    I've been watching your videos for probably 2 years. It's always great to see one I haven't watched before.
    So sorry about the fire and your dog.
    The buildings can be replaced but you can't replace the dog.

    Hey, Kent I just wanted to leave a comment saying how much you've helped me throughout the last 2 years. I have been going through a very difficult time studying for my career. You've always been a positive light that I turned to when it became difficult to find the will to keep pushing. I am pleased to say I now have passed my board exams and I would like to thank you for being you and sharing that with me and everyone else.       You can find a good used one on sale, or use the indirect portion of a large charcoal grill. Fancy smokers may be better and easier, but honestly the best smoked chicken I’ve had has been out of a regular Weber charcoal grill.
      Check garage sales or Craigslist, fb marketplace. As long as it doesn’t have a whole lot of rust in it, it should be good. Locally I see some for 20-50$

    Happy Thanksgiving all - Wonderful recipe. For smoking a turkey you can also try, coating the entire bird with mayonnaise before your applying your favorite rub. My son, kitchen manager, for a BBQ restaurant, taught me this technic for a juicy bird, and it works. Been doing this 3 years running now with the Pit Barrel smoker and it is awesome.     The Pit Barrel Cooker is great if you love to BBQ (get it). Especially during Holidays. Frees up the oven for other things. Got mine about five years ago, and absolutely no regrets.

    I've been brining turkeys for nearing 10 years now. I used 1 lb kosher salt aloing with some local honey, molasses, pepper, sage, thyme, rosemary and garlic. I brine my turkey for 9 hours on either side, total 18 hours. I smoke it and like Ken says, it is the best turkey ever. Grandma could never make one as good as one being brined! Happy Thanksgiving

    Sir, I know this video is four years old, but we found our Thanksgiving travel and dinner plans changed due to illness. Doing some last minute shopping to gather groceries and a turkey, I found this video to figure out what to do with the turkey and our PBC. Thank you for this great video and instructions.     I grew up in NC where a lot of folks don't venture far from home. NAVY cured me of that. If you haven't experienced this part of the country and their wonderful food, this is one of the best place to start. You two are are a joy to watch, and, did I say your techniques, recipes, cast iron guidance, and general outlook on life is an inspiration? Keep it up. BTW, who is the new (Lab dog?)

    I'm thankful for Kent and I'm thankful for turkey. I'm also thankful for this recipe. I'd also like to echo Kent's thanks for servicemen and women of every country where they serve. We would not be where we are without their efforts and hard work. I'd also add an especially heartfelt respect to the soldiers of the world who fell in battle defending an ideal they held dear.

    Thank you Cowboy Kent Rollins for the Smoked Turkey Recipe, brine recipe and rub. I cooked a turkey this way yesterday for an early "Thanksgiving" with my visiting family. I didn't have a barrel prepared so I used by Weber.....and all cooking is ONLY done over oak wood.....everything was a struggle as my brining pot too big for the refrigerator.....and I didn't have enough ice to put it in the ice chest. So, while it only brined for maybe 5 hours, the remainder of the time was spent sitting in a pot in the refrigerator. I started my BBQ early and placed it on the rotisserie at about 9:30 am. It was a cold and windy day so I was I constantly had to check my fire. Pulling it off at 1:00 pm and letting it rest, we finally ate dinner around 2:00 p,m. My family has not stopped talking about how delicious the turkey was. IT IS A WINNING RECIPE AND METHOD. THANK YOU VERY MUCH!!!! I found your site and subscribed a while back after killing our 14th rattlesnake and looking for a way to cook it!

    Kent my good friend & Christian brother, very nice recipe, & i only eat mine that i hunt for here in rural Kentucky 1 of 3 ways. #1 deep fried in my huge deep fryer with 50/50 peanut oil/vegetable oil, #2 on the rotiseree studded with garlic cloves & poultry rub, # 3 in the smoker studded with garlic cloves & poultry seasoning. I won't eat one roasted in the oven again after eating these. My fave is the smoked, i use about 75% hickory & 25% applewood, & the wood is free here as it grows on the property. God bless you, Shannon, & yours, our vets( do not forget today is veterans day folks) , subs & viewers, & the pups, Amen.

    To Kent and Shannon Rollins, my mom is the very good cooking until she died in the heart attack back in 2011 when I was a teenager. Follow my mother's footsteps, I'll do my best for cooking and my family.

    I smoke my turkey every year. The thing is, I don't like turkey, but my family does. I am going to try brining it this year as see if it improves the flavor.

    Imma do this because Cowboy Kent has taught me some valuable lessons. I used to always buy packaged stew meat thinking it was "the same thing," but my stews and beef and noodles always came out tough. A few days ago shopping, I remembered cowboy kent said "don't buy that there stew meat because it's just all the left over bits." So I bought a chuck roast and had one of the men cut it up. And it was an absolute hit. So much better than it's ever been. So because of that, I'm gonna brine and work out my turkey. Can't smoke it but it should be fine in the oven.

    I've been following a very similar procedure for 10 years and I can't imagine Thanksgiving without a smoked turkey. There ain't nothing better.
    I usually have family piled up around the kitchen waiting for it.

    I have to say that I ordered your seasoning and today I used the mesquite one on tuna and it was delish !!! Food network / Netflix’s should give your own channel ! The voice , the dancing 🕺 and the cooking skills ... with a touch of gentleness of Mr . Rogers if he was a cowboy 🤠.. this is what missing from our world today .

    i don't have the same gear as you do to cook cowboy style but i come as close as i can to your great recipes. i enjoy the delivery and the easy to follow directions like "a pinch of this & about this much" of that.     I smoked a turkey last year in a homemade offset barrel smoker. The problem was the guy who built it didn't put any holes for airflow. I had to keep the lid open with a rock and fan the coals. I got smart and put a little clip on fan on it to keep it going. So the turkey didn't get up to temperature but it was Definitely smoked! I finished it off in the oven. The whole house smelled like smoke for a week. It was beautiful.

    I have the same cooker and had the same problem I see here when hanging the meat. The skin on the bottom looks burned. It’s much closer to the heat. To remedy, I no longer hang the meat. I put it on the grill plate. To solve to problem of too much heat on the underside burning the skin, I installed another grill plate 6” below the original and put an 8” pizza stone on it. This diverts the heat and keeps the side nearest the heat from burning. Solved the problem and works for any meat I use the Pit Barrel Cooker for.

    Been smoking turkey's for 30+ years now. Nothing like sitting down to Thanksgiving with a smoked turkey, so juicy and flavorful. You know it's good when there's nothing left of a 17lb bird on Thanksgiving. These aren't your grandma's oven over roasted dry turkeys. I can smell Kent's turkey from here and I live in Northern California.

    I have to say .... I wrap the bird with aluminum foil for the 1st half of the cook which helps from over smoking it & also helps it from drying out.... Good eating !!!

    I am thankful to have been fortunate enough to have been born and lived in these United States of America. My home sweet home. That turkey looks awesome. I would like to know what breed of dog is Duke. Thank you for all that you do to help us feed our families such delicious food.

    I've smoked Thanksgiving turkey for about the last 15 years. It's better than frying to me. I've never brined one. I just inject if. & it's tender & juicy.
