Thanks for the birthday present cowboy Kent! Have smoked many a yardbird but have always used my own home made BBQ sauce. Have never tried a rub but will do this rub as it sounds very tasty. I make my own charcoal, mostly oak and hickory but some maple as well. Turned sixty four today so though I have a neighbor with chickens where I buy my eggs I could in theory steal one but have gotten a bit slower at running and would likely get caught! Will have to wait until I go to town and buy one I guess. Any day you put up a new video is a wonderful day! My hat is off to you and the lady. You are both a National Treasure. I've been a cook for 20 years. 16 of those years to present day, have been spent on offshore oil rigs as a Campboss in charge of the catering crews. Feeding 200+ men 4x a day. 480lbs of ribeyes a week. 4,000 eggs per week, 180 lb bacon per week. 230lbs chicken per week 160lbs coffee per week. 250lbs of pork per week. Extra supplies for hurricane season. and ..well...countless rolls of toilet paper. And countless meals & memories. I've never tackled cast iron cooking in full force. I've made roux & cornbread in cast iron skillets, grilled & smoked plenty of meats over charcoal and wood, but never dutch oven cooking. Watching you and Shannon these past few months has really inspired me to up my game and take more interest in cast iron cooking. It's fun, and taste better! I'm sure you've probably forgotten more about dutch oven cooking than I'll ever live to know or remember, but the skills, techniques, & experience you folks have, has taught me a lot about what I didn't know or know how to do with cast iron. Ya'll are humble, smart, and ya'll definitely love what you do. Sometimes starvation makes good food good. lol. But the best ingredient to make it better than good, is love. My grandpa didn't have a tooth in his head. I don't ever recall seeing him eat BBQ. Every type of meat I ever saw him eat was fried, and he lived to be 90. One of my favorite parts of a real Mexican family restaurant, the mariachi band, and the repeated chorus of la cuharacha and the chicken dance... when they were little my kids loved it, we would go every couple of weeks. Kent, love your show. I have a recipe for you that is primarily from the ILL / IND area. Pork tenderloin sandwich. You can find a few examples on YT, but it's basic. Take a pork tenderloin, cut a 3/4" slice and pound it out to twice the size of a hamburger bun. Salt / pepper, dredge in egg / flour and fry. Serve with onion, mustard, lettuce etc. on a bun. Pork in ILL is almost as good as the beef. I think you're viewers might like it. Good luck.

I would've tried it this weekend for Labor Day, but I've had a request from my wife and family for my Hickory Smoked Beer-Butt Chicken over lump coals. My family and I live in Roanoke, VA and I have people asking me "Where did you learn how to cook like that?", and "Can you teach me how to cook like that?" Mr. Rollins, I have begun telling the Chefs I encounter during the day to check you out. One guy today was baking sweet potato corn bread. The boys in Cleveland have been shifting toward southern style cooking. I know one good ol boy who loves to hunt and cook rabbit. He has traveled the world and competes in chef competitions. He serves the wealthy elite, but he is down to earth.

Great recipe Kent, glad to see you use hickory, that is the most plentiful wood here in kentucky, also my fave. I usually go 80% hickory & 20 % applewood or oak. I wish i could say i have, or could buy a metal barrel smoker, but we had one. Holes drilled , but just metal rods, no rebar. Use meat hooks from the smokehouse that are used to hang hog hams, shoulders,etc...., to hang over smoker rods. I like all kinds of smoked meats, works just like yours on smoked chix, hams, briskets, etc..., and once a laying hen has given her all , she is headed for the smoke barrel. A little tip for viewers, buy farm fresh eggs, there are no bleached white farm fresh eggs. The shell colors like brown, tan, cream , light blue, speckled, etc..., are all determined by the color of the laying hens ear lobes, farm fact, lotta folks don't know that. I loved my Pit Barrel Cooker so much I had to get me a second one it’s even better than the first one I got much more improved and they actually have a chicken and turkey hanger out now which is much better than the hooks. You’ll never go wrong when you use the Pit Barrel Cooker, ribs are the best I’ve ever eaten! A lot of competition Smokers an BBQ’ers are using it on the circuit and winning with the PBC. Glad you found it!!

smoked chicken is quite possible one of my favorite things to eat. I have a Bradley smoker that i do up some chicken several times a year with. Haven't decided what my favorite wood is yet. Every time i make it, i say "That was the best wood!" Alder is amazing on chicken. Apple is nice if going light on the smoke, as is mesquite. Cherry's good too.

Looks delish and I LOVE chicken..actually used to raise some with my mom and grandpa back in the day..never for food but for the eggs..I've been looking into getting a hobby and the thought of raising chickens again has crossed my mind..little nervous about doing it though..lots of coyotes and wild dogs around where I live so..yeah..can't exactly do the ground coop I'd like to, have to do like my grandpa and do a raised off the ground coop.

I mixed up a rub similar to this for smoking beef and pork, and it was delish... I'll be adding cumun to it for chicken now. Is never used smoked paprika or ancho chilies till I tried something you made and now I'm hooked.

When I smoked my first chicken 35 years ago it came out with skin so brown from the smoke that it looked like brown shoe leather. It was so crispy though! But that was my first attempt and all of the rest were so much better. Peace, Love and Happiness to the Rollins clan!
Kent, I used to put my wet wood chips into an old pillowcase and spin the excess water off. It worked well but the pillowcase eventually gave up the ghost and I haven't done it since. I do like to use very hot water to soak my wood chunks in as I do believe that it causes the wood to swell which would cause the wood fibers to suck in more water to help it smoke longer. I don't know if it works any better but it was an idea.

Great recipe Kent, glad to see you use hickory, that is the most plentiful wood here in kentucky, also my fave. I usually go 80% hickory & 20 % applewood or oak. I wish i could say i have, or could buy a metal barrel smoker, but we had one. Holes drilled , but just metal rods, no rebar. Use meat hooks from the smokehouse that are used to hang hog hams, shoulders,etc...., to hang over smoker rods. I like all kinds of smoked meats, works just like yours on smoked chix, hams, briskets, etc..., and once a laying hen has given her all , she is headed for the smoke barrel. A little tip for viewers, buy farm fresh eggs, there are no bleached white farm fresh eggs. The shell colors like brown, tan, cream , light blue, speckled, etc..., are all determined by the color of the laying hens ear lobes, farm fact, lotta folks don't know that. I loved my Pit Barrel Cooker so much I had to get me a second one it’s even better than the first one I got much more improved and they actually have a chicken and turkey hanger out now which is much better than the hooks. You’ll never go wrong when you use the Pit Barrel Cooker, ribs are the best I’ve ever eaten! A lot of competition Smokers an BBQ’ers are using it on the circuit and winning with the PBC. Glad you found it!!

smoked chicken is quite possible one of my favorite things to eat. I have a Bradley smoker that i do up some chicken several times a year with. Haven't decided what my favorite wood is yet. Every time i make it, i say "That was the best wood!" Alder is amazing on chicken. Apple is nice if going light on the smoke, as is mesquite. Cherry's good too.

Looks delish and I LOVE chicken..actually used to raise some with my mom and grandpa back in the day..never for food but for the eggs..I've been looking into getting a hobby and the thought of raising chickens again has crossed my mind..little nervous about doing it though..lots of coyotes and wild dogs around where I live so..yeah..can't exactly do the ground coop I'd like to, have to do like my grandpa and do a raised off the ground coop.

I mixed up a rub similar to this for smoking beef and pork, and it was delish... I'll be adding cumun to it for chicken now. Is never used smoked paprika or ancho chilies till I tried something you made and now I'm hooked.

When I smoked my first chicken 35 years ago it came out with skin so brown from the smoke that it looked like brown shoe leather. It was so crispy though! But that was my first attempt and all of the rest were so much better. Peace, Love and Happiness to the Rollins clan!

Kent, I used to put my wet wood chips into an old pillowcase and spin the excess water off. It worked well but the pillowcase eventually gave up the ghost and I haven't done it since. I do like to use very hot water to soak my wood chunks in as I do believe that it causes the wood to swell which would cause the wood fibers to suck in more water to help it smoke longer. I don't know if it works any better but it was an idea.
