  • Master patissier Eric Lanlard show us how to make the perfect party dish at home with his vol-au-vent recipe. Crispy puff pastry filled with a variety of fillings, so there is something for everyone. Classic chicken and mushroom in a creamy sauce, seafood and saffron and a delicious veggie butternut squash with ras-el-hanout and quinoa. They are ideal as a starter or make them a little smaller for the perfect party canapé.

    You have just given me my 3 new fillings that I have so so needed. Thank you so much. My Mum and I came up with a lovely curried salmon filling as well as a cheese and asparagus + adding anything you like to it - chick, mushrooms - anything. Gosh I am so happy right now. I serve mini vol-au-vants a lot when entertaining, ppl love them.

      +TappX You can't do that with puff pastry actually. It will ruin how well it rises because it relies on the layers of butter and pastry to actually puff.

    For the Mushroom one try, Instead of béchamel sauce, packet mushroom/chicken soup mix with less water then the instructions or replace with milk, yummy !!

    What size cookie cutter is needed to make vol au vents? My large cutter was about 4.5 cm. When the vol au vant was cooked it was tiny. Couldn't fill the vol au vant with the mixture.
