So enjoyable to watch your videos, you taught me a lot! I saw a knife sharpener on your table, is that what you use for all your knives?

Fillet it! we used skin them in the old days but we got over it, all country people used to do it that way cause they were afraid of wasting cause they grew up in the depression and it just got passed on. The thinner you make the fillets the crispier they are and better

The oldtimers would’ve kept that backbone

Yep. My grandparents ate the meat off big catfish heads too. The reason that generation did all that was the depression era mentality. They wasted nothing.

@@double5bbq❤ That’s how I was raised I didn’t know not everyone did it until I was almost 20. But I was raised by my grandparents who adopted me and had that mentality, I still do eat the meat from the backbone and probably never will stop.

New way for me, the old timers around here would cook them whole also with the bone in. It gives them a different flavor.❤ 👍

I'm 60 an I've seen old guys grab the top lip pull back skin head and all. The eat the cheek meat an all. Good luck on your next trip. I filet the same way you do. Been doing it 50 years that way.

Would like to see a video on catch and clean turtles. And is there any truth to soaking catfish fillets in milk or buttermilk a couple hrs to take the gamey taste out? Haha nvm you just answered my question with removing fish fat.

DO NOT THROW AWAY THE CENTER BONE OF MEAT. ITS EASY TO EAT IT OFF THE BONE > The center bone of meat is MY FLAVOR OVER ALL Those big rib bones make for GREAT TOOTH PICKS

That's exactly the way I have done it for years.. My dad hated fillets. We 100% steaked out catfish. Dad always felt like if you through away the bone, you through away the flavor.
