As a Thai,Impressive which the way you infuse shrimp oil first .It exactly not Thai food technic (some thai cook only stir dried shrimp with low temp before you put main protien) but it improve this menu to next level .Good jobs Hope me chane to eat you food if i come to US
@@makebistro For me it depend on you design.But for authentic method when we need aromatic or intense flavor it will go with main protien you use.I think it same how we make 5 mother souce in italian food.
@@makebistro And another trick for Pad Thai .I'm not sure did you soak noodle for a while before .it will make less water when you stir fry and keep all of noodle texure perfect
