- This is a very flavorful and a bit more complex rendition of the traditional pasta and clam sauce. The artichokes add extra flavor and texture to the pasta.
Recipe on my website: lidiasitaly.com...
I love when your Mom comes on the show Lidia :")
The grandmother is awesome, really hopes she makes it up to centenarian age.
"You're making me hungry" "That's what you're here for" 😂😂
This is probably my favorite pasta dish, and this looks magnificent! I’ve never had it with artichoke hearts, but it sounds delicious. Love seeing grandma ❤️
When ever I miss my mom, all I have to do is watch Lydia’s videos and my heart becomes content.
My grandma and I would watch her together and I miss her too.
now i miss my mom...
Linguine with clam sauce is my favorite and the only way I eat clams.
I like when grandma tastes something she likes and when she does she tips her head side to side... so funny !!
Could watch Lydia for hours.
Coolstonerchick I can and do👍👍
Same here I love her.
Me, too!
Lidia, I love your videos. I will make all your recipes at some point. Your grandmother is adorable, blessings to both!
That's a good way to get the sand out, I must try this your way!
It is.
I just love watching Lidia. Everything looks wonderful. I’m not Italian but Pasta is my all time favorite. She is an inspiration to me.
Tried many of lidia's dishes and she gets a thumbs up. My mom was off the boat from Naples & when I sample lidia's dishes it brings me back to my childhood memories of delicious Italian food. Try any of her recipes and you wont be disapointed.. Thank you lidia
... i carciofini sott'olio nella pasta alle vongole... 😂😂😂 mallanimadeliimortaccivostra!!!
What a fantastic version of clam sauce; I love the addition of artichoke hearts (though I'd probably add a little lemon juice instead of orange juice)
Orange juice sounds disgusting.
I was a chef in a Italian Restaurant,& made my Clam Sauce almost the same way.Great reciepe.
"Inside, i'm always 25." Youre grandma is adorable.
Nhia Pheng Thao 5
I hope the grandmother will be one of those seniors who'll make it to centenarian age cause that would awesome.
She is actually Lidia's mother.
I'll always be 25 inside too! She's great!
Always beautiful
The mom from Golden Girls
Lidia is the best Italian chef on television too bad she doesn't have a chain of restaurants throughout the United States.
Been doing the Alfredo with artichoke hearts for 20 years now. Love 'em.
Why not sauté the claims in the frying pan instead of boiling the clams?
7:38 "whose the boss?" That is great!!!
Artichokes?! Wine?! Orange juice?! ...ok. I'd try it cause you made it
White wine is very common. Orange juice not so much. Where I come from we add clam juice.
I've heard of adding lemon juice. I guess this would be another way of adding acidity but with some sweetness.
The sand filter trick is great. You both are vibrant lovely women. Thank you
Artemisia Gentileschi Been doing that trick for years. Twenty years plus on Cape Cod you learn some tricks👍👍
I live directly on the coast of Maine and our clams are so sweet and lovely that I would make buckets of clam sauce if I had a very easy recipe! :-)
Oh my Lidia, when you separated the clams from the shell, my mouth was watering, I loved your guest, take care Ladies, and be safe!!
Awsm recipe... I love.. Italian food...
Thou I'm an Indian... N Grandma you are very beautiful.. 💖💕Love you.. 💕
I love the way Lidia works.Earnest,honest,practical.
Awowwww for sure gonna try cook this style but I'm gonna put some twist on it👍🏻👍🏻👍🏻👍🏻😋😋😋😋😋
Lydia makes it look so easy. And delicious. Never tried a white clam sauce with orange juice and marinated artichokes. Can't wait to try it tomorrow. Shucking the clams will not be easy, though.
I’m a NEW fan!! Great recipes!! Super simple, super delicious! 😋👍🏾🤗 You and your mother are ADORABLE! 🥰☺️😉
Rest In Peace, Grandma ❤️
Lidia love your show, I'm hungry
Grandma is the best!
As far as my unsophistocated taste bugs are concerned, oregano detracts from the
taste of beautifully sweet clams like littlenecks ! By the way, I believe the best littlenecks
come from Cape Cod (Brewster, Orleans, Eastham, Wellfleet).
I could die face down in a bowl of that.
lol
"inside I'm always 25" I will print the T shirt.
Now I'm hungry. I make a quick clam sauce using Cento brand canned chopped clams. I get this brand at a speciality food shop and far better (and of course more expensive) than the canned clams from chain groceries. Living inland, I tend to be a bit leery of fresh seafood, as I'm never sure how fresh it maybe. I will try the addition of the artichoke hearts and dried oregano. I was just using garlic and minced fresh parsley. I'm sure mine doesn't compare, but it is tasty and takes almost no time.
Thank you madam. First time your vids popped up on my list. Informative and entertaining.
if lidia is 70 how old would grandma be
Que rico, sé antoja!😋👋💗
My goodness! I just came across your channel and this is just the 2nd video so far I’ve watched today (now I’m a subscriber too). I want to try that pasta with clam juice. But I must tell you, the beat part I enjoyed was the ending with your grandma… she’s beautiful still in her late 80s’. Made me missed my mother that passed on in 2018 @ 92 because of C. You are so much to fun…
God bless grandma. Great food keeps you living.
Yum. And another hint: take all those clam shells (or mussel shells), soak them in a little soapy water for a day, rinse them clean of soap, dry them, crush them, and into the garden they go. Back to the earth and you'll get incredible vegetables and flowers. You wash them first so that you don't attract animals to the garden.
That's another way of cleaning clams.
Where I grew up lots of people do this.
How do you crush them, ted1091@gmail.com?
ted1091@gmail.com the roses must love them too! 🌹
Ken Costlow I've never done it before but I'm sure if you place them in a cloth bag and pound them with a hammer or something they will crush up.
sometimes, it's not so much the demonstration and instruction which lidia excells at: she seems to be able to calm my soul. especially when how works with her on projects on lidia's kitchen, that REALLY cools my jets. shea stadium style. mom makes mr. wine specialist modify his awesomeness for a moment.
I love your cooking but I see where you got your great cooking from - your Mom and wonderful ... Just like all the typical Italian Grandmother (just like mine.)
I'm not putting Lidia down but I don't understand why she calls her own mother "grandma". If Lidia was with her grandchildren I'd understand but not when she's with her by herself.
Nobody has a problem with Lydia and what she calls her mum, so why should you? Mind your own business!
I’m coming to YOUR house @ cook up a storm! Glad to find you again Lidia!! Your Mama is strong & confident. ❤️🌹❤️🌹 oh & BTW..... my favorite dish is Spagetti alla Vongole! I like the tiny ones served with shells on. The addition of the artichoke hearts 💕 thank Q
I hope someone can answer this question about the "spices" you use Lidia. I have noticed that in some of your videos you sprinkle spices on your dish and you call it "petichino". I only call it that because I am hard of hearing at 64 and I can not quite make out what you call the spices that you are sprinkling on the sauce. What is "petichino"? I have done Google searches and I can't find what it is.
If someone else knows what it is please tell me!
Thanks
Mark
Mark- Pretty sure it's Red Pepper 🌶 dried and crushed into little flakes.
@@stevecarr1992 Thank you Steve. I guess it is more of a mixture of spices that you like rather than a Brand Name spice mixture.
I have been to a lot of Italian restaurants in Florida and still can't find a restaurant that makes linguine with clam sauce like they do in New York city's Little Italy.
Your not wrong. The best clam sauce I've ever had,in FL,was what I made myself. Many of these "cooks" they have in Florida shovel the food out of the kitchen and on to the tables,of the tourists, and give a half care wether it's good or not.
@@generalzod8589 You got that right. They don't care how they prepare it.
Another thing I'll never understand about Florida is the low quality citrus available in the grocery stores.
Last time I made this I mixed the clams with shells and everything in with the pasta and I reinforced it with store bought clam meat. I like the artichoke addition and found it very interesting to add a splash of orange juice.
I'm a clam lover and this recipe is easy I'll make very soon Thank you Lidia 💞💞
recipes are for housewifes
(The dish is not the way Italians would cook it)
For those who expect cheese with fish...it is blasphemous in Italy.
But the explanation of the clams is great
Thanks
Spot on with the different types of clams If you can find mahogany from Main try them not many stores in NY have them they are very perishable
chef4oh1 Mahogany clams are always for sale in our stores in Upstate NY. Cheap and delicious! I don’t know why nobody makes videos using those with linguine?
You are such a wonderful teacher and person. Tanto Amore
very very good❤️👍😋
Yum, looks goods!! Just a little tip, my mom used to soak clams in tap water for at least 2 hours, change water 2-3x before cooking.
I tried this last night and it came out deliciously! I’ll probably put a bit more orange, artichokes and maybe less clam juice
Good morning beautiful ladies Lidia thanks for this recipe God's Willing I will try this thanks
Hello, Lidia! Since some time I descovered your recipes which ich find very good. May be you are Italian and are married with an American? I Like very much, how you spell the names of the italian recipes. I am Italian, but since 53 years I live in Germany because I am married with a German. I have forgetten the most of my english words because I must speak, think, understand and write only german. Excuse me, if I do not write good english, that because I do not have any dictionary " German-English " by me. I like very much how you spoke about mussels. You shall be really a very good cook! I wish to you the best for your future. Many greetings from Noth Germany.
Oh mamma...love you and your mamma...just like my sweet nonna. Can’t wait to try this. Thanks for your tip to remove the grit, Grazie
Beautiful! Loved the whole thing! The cooking and the instructions! And the granny is adorable!
Great video. But when you include "cool grandma" it becomes absolute best!
We Italians would call her Nona, grandfather would be Nono!
Beautiful ladies! I will definitely make this pasta! Thank you for sharing wonderful Lidia! 😀💕❤️👌🏼💐
Top Neck is after little necks.. then Cherrystones.. she got them backwards
Wait, she seriously added orange juice? Or did I hear that wrong? No one I've seen adds oregano, bit I'm not trying to criticize her recipe.
I like to add butter unsalted, and red or purple onions. Also lemon squeeezed after at the very end.
I also add a seasoning and red pepper powder instead of flakes.
I've only used canned clams so far. Parsley, olive oil. Garlic.
no cheese. Salt and pepper. White wine.
I've seen people add cheese.
I fucking love old people who say their younger than they feel, I tell people my age to still stay young!!! To many complain about being "old". I'm 24 but I feel 15
This is my favorite dish since I was a little girl ❤️❤️
Which marinated artichoke hearts do you buy? Some of the brands have tough old artichoke hearts. Bottoms are actually the most delicious, but harder to find. The marinade is just oil and vinegar and oregano with pepperoncini. Easy to make.
I enjoy her and her mom more than any other cooking shows.
this looks delicious, Ive been having seafood cravings since I was in my first trimester. XD
I've never seen someone cook clams to remove grit. We've always let them circulate in water to clean themselves. I'm suspicious of how well this cooking method actually works.
A clam that is heavy for its size is usually a mud puppy. No clam and filled with dirt.
I love Lydia's mom! I love Lydia also! And I love them both even more together!
wow 🤩 thanks for sharing with us spaghetti 🍝🙏🏼😋
I bet in a pinch you could use a coffee filter instead of cheesecloth and she sure does look young here must be using all of Olay
I have paid a lot of money at times for linguine with clam sauce and there were never enough clams.
Can you show us pesto? My grandmother was from Sicily but my grandfather was from Parma so when my great grandparents came to live with them well the cooking meshed together, so growing up our pesto was creamy were as in restaurants its this paste. i have always wanted to know where the creamy part came from.. Love you food and grandma is so cute she reminds me of my gg.
I have a quick question, I am having trouble trying to find pasta that is so manageable, what brand do you use?
I love your dishes
Hi I'm Ashley I will be your server tonight can I get you guys something to drink i will have a glass of the red house wine and you sir can I get a glass of pasta water do I get free refills with that? Let me check be right with your drinks
Just discovered your channel ant I'll definitely be subscribing.
Who's the boss?? What a Question.... it is Granma!!!!!!
Thank you for sharing what is the best clam and how to clean them. I’m leery of eating clams in any dish because of the sand but I now learned how to avoid that.
There's a little simple trick that makes it taste twice as good instantly. You just grip the pasta in your hands like you're gripping a stave, and then break the bundle cleanly in half before throwing it in the boiling water.
Qué delicias me encanta mucho gracias😋😋🙏😋
Don't forget the crusty Italian bread to soak up the juices...
clams are best left on the beach with the sand
julius ceasar Er...why?
For Asians, stirred rice is a No, No, alwell. Leave it alone until done. I love your cooking, Ms. Lidia
You are very good thank you so very much it's a it's a real pleasure watching you cook
Looks divine, hope to find good clams like yours at the supermarket in Florida.
Love Lidias cooking done lots of her recipies my family enjoy them delicious bless u🙏😍😘😚😙😗🥂🤩🤗
Spaghetti and clam sauce , Yum Yum
I just thought about this dish, i think i will buy the clams and make it
Its 12.30 am where i am, n this talented lady is making hungry with her delicious clam pasta..mama mia
Cherry Stone is larger then the top neck. Cherry Stone then Chowder or Surf Clams
Which clams can i use because clams are hard to find in australia
I use a Melitta funnel and coffee filter, size L, for removing the grit from clam nectar.
What kind of wine is that? Best with seafood wine..
I recommend cooking with a good white wine, one that you would drink.
Yall ever just regret watching these cause you get insanely hungry??
What a cute grand ma, Lidia u are always the best.
Is most of your recipes follow the northern or southern style of Italian food?
Wow, that dish looks so delicious.
Excellent video. Your mom is a beautiful treasure!
