I love Lidia’s recipes because they’re affordable, simple, easy to find ingredients, and taste great! Honestly nothing fancy here but it’s amazing and consistently tasty.
Been making this for my family for 5 years now. They still love it. And I love how people think I spent a few hours in the kitchen when it's not even close to that. Thank you so much Lidia ❤
Marinate the sliced cherry tomatoes: 1. Add some salt. 2. Breadcrumbs. 3. Olive oil. 4. Toss till the tomatoes are well coated. 5. Lay the coated tomatoes onto a tray and put them into the slow oven at 300 degrees for 30 to 45 mins till they are roasted dry. Pasta con Pomodoro Al Forno: 1. Heat olive oil in pan. 2. Fry in the garlic. 3. Sprinkle in a little Peperoncino. 4. Turn off stove first and ladle in some pasta water into pan (adding water into oil will cause splatter). 5. Turn on pan again and shred in some basil. 6. Toss in the cooked pasta and mix well so that it will absorb the favour. 7. Garnish with some compound cheese (dry and salted ricotta) for final finishing.
Seiko Spore Thank you for posting. I was never taught how to cook. My husband (God Rest His Soul) never complained having “Hamburger Helper” many nights for over a YR. Actually became a good cook by following a recipe EXACTLY. What do you marinate the tomatoes in? Exactly how much garlic? I will admit, if all the ingredients aren’t listed, I’ll just pass. As a Nurse, when I’ve told some of my patients I get slightly anxious when in the past I’ve attempted to try the recipe, I do hear “Oh! Join the club”.
You can tell this woman is a pro because she mixes the tomatoes with bare hands. For those who don’t know, mixing things with bare hands is an old traditions here in Italy. You can still find some grandma mixing salad with bare hands, and believe it or not, it gives food a unique taste because 1) preserves the original taste of the ingredients and 2) it’s actually the best way to distribute flavour among different ingredients. Try it with the salad, you’re in for a surprise. So once again, hats off to this lady.
None can match Lidia for her true love of food. I learn lots from watching her cook and her tips. But the love that comes forth cannot be taught. That's what makes her a star.
As half Sicilian who grew up with her grandmother's wonderful cooking, I'm so happy to see that you use more than 2 tablespoons of olive oil in the pan. What can be better than good olive oil in a pasta dish lol. ? Thank you for this lovely recipe.
I heard Sicily is actually part of Africa, because you guys are on the “dark side”, if you know what I mean…wink wink nudge nudge. Do you have Sicilian recipe for fried chicken an watermelon? TRUMP 2024!
I halved the ingredients and served 3 adults, generously. This is a wonderfully uncomplicated recipe with no need for obscure ingredients or special skills. Heck, the most time-consuming step was slicing the cherry tomatoes. I can easily see this as a side to a lemony chicken, shrimp, veal, etc. dish, too. All things considered I rate it A+. Happy New Year, everyone!
I’m reminded of my Italian great grandma’s house with the wonderful smells of spaghetti and meatballs, lasagna, ziti, and everything else she cooked. Her food was so good. No one, not even her daughters, could make dishes like her. Always something missing though their food was good too, it just wasn’t the same. She came from the old country, could not speak English but the woman could cook. Rest In Peace grandma. I wish I knew you better.
It's 7a.m. & I just finished making an early coronavirus run to the grocery store for milk. Should've gotten some pasta because this makes me really hungry now. Can't wait to try this recipe. Looks so simple & sooooo mouth watering good. mmmm

What if she touched her hooter before all that tossing?
Her restaurant here in Kansas City, MO is very popular. lidias-kc.com/
My Anglo-Saxon mother mixed and cooked with her bare hands. Not uniquely Italian.
Javier Gomez does that happen a lot?
Then obviously you haven't been in India
Every Saturday and Sunday on PBS I watch Lidia she is a treasure.

So comforting to watch Lidia cook. It’s like visiting a friend, I love watching and learning from her.
I made this tonight and thought I died and went to heaven.
Fresh basil from my garden and good quality oil. I added some cut up olives too.

Indeed madam. 👍❤
It sure did me....so simply, inexpensively delicious!
What was the 2nd ingredient she added to the tomatoes? First salt....then ???....and breadcrumbs.
This is my fav pasta dish. I toss the tomatoes with some grated cheese too before popping in the oven. Sooooo good
