of bread to test the sauce to see if it was ready for a bowl! I’m making a pot of homemade speghetti sauce today and my youngest daughter is waiting impatiently with my grandson for grandpa to bring them some because they are sick. So naturally grandma is cooking for them. I haven’t made my homemade speghetti sauce in about 4 years since I had a stroke so the whole family is waiting for it. I’m making meatballs and sweet Italian sausage to go with it and sent my husband for some fresh bread! We live close to Philly, but he won’t go over the bridge to get real fresh Italian bread. But we’ll suffice with what he finds locally in south Jersey! It’s been simmering for a few hours and has a few more to go to be perfect!!!
My son has made this a few times now and it's brilliant. Very much like the sauce my Italian born mother and grandmother made. We are 100% Italian on both sides (and my husband was born in Italy! )and my mother called it gravy! Please don't get mad! Love your cooking style!

I made this today, sort of..I used a whole onion, 3 cans of chopped toms, amount 60 ml of oil in total and also added garlic and oregano.. so I did stray from the recipe a little but wow what a beautiful thick delicious sauce. I’m so satisfied that I made it myself and its not full of sugar and preservatives, I’ll definitely be making it again and trying more of your recipes! I served mine on home made tagliatelle with a bit of pecorino / it was so good !

Half my freezer full of this sauce, all fresh from our garden. I cook it for about 6 hours lid off or till its reduced to a nice thick sauce . We stopped bottling the sauce, now we just put them in takeaway containers then in the freezer. Thanks for sharing people who try your recipe will love it.

My husband makes a Sofrito that is Puerto Rican. We use it as a seasoning base to many of our meals. We make it in batches and freeze it in mason jars.
I've been trying to make a great pasta sauce for many years, having flirted with buying San Marzanos in the past, experimenting with all sorts of things, and nothing's got it as good as this. The mixture of the pureed, gently cooked soffrito, pre-blended good tomatoes (I bought some 2.5kg San Marzano tins) and gentle hour with the lid on seem to be the big secrets. A truly lovely sauce, thank you so much!

I have made my own sauce for over 50 years because moving to the south, what they consider pasta sauce tastes like it comes out of a franco american spaghetti can. I love the idea of the Sofrito. I always use fresh sweet cherry tomatoes 🍅 I blend them and strain the skins and the seeds, so so delicious 😋 thank you for the tip.
I've been blending the soffritto for years and it really does make a huge difference. With enough olive oil it acts as an emulsifier and it also acts somewhat like a blond to light brown roux where the flavors develop and then helps thicken the sauce. It's a no brainer also from a production standpoint. It's much easier to blend than to do a small dice by hand.
Hi! We call it TUCO! I learned from my Nonna Pepina (who was from Capo D'Orlando) . My father continued the tradition to cook Tuco with many tomatoes. Here in Peru we can get italian tomatoes. Instead basil we use bay leaves :) But I tried with basil too. Soooo delicious!! Thank you for this video! It remember us we are italian people!
Well Vincenzo, I made this sauce tonight. I didn't blend the onion, carrot and celery, but I did chop them finely by hand. I kind of like chunky. This sauce was superb! It tastes very sunny. The only thing wrong with it is you failed to warn that the tomatoes EXPLODE when crushing them by hand!😁 I had tomato guts all over my counter!! THANK YOU VINCENZO!!!
I must admit Vincenzo, I had my doubts about your passata recipe. I thought, "surely it can't be this easy. Surely thev fresh basil can't add such good flavor that fast. " I was so surprised at how simple and delicious it was. I used that recipe to add to this one. It makes me wonder what I've been doing with my life. I made this last night for today, for my girlfriend and me. Best pasta I ever had, also used the tips from the 10 mistakes when cooking pasta, different world. I want to thank you Vincenzo, I learned spices just accompliment the sauce, the taste should come from the ingredients itself Usually put garlic salt, celery salt and chilli, stuff like that... horrible abominations I created there haha Not anymore! ♥

@@vincenzosplate I must admit it is pretty hard to get my hands on san Marzano tomatoes where i live, i have found slightly different breed Piennolo tomato from location of Vesuvio, and i wanted to try one before i start cooking the sauce and i ended up eating it all so none left for the sauce it was that much delicious, i will have to try again next week :D

It’s all about surface area. The blending for the soffiritto is perfect. My blender doesn’t get it as fine, so I just cook it for longer before adding the tomatoes. Personally, I find 10-15, sometimes even 17 minutes to work very well. I have a Christmas batch going right now and my family isn’t even Italian, but they asked for it! 😂

Our parent’s and grandparent’s generation in the New York area called it gravy because they were poor and we would all eat together on Sundays; cousins, aunts, uncles, grandparents etc. and there would be meatballs and/or braciole and sausage inside. Our moms and grandmas would cook it for hours all morning on Sunday. So it was not a sugo or (sauce) for us. It was much more substantial than a basic sugo or salsa, considering all of the meat inside. Then we would eat it with spaghetti or macaroni and top it with fresh ricotta. Of course who can forget my pop’s bottle of red wine under the dinner table. So proud and blessed for the history of our culture and family.

I have made my own sauce for over 50 years because moving to the south, what they consider pasta sauce tastes like it comes out of a franco american spaghetti can. Although I love my sauce recipe, even my son in law loves it and he's a great cook, this knocks it out of the park. Delicious!! Thanks so much for sharing. I really love your videos.

I love the idea of the Sofrito. I always use fresh sweet cherry tomatoes 🍅 I blend them and strain the skins and the seeds, so so delicious 😋 thank you for the tip.

I've been blending the soffritto for years and it really does make a huge difference. With enough olive oil it acts as an emulsifier and it also acts somewhat like a blond to light brown roux where the flavors develop and then helps thicken the sauce. It's a no brainer also from a production standpoint. It's much easier to blend than to do a small dice by hand.
Made this sauce 3 times already without changing a thing. Loved it.

Hi! We call it TUCO! I learned from my Nonna Pepina (who was from Capo D'Orlando) . My father continued the tradition to cook Tuco with many tomatoes. Here in Peru we can get italian tomatoes. Instead basil we use bay leaves :) But I tried with basil too. Soooo delicious!! Thank you for this video! It remember us we are italian people!

Well Vincenzo, I made this sauce tonight. I didn't blend the onion, carrot and celery, but I did chop them finely by hand. I kind of like chunky. This sauce was superb! It tastes very sunny. The only thing wrong with it is you failed to warn that the tomatoes EXPLODE when crushing them by hand!😁 I had tomato guts all over my counter!! THANK YOU VINCENZO!!!

I must admit Vincenzo, I had my doubts about your passata recipe. I thought, "surely it can't be this easy. Surely thev fresh basil can't add such good flavor that fast. " I was so surprised at how simple and delicious it was. I used that recipe to add to this one. It makes me wonder what I've been doing with my life. My kids loved making it all day because we made a much bigger batch and we didn't have a vegetable mill, unfortunately. Best homemade pizza and spaghetti sauce I've ever tasted.

@@vincenzosplate I must admit it is pretty hard to get my hands on san Marzano tomatoes where i live, i have found slightly different breed Piennolo tomato from location of Vesuvio, and i wanted to try one before i start cooking the sauce and i ended up eating it all so none left for the sauce it was that much delicious, i will have to try again next week :D

It’s all about surface area. The blending for the soffiritto is perfect. My blender doesn’t get it as fine, so I just cook it for longer before adding the tomatoes. Personally, I find 10-15, sometimes even 17 minutes to work very well. I have a Christmas batch going right now and my family isn’t even Italian, but they asked for it! 😂

I found that it's best to let the sauce cool before eating it, as that gives it time for the flavors to really come out. Delicious! All three of my children are learning to make this sauce.

Our parent’s and grandparent’s generation in the New York area called it gravy because they were poor and we would all eat together on Sundays; cousins, aunts, uncles, grandparents etc. and there would be meatballs and/or braciole and sausage inside. Our moms and grandmas would cook it for hours all morning on Sunday. So it was not a sugo or (sauce) for us. It was much more substantial than a basic sugo or salsa, considering all of the meat inside. Then we would eat it with spaghetti or macaroni and top it with fresh ricotta. Of course who can forget my pop’s bottle of red wine under the dinner table. So proud and blessed for the history of our culture and family.
