I am so excited that you are going to try this recipe :) You can serve this Roast Chicken with some Sticky Rice or aromatic Jasmine rice or any rice you have in your pantry. The Spicy sauce that I prepared as a side with the roast chicken pairs really well with rice. If you want to keep it carb-free then you may serve the roast chicken with some salad. Almost zero Thai people have an oven, it should barbequed over charcoal with all the fat for flavour and texture.
Respectfully, this is not authentic Thai.
