I made this today. I added lemongrass power and thymian in the marinade. I used celery instead of lemongrass on the bottom. I didn't cut out the fat on the chicken, so when it's done I have a lot of those lovely oil. I took the oil and celery out and use them to saute some vegetable and potato. At the end I have a amazing roast chicken, wonderful vegetable and the best saute potatoes.
I made this for Thanksgiving today since it would just be my partner and I celebrating Thanksgiving due to the pandemic. BEST ROAST CHICKEN OVER! Pai's instructions were SO CLEAR CUT and the chicken came out fantastic! My chicken was moist and delicious! Super subtle flavor that didn't clash with the garlic mashed potatoes, asparagus and bacon, or Hawaiian bread biscuits. The gravy was spot on. I was super impressed with this recipe and all of Pai's others. Thank you so much!!!!

I enjoyed this. I Spatchcocked my first chicken this past fall and boy was it tender. My wife and I wanted to hurt ourselves it was so good. I have to laugh at her because she was hesitant about the way I cooked it until she started eating it. I also cooked it on a bed of onions, carrots & celery. I mixed the herbs & spices in butter before stuffing them under the skin.

Just made this tonight and the fragrant aroma permeated the house for hours! In fact, I made 2 chickens. I forgot to put kaffir lime and water in the herbs as well as butter the chicken. Half way through I added water plus oil on chicken and tastes and looks fantastic! Definitely can be a Thanksgiving dish. Thanks for the detailed recipe plus the videos to guide us along.
I followed your recipe closely and my chicken turned out so yummy. However, I didn't have enough time to make the gravy this time. One interesting fact is that I could eat the cooked galangal slices which were at the bottom of the tray. They were so tasty. Thank you so much! I have been trying 5 recipes on your channel. Love the way you cook! Cleanliness(not much splashes and cross contamination), using a small space gently(keeping the small space segregated), educated cooking methods (adding liquid on corn starch before adding to broth), and using everything (marinade in gravy). Well done. Kinda the way I cook in my small kitchen. I thought is was just my OCD...

I marinated overnight and baked it at 450F for 28 minutes. It came out superb. It was flavorful, juicy and fragrant. I also made the gravy, but the hen did not need it at all.
When you put the coconut milk in the gravy, you became, officially, my favorite person on earth. This is definitely what we are having for Christmas dinner 2016. Thanks, Pai! xox

Made this today .Only changes were my lemon grass seemed a bit dry so I added a bit of frozen chopped lemongrass to marinade.Also used dried galangal and added some scallions to bed.Sooo good!! looked every bit as good or better than video . Nice Thai flavors without the heat. Definitely a winner!!

As for the Thai twists: not only an interesting variation, but one for me to try on the very next chicken. I buy frozen galangal and Kaffir lime leaves at a local Pacific Rim/Asian market. Oh my god this recipe was so yummy and so easy, I got a little over enthusiastic with the gravy and burned my tongue but that did not deter me from enjoying this oh so tasty dish. Already getting second requests from the family.
Very nice roast. I made the sauce without using coconut milk and it was very good. However I had to cover the chicken with foil half way through because the skin was burning too quickly. I will do it again. Thanks for the video.

I've been around the world a bit and I can say with confidence, Thai kitchen is the best. Just an example: I ate the worst Italian food in Italy and the best Italian food in Thailand. Traditional Thai dishes... yum yum. I only wish all of the chefs would stop using industrial chicken and cook healthy ones.
I have to say that for quite a long time I've been OK with most of the sauce ingredients you use, but I could never acquire a fondness for fish sauce. Since watching your videos and seeing how it's *supposed* to be used, I've grown fond of the subtle background taste it provides. Thanks for all your great videos!

I don't remember eating Thai roast chicken with gravy. Most Thais eat it with a black sweet chilli sauce and sticky rice. I usually just have it without anything else as the sauce is too sweet and spicy. The gravy may be a good alternative. I may try it, but want to say it would be great even without the gravy.

Love your show Pailin, Question: have you any idea what combination of spices are used to marinate chicken, its a brine usually seen in buckets with chickens in it around Bangkok.
