Crispy Fish w/ Thai Green Mango Salad - Yum Pla Duk Foo

    In this video I declared that I can't think of another dish that I prefer to this dish, and after thinking about it some more, I still stand by that. It is one of my, and my brothers', all-time-favourite dishes. The fish is fluffed up and fried until golden and crispy. The savoury crunch is contrasted by the fresh tart green mango salad-it's truly a match made in heaven and there are no other dishes quite like it.
    Traditionally this dish uses Thai charcoal-grilled catfish, which is widely available on the streets of Thailand. But considering what we're doing to it, it really doesn't matter much which kind of fish you use, and indeed Thai people routinely use various other types of fish, and even shrimp, for this dish. In this video I go with tilapia which is a versatile, inexpensive white fish I usually have in my freezer.
    SAFETY NOTE: After watching the frying of the fish, you may feel intimidated to try it, and I felt the same way the first time I made it! Let me assure you though that AS LONG AS you take the precautions I mention, you will be fine. So: LEAVE PLENTY OF ROOM for the oil to bubble up so it won't overflow and catch fire (that would be bad!!). My rule of thumb is: don't fill the oil any more than 1/3 of the depth of the pot/wok, and the oil only needs to be about 1-inch deep so you don't need a lot! For maximum fluffiness, I mentioned that the oil should be about 400F (like my second round of frying in the video) but if you feel a little scared by the aggressive oil bubbling, you can drop the fish at 375F and it won't be as aggressive (like my first round), and either of them will be delicious. While we're on this subject, it's always a good idea to keep a fire extinguisher in the kitchen, so something to think about if you don't already have one!

      I love this dish as well, yummy!!
      Another trick you can use(I use) is once you buy the green mango or green papaya wrap it tightly in those thin plastic produce bags making sure to get all the air out basically giving it another skin and put it in the fridge. I do this with Lemons and Limes as well as it keeps them juicy and good for a long time. I have kept Green Papaya like this for a few weeks until used up and they are just as green and sour as the day I bought it!!

    I cooked this dish today! It was heaven, I nearly drank the tom for the mango salad on its own because it was super yummy😋 . The green mango salad pairs soo well with the fluffed fried fish! If anyone is thinking about preparing this dish but is feeling intimidated, it's actually quite simple and its worth it!!

    Thank you for putting together this dish!! My cousin who was like a big brother to me would order this from his favorite Thai restaurant. He would always order 2 servings of this because everyone in the family loved it. My cousin passed away a few years ago and I never knew the name of this dish so when I watched that video of you and Mark it reminded me of one of our favorite dishes.     This is my favourite Thai dish. My aunt lives in BKK, and we visit her often. Every time we visit her, I always order this in any restaurant we go. However, all Thai restaurant here in UK won't offer this even when you order in Thai (when I ask them in Thai). Apparently they don't stock green mango as many people don't order it and Thai mango costs £3.50 each! Thanks for the recipe.

    This is one reason I love Asian food. The variation in flavor sand cooking styles is wonderful. I will be giving this a try very soon. This would be fun to cook for company since it's something most people haven't tried before. Yum!

      sorry, but i actually lose my appetite as soon as Mark starts eating - and he always way over exaggerates the the tasting experience - I seen others comment the same. But he does do some nice commentary and takes some great video leading up to the tasting :) This channel always looks so delicious, and I really like Pailin's more nature reaction toward the food she tastes.

    Okay, I tried this last night. I have to work on frying the fish. It was fluffy, but did not stick together as good as yours. The mango salad was so good and perfect with the fish.

    I love that dish, i use to live in Thailand, and this was ( is ) one of my favorite dishes, But i never learn how to make it, so today i was out with my boat and got some fish, tomorow i will make this dish, we have a thai shop just up the road, and they have sour mango. i look forward to enjoy this again.     I love this dish sooooo much! I found the catfish here in the UK at the Asian supermarket years ago, and was using sour cooking apple instead of unavailable green mango, which worked ok (especially after not having the real deal in Thailand for over 10 years). Seeing your recipe made me look again for green mango online, and I found some in the uk for the first time 😁. Can’t wait to cook this with the green mango, even if it will be the most expensive (yet authentic) version I have ever made 😂. You are an inspiration, I love all of your recipes soooo much. Thank you ❤️

    Swai is also really good and cheap white fish that works well for recipes like this. Luckily we get tons of mangos this time of year here in Florida. I love the green Papaya recipe and really want to try making this one too. It looks amazing. Thumbs up.

    omg this is such a wonderful alternative to using up fish! In our household we make something called fish floss. We fluff up the fish the same way by steaming but instead of squeezing all the liquid out we break up the pieces in the pan and keep on tossing it over low-med heat until it becomes really dry. Then we add soy sauce, sugar and a little bit of oil until it becomes super salty/sweet! It's delicious over rice or porridge or even in sandwiches :D

    This menu I used to use Can Tuna in Oil and green apple replace grill catfish and green mango.The taste is good too.

      I was wondering if green apple would work. My friend from Trinidad makes green mango curry with green apple (Granny Smith) instead, because you really cannot find a green mango where we are at all. It is so good, but it is cooked, so I didn't know if it might also work here. Thanks!

    The crispy fish fry looks so good. I’m going to try that. For the sour mango, I would probably use cucumber instead for replacement because mango looks sour to me. I love spicy cucumber salad.

      For make less sour mango ,you can soak the slice green mango in the water and squeeze for a bit to make it less sour.

    In San Francisco green mangoes cost US $4 /lb, and are hard to find at most Asian grocery stores, which is probably 3x what you would expect to pay for more ripe mangoes. They are truly sour and green. I think that they must expedite how they get to the US, and that is why they are so expensive. In regular shipping I believe they start ripening by the time they get to the US. The green mango som tam I am familiar with uses toasted coconut, and is a different recipe from green papaya som tam. Even the most authentic Thai restaurants can't make green mango som tam, because green mangoes are too expensive to let sit around and ripen. So they have to be purpose bought. My first taste of green mango was on a rock in a rushing river near Chiang Mai, where Thais were picnicking during Songkran. They offered me a shot of Mehkong whisky chased by a bite into a green mango, skin and all. They said the super tart mango keeps away the hangover.

    You can use canned tuna and it will work just fine. Some restaurants in Thailand use canned tuna instead of catfish😋

    Deep frying is sooo delicious, but can be soooo messy. I rarely deep fry at home but this recipe does look really good. I live in southern Louisiana where everything, and I mean everything, is deep fried. Not sure if the Thai restaurants in my area offer this dish. I just might have to give it a shot.

    OMG, this is one of my favorite Thai dishes. I've never seen it on a menu in the US. I miss Thailand. :(

    I will try this recipe very soon. Frying procedure is similar to Indian sweet dish Ghevar.
