I halved the ingredients and served 3 adults, generously. This is a wonderfully uncomplicated recipe with no need for obscure ingredients or special skills. Heck, the most time-consuming step was slicing the cherry tomatoes. I can easily see this as a side to a lemony chicken, shrimp, veal, etc. dish, too. All things considered I rate it A+. Happy New Year, everyone!

Lay the coated tomatoes onto a tray and put them into the slow oven at 300 degrees for 30 to 45 mins till they are roasted dry. Pasta con Pomodoro Al Forno: 1. Heat olive oil in pan. 2. Fry in the garlic. 3. Sprinkle in a little Peperoncino. 4. Turn off stove first and ladle in some pasta water into pan (adding water into oil will cause splatter). 5. Turn on pan again and shred in some basil. 6. Toss in the cooked pasta and mix well so that it will absorb the favour. 7. Garnish with some compound cheese (dry and salted ricotta) for final finishing.

Actually became a good cook by following a recipe EXACTLY. What do you marinate the tomatoes in? Exactly how much garlic? I will admit, if all the ingredients aren’t listed, I’ll just pass. As a Nurse, when I’ve told some of my patients I get slightly anxious when in the past I’ve attempted to try the recipe, I do hear “Oh! Join the club”.

I’m reminded of my Italian great grandma’s house with the wonderful smells of spaghetti and meatballs, lasagna, ziti, and everything else she cooked. Her food was so good. No one, not even her daughters, could make dishes like her. Always something missing though their food was good too, it just wasn’t the same. She came from the old country, could not speak English but the woman could cook. Rest In Peace grandma. I wish I knew you better.
You can tell this woman is a pro because she mixes the tomatoes with bare hands. For those who don’t know, mixing things with bare hands is an old traditions here in Italy. You can still find some grandma mixing salad with bare hands, and believe it or not, it gives food a unique taste because 1) preserves the original taste of the ingredients and 2) it’s actually the best way to distribute flavour among different ingredients. Try it with the salad, you’re in for a surprise. So once again, hats off to this lady.

Just made this for my boyfriend and he loves it! Was skeptical about the whole roasting tomato and bread crumb... turned out great! Him being Korean makes it almost impossible to impress with pasta but this ones definitely a winner

I was just reminded of it because some friends just dropped off some FRESH cherry tomatoes picked from their garden ... so I KNOW what I am having for dinner tonight! 😉 My vegan friends adapt this recipe with “cheeze” of their choice (a salty vegan feta maybe?), or frankly you can even skip it (the tomatoes are the REAL STAR of the show!). Lidia’s videos are an absolute JOY to watch!
And PS I have a teeny tiny kitchen: A small toaster oven & 1 plate induction (make pasta, undercook a little, leave in hot water while you make the sauce). Always comes out good - tomatoes take a while (45 min-1 hour) so be patient. It’s worth it!
