  • This is a very flavorful and a bit more complex rendition of the traditional pasta and clam sauce. The artichokes add extra flavor and texture to the pasta.

    This is probably my favorite pasta dish, and this looks magnificent! I’ve never had it with artichoke hearts, but it sounds delicious. Love seeing grandma ❤️

    Tried many of lidia's dishes and she gets a thumbs up. My mom was off the boat from Naples & when I sample lidia's dishes it brings me back to my childhood memories of delicious Italian food. Try any of her recipes and you wont be disapointed.. Thank you lidia

    What a fantastic version of clam sauce; I love the addition of artichoke hearts (though I'd probably add a little lemon juice instead of orange juice)

      White wine is very common. Orange juice not so much. Where I come from we add clam juice.

      I've heard of adding lemon juice. I guess this would be another way of adding acidity but with some sweetness.

    I live directly on the coast of Maine and our clams are so sweet and lovely that I would make buckets of clam sauce if I had a very easy recipe! :-)

    Lydia makes it look so easy. And delicious. Never tried a white clam sauce with orange juice and marinated artichokes. Can't wait to try it tomorrow. Shucking the clams will not be easy, though.

    As far as my unsophistocated taste bugs are concerned, oregano detracts from the
    taste of beautifully sweet clams like littlenecks ! By the way, I believe the best littlenecks
    come from Cape Cod (Brewster, Orleans, Eastham, Wellfleet).

    Now I'm hungry. I make a quick clam sauce using Cento brand canned chopped clams. I get this brand at a speciality food shop and far better (and of course more expensive) than the canned clams from chain groceries. Living inland, I tend to be a bit leery of fresh seafood, as I'm never sure how fresh it maybe. I will try the addition of the artichoke hearts and dried oregano. I was just using garlic and minced fresh parsley. I'm sure mine doesn't compare, but it is tasty and takes almost no time.

    My goodness! I just came across your channel and this is just the 2nd video so far I’ve watched today (now I’m a subscriber too). I want to try that pasta with clam juice. But I must tell you, the beat part I enjoyed was the ending with your grandma… she’s beautiful still in her late 80s’. Made me missed my mother that passed on in 2018 @ 92 because of C. You are so much to fun…

    Yum. And another hint: take all those clam shells (or mussel shells), soak them in a little soapy water for a day, rinse them clean of soap, dry them, crush them, and into the garden they go. Back to the earth and you'll get incredible vegetables and flowers. You wash them first so that you don't attract animals to the garden.

      Ken Costlow I've never done it before but I'm sure if you place them in a cloth bag and pound them with a hammer or something they will crush up.

    sometimes, it's not so much the demonstration and instruction which lidia excells at: she seems to be able to calm my soul. especially when how works with her on projects on lidia's kitchen, that REALLY cools my jets. shea stadium style. mom makes mr. wine specialist modify his awesomeness for a moment.

    I'm not putting Lidia down but I don't understand why she calls her own mother "grandma". If Lidia was with her grandchildren I'd understand but not when she's with her by herself.

    I hope someone can answer this question about the "spices" you use Lidia. I have noticed that in some of your videos you sprinkle spices on your dish and you call it "petichino". I only call it that because I am hard of hearing at 64 and I can not quite make out what you call the spices that you are sprinkling on the sauce. What is "petichino"? I have done Google searches and I can't find what it is.
    If someone else knows what it is please tell me!

    I have been to a lot of Italian restaurants in Florida and still can't find a restaurant that makes linguine with clam sauce like they do in New York city's Little Italy.

      Your not wrong. The best clam sauce I've ever had,in FL,was what I made myself. Many of these "cooks" they have in Florida shovel the food out of the kitchen and on to the tables,of the tourists,and give a half care wether it's good or not.

    Last time I made this I mixed the clams with shells and everything in with the pasta and I reinforced it with store bought clam meat. I like the artichoke addition and found it very interesting to add a splash of orange juice.

    Spot on with the different types of clams If you can find mahogany from Main try them not many stores in NY have them they are very perishable

      chef4oh1 Mahogany clams are always for sale in our stores in Upstate NY. Cheap and delicious! I don’t know why nobody makes videos using those with linguine?

    Yum, looks goods!! Just a little tip, my mom used to soak clams in tap water for at least 2 hours, change water 2-3x before cooking.

    Hello, Lidia! Since some time I descovered your recipes which ich find very good. May be you are Italian and are married with an American? I Like very much, how you spell the names of the italian recipes. I am Italian, but since 53 years I live in Germany because I am married with a German. I have forgetten the most of my english words because I must speak, think, understand and write only german. Excuse me, if I do not write good english, that because I do not have any dictionary " German-English " by me. I like very much how you spoke about mussels. You shall be really a very good cook!     Wait, she seriously added orange juice? Or did I hear that wrong? No one I've seen adds oregano, bit I'm not trying to criticize her recipe.
    I like to add butter unsalted, and red or purple onions. Also lemon squeeezed after at the very end.
    I also add a seasoning and red pepper powder instead of flakes.
    I've only used canned clams so far. Parsley, olive oil. Garlic.
    no cheese. Salt and pepper. White wine.
    I've seen people add cheese.

    Which marinated artichoke hearts do you buy? Some of the brands have tough old artichoke hearts. Bottoms are actually the most delicious, but harder to find. The marinade is just oil and vinegar and oregano with pepperoncini. Easy to make.

    I've never seen someone cook clams to remove grit. We've always let them circulate in water to clean themselves. I'm suspicious of how well this cooking method actually works.

    A clam that is heavy for its size is usually a mud puppy. No clam and filled with dirt.

    Can you show us pesto? My grandmother was from Sicily but my grandfather was from Parma so when my great grandparents came to live with them well the cooking meshed together, so growing up our pesto was creamy were as in restaurants its this paste. i have always wanted to know where the creamy part came from.. Love you food and grandma is so cute she reminds me of my gg.

    There's a little simple trick that makes it taste twice as good instantly. You just grip the pasta in your hands like you're gripping a stave, and then break the bundle cleanly in half before throwing it in the boiling water.

    I use a Melitta funnel and coffee filter, size L, for removing the grit from clam nectar.
