  • Crunchy, sour, unripe fruits like crab apples and green mango taste amazing with this dipping sauce, Jeow Mak Muang แจ่วมะม่วง. This sauce is spicy, sweet, funky, and umami, all things that balance the intense tartness of unripe fruits. I have fun summertime memories of harvesting sour crab apples with my family. Our mouths would burn and hiss in content from the spiciness of this dip, as we'd reach in for more crab apples to dip. This stuff is addicting!

    Sugar - 2.5 tbsp
    Pla Ra/Padaek - 3 tbsp (how to make, on channel)
    Water - 2 tbsp
    Roasted Chili Flakes - 1 tbsp
    Shallots - 3 small bulbs
    Toasted Rice Powder - 2.5 tbsp

    Unreal. Honestly, this recipe, and the one before, the fermented fish sauce,-- are the most interesting flavours I ever heard of. and I like how u use that word, 'funky' to describe it, : D It s an aquired taste, but wow, it becomes addictive.

      It's definitely an acquired taste on its own but when mixed with other things, it becomes a magical sauce 😁 Pla Ra/ Padaek is used a lot in Northeastern Thai cuisine. Thank you for watching Anna! Have a great weekend 🙏

When U introduced me to shrimp paste and dried tiny shrimps, I thought that was such an exotic flavour. but the fish sauce,.. now I think I know how they achieve that indescribble flavour in the dishes I had at some very authentic Thai restaurants; I m a fan : D

    🤤 น้ำลายสอ ไม่ไหวแล้วค่ะ Sour green mango is one of my favorites and I like to dip with this kind of sauce as well. For me, your dipping sauce looks 10 times better than others!
    ps. do crab apples have a name in Thai?

    Hi I’m sorry I wanted to know is there anything I can substitute for the fish sauce or shrimp paste?! I am highly allergic to any type of seafood but i really would like to try this

      There are no close substitutes unfortunately. These are important flavors for this dip.

    Brings me back to my childhood. My best friends were from Laos. His grandma would make this for us when we brought back apples from the woods.

    I have both those plants. The sumacs and crabapples. I am in the middle of trying to get rid of the sumacs because they are taking over my yard. Never tried my crab apples. I’ll give this recipe a try.

      Wow that's great! There are different varieties of crab apples too. Some are more sour than others. There are many dips that you can make to eat with it. Another one that I make is nam pla waan น้ำปลาหวาน which is also good! Thank you for watching !

      I'm not sure what they're called. I know they turn a bright red color and get a tiny bit bigger in early fall.
