  • Commonly done with Pla Duk (catfish) you will see this salad 99% labeled Yam Pla Duk Fu - but it can be done with any fish; even tuna. So generically it is called pla fu (or crispy fish).

    I have been wanting to make pla fu. Chef, I wonder how you have the palm sugar paste in the container, did you buy a big jar and dump it in the container?

      I did put it into a container. The palm sugar I use is shipped to me from Thailand, or I bring it back when I am there. The only thing that is comparable in quality that is available in the US would be this palm sugar here: redboatfishsauce.com/products/red-boat-palm-sugar?variant=36735847858341
