Congrats on your catch nice buffalo! I love to eat them so good especially the ribbs ! I cut the whole section off with bone and cut them so you have a couple ribbs per part role them in corn meal and flour deep fry and the bones are easy to remove when done delicious !!! I love them better than any catfish !!!

I’ve deep fried buffalo before and it rivals some of the best fish you’ve ever had. Seriously, it’s juicy, flavorful, and, when I made it, it tasted like chicken(with a hint of fish flavor to it). I love to eat carp but buffalo is better, in my opinion. All fish are delicious in my book if treated right, but at the same time every fish can taste foul, but you my friend, and everyone else I’m sure you’ll have trying this fish, will have full and happy bellies. I think if you scale him leave the skin on him and cook him like you would you did that rainbow trout or that sea trout I think that would be the way to cook it

I worked with a guy, that had a commercial fishing license, he told me that high fin buffalo, was his favorite fish to eat, hands down !
