    Thanks for sharing, when my Calamansi is matured, I will pickle them like you did. The Cantonese keep a bottle of Salty Calamansi Limes for 20 ++ years for her son or daughter when they get married. I made a big bottle, too bad that my Filipino helper threw it away. Same to my 6 bottles of 陈皮, I made 1 bottle each year. They said better throw them away otherwise boss would give us to eat the rotten mandarin skin soup. Now I have 2 bottles, new one, only 3-4 years old . The longer we keep, the aroma is much better. To them anything that changed it's colour is rot.

    这桔子酸梅水真好 。
    每天傍晚我都去慢跑八九公里 , 几年来只会用柠檬水止渴 ,
    这下可好 , 这桔子水冷热两相宜 , 即可止渴 ,又可補充一些盐份 , 真棒 .
    明天 , 去菜市场買两三公斤的酸梅 , 这可能会吓坏買菜的大嫂 ; 哈哈 。

      @@mrpetercookingshow7690 这桔子水长年累月都会用到 ,先做三公斤应急 ,然后找几个腌泡菜的大瓷瓶 ,腌个夠 ,
      確保一年到头都不缺貨 。。。。哈哈😀😀😀😀

    Chef Peter , l love this video “How to preserved the lime?” I,m searched the lime for couple day, there’s nothing like that. May l use kumquat to replaced of little lime. Kumquat itself don’t have a lot of juice. May be I will coated a lot of sugar & salt then air dry. Please offer me a better recipe thank you 🙏 😂 sweetheart.
