You’ll love this lentil curry because of its rich, velvety texture and bold, fragrant flavors. Also, you can make it with minimal effort for a wholesome, warm, and delicious weeknight dinner.
⭐️ INGREDIENTS
1½ tablespoon (15 grams) olive oil
1 medium (70 grams) onion chopped
2 cloves garlic grated
1 inch (2½ cm) ginger grated
2 teaspoons curry powder
1 teaspoon cumin
⅓ teaspoon red pepper flakes
1 teaspoon turmeric powder, optional
1 teaspoon coriander, optional
2 cups (500 grams) vegetable stock or more if you prefer a more soupy curry
1 small can (15-ounce) (400 grams) crushed tomatoes
1 small can (14-ounce) (400 grams) coconut milk
1 cup (220 grams) of red lentils,best if split red lentils
1 teaspoon salt
⅛ teaspoon black pepper
1 teaspoon garam masala optional
SERVING SUGGESTIONS
4 wedges lemon
1 handful cilantro or flat-leaf parsley
4 tablespoons Greek-style yogurt or unsweetened non-dairy yogurt
2 cups (400 grams) basmati rice

I just have to say i just roughly followed this recipe and it was absolutely delicious. Probably the best curry I have ever made!
When cooking any pulses, I always add the salt at the end of cooking as it tends to make the lentils hard. Same with dried bean, add the salt at the end of cooking. I am a chef and other chefs cook pulses this way. This is a very easy way to make lentil curry. You can use the whole green or brown lentils too
I do the opposite. I soak dried beans in salted water, then drain and cook in water that I've seasoned (including salt). I read about the method and tried it because I was frustrated at winding up with lots of blown beans. It worked like a charm, and the flavor was vastly improved, much like cooking pasta in salted water - I'll never go back! 😊

I know that's right about the salt added later on.
Especially chickpeas don't get soft if you add salt in the beggining.
@@resa.walters Actually salt makes them softer. It's the acid that makes legumes hard.

I finally made this today and it was delicious! My picky husband had 3 bowls of it. I added fresh tomatoes and cucumber and I spiced up my Greek yogurt by adding a little pickled jalapeño juice, white vinegar, lemon juice, garlic salt, salt, and Sriracha and mixed well. Yum!

Always soak lentils atleast for 30 minutes and throw the water to remove lectins. It also cooks better. Best way is to pressure cook or instant pot. Nothing wrong in open pot cooking though. Lastly don’t add salt in beginning, dal will cook better if you add towards the end.

If you cook the lentils in just water and a pinch of salt first, then add the toasted/oil fried spices for the rhe remainder of cooking, you will preserve more of their flavour. The spices will dull in flavour the longer they are cooked.

I once slow cooked a marinara sauce for a couple hours, and it had no flavor, the spices had dissipated completely.
So in the future cook the sauce for awhile (or in this case your lentils) then add your herbs and spices.

Quick version
Heat
- 1 can cooked lentils (drain off water) Add a little filtered water
- 1 teaspoon or tablespoon red curry paste to your taste
Serve with tinned tomatoes around edge of rice with curried lentil mix in centre. Natural yogurt plopped in centre with a shake of paprika or chilli. Other sambal dishes can accompany with chutney, coconut and chopped fresh tomato & cucumber Add a heated naan bread pancake. Buy frozen uncooked from an Indian supermarket & cook in frypan fresh.
